BEER-BASTED CHICKEN WITHCANADIAN AGED CHEDDAR CHEESE

Preparation:

Cut the chicken breasts in half to make them less thick.

Place chicken in a bowl and add beer, apple juice, garlic, rosemary, salt and pepper to taste. Marinate at least 30 minutes or several hours if time allows.

Preheat grill to medium.

Remove chicken from marinade and drain, then cook on grill with lid closed 5-7 minutes each side, depending on thickness of chicken.

Re-form chicken breasts by pairing up both halves after placing a quarter of the cheese between the halves. Close grill lid and allow cheese to melt for 2-3 minutes before removing from grill.

Serve with vegetables cooked en papillote or with a salad.

Simple Pairings: Delicate Beers® young, fresh cheese: Delicate beers provide a great match for fresh cheeses, like Mozzarella and Ricotta. The understated, fresh flavours of these beers will help highlight subtle aromas and flavours in the cheese, while carbonation provides a lovely contrast in texture.

Malty Beers® nutty/aged cheese: Malty beers fare well with younger semi-firm cheeses, like Swiss and young Gouda. The earthy toasted notes in these beers will tie in nicely with the nutty aromas and flavours of the cheese, resulting in a seamless mellow flavour combination.

Highly Hopped/Bitter beer® tart/sharp cheese: Hoppy beers are a classic pairing for sharper, tart cheeses like medium Cheddars. Another fun pairing for Hoppy beers is herbed cheese. Because hops too are herbs, the herbal notes in these cheeses will parallel the hop aroma and flavour in the beer.

BEER-BASTED CHICKEN WITHCANADIAN AGED CHEDDAR CHEESE

Preparation:

Cut the chicken breasts in half to make them less thick.

Place chicken in a bowl and add beer, apple juice, garlic, rosemary, salt and pepper to taste. Marinate at least 30 minutes or several hours if time allows.

Preheat grill to medium.

Remove chicken from marinade and drain, then cook on grill with lid closed 5-7 minutes each side, depending on thickness of chicken.

Re-form chicken breasts by pairing up both halves after placing a quarter of the cheese between the halves. Close grill lid and allow cheese to melt for 2-3 minutes before removing from grill.

Serve with vegetables cooked en papillote or with a salad.

Here are some tips on how to enjoy them together:

Simple Pairings: Delicate Beers® young, fresh cheese: Delicate beers provide a great match for fresh cheeses, like Mozzarella and Ricotta. The understated, fresh flavours of these beers will help highlight subtle aromas and flavours in the cheese, while carbonation provides a lovely contrast in texture.

Malty Beers® nutty/aged cheese: Malty beers fare well with younger semi-firm cheeses, like Swiss and young Gouda. The earthy toasted notes in these beers will tie in nicely with the nutty aromas and flavours of the cheese, resulting in a seamless mellow flavour combination.

BEER-BASTED CHICKEN WITHCANADIAN AGED CHEDDAR CHEESE

Preparation:

Cut the chicken breasts in half to make them less thick.

Place chicken in a bowl and add beer, apple juice, garlic, rosemary, salt and pepper to taste. Marinate at least 30 minutes or several hours if time allows.

Preheat grill to medium.

Remove chicken from marinade and drain, then cook on grill with lid closed 5-7 minutes each side, depending on thickness of chicken.

Re-form chicken breasts by pairing up both halves after placing a quarter of the cheese between the halves. Close grill lid and allow cheese to melt for 2-3 minutes before removing from grill.

Serve with vegetables cooked en papillote or with a salad.
