Cook 400g cauliflower and broccoli florets in a saucepan of lightly salted boiling water over a high heat for 4-5 minutes. Drain and tip into a bowl.

Mix the juice of 2 lemons, 2 crushed garlic cloves and 1 tbsp dried mixed herbs and pour over the cauliflower and broccoli. Season and mix well.

Place a large griddle pan over a high heat. When it’s smoking hot, char-grill the cauliflower and broccoli for 1 minute on each side or until lightly charred at the edges. Sprinkle over 2 tbsp finely chopped fresh parsley and a little lemon zest to serve.

Great with our Chicken Pizzaiola!

Put 600ml of vegetable stock in a large saucepan and bring to the boil over a high heat. Add 800g peeled and thinly sliced potatoes and 650g leeks, trimmed and thinly sliced, return to the boil and cook for 5 minutes. Drain, reserving 200ml stock.

Layer up the potatoes, leeks and 2 thinly sliced garlic cloves higgledy-piggledy in an ovenproof dish, seasoning as you go. Pour over the reserved stock and cover with foil.

Bake in an oven preheated to 200°C/Fan 180°C/Gas 6 for 40 minutes or until tender, uncovering for the last 20 minutes to brown the top. Scatter over 1 tbsp finely chopped fresh parsley to serve.

Peel and deseed 1 butternut squash, cut into chunks, and put them on a non-stick roasting tray. Spray lightly with low calorie cooking spray and roast in an oven preheated to 220°C/Fan 200°C/Gas 7 for 25 minutes or until very tender.

Mash the squash with 3 tbsp stock and add a pinch of ground ginger, 4 finely sliced spring onions and 4 tbsp finely chopped fresh parsley.

Season and stir well to serve.

Mix 2 tsp cumin seeds, 2 crushed garlic cloves, 2 tsp mild or medium curry powder and 250ml of vegetable stock in a large bowl. Add 400g cauliflower and broccoli florets and toss to coat well.

Tip the cauliflower and broccoli on to a non-stick roasting tray, season and spray lightly with low calorie cooking spray. Roast in an oven preheated to 200°C/Fan 180°C/Gas 6 for 30 minutes or until browned and tender, tossing halfway.

Scatter over 1 deseeded and finely chopped red chilli and serve hot.

Spray a non-stick saucepan with low calorie cooking spray and place over a high heat. Add 2 chopped garlic cloves and 2 thinly sliced large leeks and stir-fry for 4 minutes or until soft.

Add 250ml of vegetable stock and bring to the boil. Reduce the heat to low and simmer for 1-2 minutes.

Add 400g frozen peas and 2 baby cos lettuces with the outer leaves removed, each cut into 8 wedges. Cover and cook for 2-3 minutes or until tender. Season, sprinkle over 2 tbsp finely chopped fresh mint and serve hot.

A beautiful accompaniment to our Bolognese Ragu

Put 220g green beans in a saucepan of lightly salted boiling water and bring to the boil over a high heat. Reduce the heat to medium-low and simmer for 5 minutes. Drain and set aside.

Meanwhile, spray a large non-stick frying pan with low calorie cooking spray and place over a medium-low heat. Add 2 finely chopped shallots, 150g halved cherry tomatoes and 2 finely chopped garlic cloves and stir-fry for 3-4 minutes.

Add the green beans, turn the heat to high and sauté for 3-4 minutes. Season, drizzle over 2 tsp balsamic vinegar and toss well to serve.

Peel and deseed 1 butternut squash, cut into chunks, and put them on a non-stick roasting tray with 2 red peppers, deseeded and cut into chunks. Scatter over 1 finely chopped garlic clove and 4 thyme sprigs.

Season, spray with low calorie cooking spray and roast in an oven preheated to 200°C/Fan 180°C/Gas 6 for 15-20 minutes or until the veg are just tender.

Scatter over a few fresh thyme sprigs to serve.
