I've been in charge of doing a lot of documentation, mock up UI designs and tests. We use a modified version of SCRUM for our project planning, and usually have meetings every other morning to assess progress. It’s pretty much exactly how you said it would be. All that said, I would like to offer back some help to some of your students if they need it.
