Public transportation include S-train, Metro, and busses, and the city has a joint ticket system: The same ticket is valid in busses, Metro, and S-trains. A 2-zone city ticket costs 24 DKK and is valid for 60 minutes.

WHAT DO THE VIKINGS AND SYDNEY OPERA HOUSE HAVE IN COMMON?The answer is Aalborg! Aalborg was founded by the Vikings more than 1000 years ago and Jørn Utzon, the world-famous architect of the Sydney Opera House, was raised in Aalborg. It did not get its whitewashed gothic styled exterior until 1554. SHORE EXCURSIONSKronborg, Hamlet’s Castle, Elsinore (2 hours) The setting of Shakespeare’s famous “Hamlet”. Renaissance castle Kronborg hosts “Holger Danske” in the underground casemates, a large Viking sculpture, said to come alive whenever Denmark faces danger.

Historic Walking Tour in Elsinore (2 hours) Ancient cobbled streets, beautiful bourgeois houses. The Town Museum, the Saint Olai Cathedral, the Saint Maria Church with the Carmelite Monastery, and the former ”red light district”.

Louisiana: Museum of Modern Art Giacometti, Picasso, Warhol – and much more, in this first class art museum. Stengade Stroll the pedestrian street and the central square Akseltorv, both offer many elegant boutiques, stores, and cosy cafés. Maritime Museum of Denmark (M/S Søfart) The new maritime museum in Elsinore, designed by Denmark’s prize-winning architects BIG, built in a former dry dock. Copenhagen Copenhagen boasts Tivoli, royalty, palaces, and much more. A 50 minutes train ride to Copenhagen.

FAMOUS CASTLES, UNIQUE SCENERY AND WORLD CLASS ART Ships dock right at Elsinore town centre, and close to Kronborg Castle: Home of Shakespeare’s Hamlet, and host of the Shakespeare Festival every summer. Elsinore is a key point to neighbouring attractions: Renaissance castle Frederiksborg, the Baroque Garden, Fredensborg Castle, the summer residence of the Queen of Denmark and the royal family. Kronborg Castle was built in the early 1400’s, to collect dues of ships. The old town centre with ancient cobbled streets and bourgeois houses can be perused on a cosy, guided tour.

At the waterfront you find HAN, a new sculptural tribute to the classic Little Mermaid. Nearby, the new Maritime Museum offers a visionary presentation of Denmark’s maritime heritage. A short train ride (departs every 20 minutes) takes you to the Louisiana Museum of Modern Art (works by Picasso and Warhol) and to Rungstedlund, home of Karen Blixen (a.k.a. Isak Dinesen). Elsinore is just 45 km from Copenhagen.

Kikhavn Kikhavn was the first fishing harbour on the north coast. A huge fire bunt down most of the houses, but there is still a number of well-kept, thatched farm houses to be seen. Dyssekilde Explore the ecological village “Dyssekilde”. The village was the first of its kind in Denmark and many of the houses were built of re-cycled materials. CLAUS MEYER A GASTRONOMIC ENTREPRENEUR

THE WELCOMING EMBRACE OF FRANCEClaus Meyer grew up on the island of Lolland. His childhood was marked by his parents unhappy marriage, a marriage which later ended in a divorce. Throughout his teen years, love and appreciation were not easy to come by at home and the meals were not worth writing about. But as it would turn out food would end up becoming his faithful companion and destiny. At the age of 19 he went to France as an au pair. Here he ended up in the house of a French pastry-couple in Gascony, Guy Sverzut and his wife, who welcomed him with open arms, warm croissants and the love of cooking."The stay at Guy and Elizabeth provided me with the sensation that the food culture of a society is also a reflection of the state of the society in general. It also made me believe that you can utilize food to improve the world”, he says.

BRINGING GOOD TASTE BACK HOME With this in the back of his head, he returns home from France determined to pass on his newfound love and passion for food and flavor to the Danes. Meyer is a person, who likes to do something for the benefit of others, something he has practiced since his return 30 years ago, and almost all Danes know the phenomenon Claus Meyer. He has done everything from television programming, cookbooks, restaurants, projects with inmates and lately a project in Bolivia, including a restaurant, cooking school and a bakery by the name of Gustu in order to breathe new life into Bolivian cuisine, while at the same time educating socially disadvantaged youths, so they could have a possible future working in a kitchen."I've already got far more back in Bolivia, than I have given. I'm really feeling an urge to help a whole lot more", he says.

It is undeniable that Claus Meyer is a hard man to beat, when it comes to the gastronomical wonderland. He is currently working on plans for a new Nordic food court in none other than New York's

Vanderbilt Hall. A 1400 square meter location in none other than The Grand Central Station, which in the future will smell of good taste, quality and proper ingredients."The scents and flavors have to be new to the Americans. The raw materials must come from local North American suppliers, and the whole idea behind the Nordic Cuisine is that it should be able to take root in the land of opportunities", he says.

THE NORDIC MANIFESTOThe Nordic Cuisine Manifesto, which Claus Meyer wrote in collaboration with Jan Kragh Jacobsen, speaks in favor of good taste and health, the act of cooking with raw materials that are fresh and in season, and to promote a sustainable production. Hundreds of restaurants in Denmark alone have adapted the ideology and it is now quite common for young chefs to be socially conscious. Today, there are chefs all over the world, who look up to the adventurous Nordic Cuisine as a source of inspiration."If it can be done in Scandinavia, it is very likely that a similar change can be made in other regions for the benefit and well being of all, so I’m optimistic. I’m convinced that in the coming years, a generation of young people will grow up helping each other with creating a more equal world, a generation to whom it feels natural that good health, sustainability and taste go hand in hand", he says.
