Connect the Automated Draw-Off Valve to the Command Center.

• UnscrewthecapontheroundoutletontheCommandCenter.

• lineupthethreepinsinsidetheplugwiththethreeholesinsidetheoutletandinsertuntilsnug.

• SecuretheplugtotheCommandCenterbypullingupontheplug’soutersheathandscrewingitontotheoutlet.

Plug the Command Center into a power outlet and flip the power switch to the ON position. Thenwait10secondsasitbootsupandrunsthroughitscalibrationscreens.

Flip the valve control switch on the Command Center to AUTO for automatic operation. (Checkyoursystem’stemperaturesettingsbeforerelyingontheAUTOmode.)

Maintenance Tip: betweenboils,cleantheSyrupProbetipandtheAutomatedDraw-OffValvewithacleanragdampenedwithwarmwater.Forstubbornresidueontheprobetip,soakthetipinvinegartoloosen.

Forexample,ifyoudrawsyrupoffat219ºFandthendeterminethatthesyrupismoredensethandesired,customizeyourdraw-offsettingtobelowerthan219ºF.

nOTe:Toreclaimperfectdensityofsyrupthathasbeenboiledalittletoolong,slowlymixsapordistilledwaterintoituntilitsdensitymeetsyoursatisfaction.

First,takenoteofyourdraw-offtemperaturesetting,displayedingreenonthehomescreenoftheCommandCenter(seeillustrationtotheleft).

Then,holdtheSeTbuttonfor4seconds.Thenumberthatwillappearisthedifferentialbetweenyourdraw-offtemperatureandyouralarmtemperature.Forexample,ifyourdraw-offtemperaturesettingis219ºFandyouralarmsettingis3,thatmeansthealarmwillsoundat222ºF(219º+3=222º).

Adjusttheflashingdigitasyoudesireusingtheupanddownarrowbuttons.Movetootherdigitsusingtheleftarrowbutton.nOTe:Settingthedifferentialto0willmakethealarmsoundwheneversyrupisbeingdrawnoff.

HoldtheSeTbuttonfor4secondstoreturntothehomescreenORafter30seconds,thecomputerwillautomaticallyreturntothehomescreenonitsown.

nOTe:YoucannOTgivetheSeTbuttonaquicktaptoreturntothehomescreen.Instead,aquicktapinthismodewouldtakeyoutothelCYdisplayscreen.DonOTmakechangestothelCYvalue.It shouldalways be zero.

Why is my syrup temperature rising during draw off?

Itisverycommonforthetemperaturetoriseabout2ºFabovethesetpointonthefirstdrawoffofthedayduetosomemixingthatmayhaveoccurredsinceyourlastboilingday.Thetemperaturemayriseslightlyduringsubsequentdrawoffstoo,butnotasmuch.Ifthesyruptemperatureconsistentlyrisestoohighforyourpreferences,lowerthesystem’sdraw-offtemperaturesettingsothatitstartsdrawingoffsyrupsooner.

When does the Automated Draw-Off Valve close?

Thevalvewillautomaticallyclosewhenthesyruptemperatureis0.2ºFbelowyourdraw-offsetting.Thisisthefactorypresetandisinplacetopreventshortcycling.

How do I know if the syrup is too hot?

Yoursyrup’scurrenttemperatureisdisplayedinredontheCommandCenter.Theboilingtemperatureofmaplesyrupgetshigherasitbecomesmoredense.Maplesyrupisdoneboilingwhenitreaches7ºFabovetheboilingpointofwater.(notethattheboilingpointofwaterwillfluctuatebasedonenvironmentalfactors.)

Anaudiblealarmwillsoundwhenyoursyruptemperaturereachesorexceedsyoursafetysetting.Thefactorypresetforthissafetysettingis3ºFaboveyourdraw-offtemperature.

How do I turn off the alarm?

YoucansilencethealarmbyflippingtheCommandCenter’salarmswitchtotheOFFposition.Ifyoudonotdothis,thealarmwillturnitselfoffwhenthesyruptemperaturedropsbackbelowyoursafetysetting.

SilencingtheaudiblealarmwillnOTdeactivateyouraccessorydevice.

What should I do when the alarm sounds and/or my auxiliary device activates?

Immediatelydecreasetheheatinthefirebox—turnoffairblowers,reducedraftand/orturnoffthegas/oilburners—andthenanalyzethesituation.

Identify the temperature of the syrup in the finishing compartment of your pan and take a density sample if necessary. (AssumingallofyourCrescendocomponentsareinstalledandrunningproperly,thesyrup’scurrenttemperaturewillbedisplayedinredontheCommandCenter’shomescreen.)

If your syrup IS excessively hot:

• Inspect/openthedraw-offvalve.

• Check/increaseyourfloatbox’ssapdepth.

• Makesureallvalvesconnectingthefrontandbackpanareopenandclear(ifapplicable).

• Makesurethereisstillsapinyourheadtankfeedingthepans.
