Founded by Alexander Matheson, The Dalmore distillery has been operating on the shores of the Cromarty Firth since 1839 and prides itself on an unbroken chain of brilliant, visionary and influential craftsmen.

For over 150 years, The Dalmore has set the standard in multi cask maturation.

Hand selected casks, from the world’s finest bodegas and wineries are expertly curated to create a sumptuous and layered whisky of legendary finesse.

The Dalmore distillery

The Dalmore’s heritage dates back to 1263. It was in this year that Colin of Kintail, Chief of the Clan Mackenzie, saved King Alexander III from the fury of a charging stag. In recognition of this noble act the King granted the Mackenzie Clan the right to use the 12 pointed stag emblem on their coat of arms.

When descendants of the Clan became owners of The Dalmore distillery in 1867, the Royal Stag became the recognisable icon that proudly adorns each bottle of The Dalmore today; an emblem which encapsulates a rich past whilst also embodying a promise that The Dalmore will remain at the pinnacle of single malt.

Exquisite cask curation

The rare 30 year old Matusalem oloroso sherry casks from the renowned bodega are exclusive to The Dalmore and enrich the signature chocolate and marmalade liquid character of The Dalmore with rich and nutty flavours.

To create a more complex character, some of The Dalmore whiskies benefit from an extra flourish in additional casks. Every cask that we source is impeccable, precious and uniquely compatible with the single malt whisky for which we are renowned.

A partnership of tradition & innovation

An exclusive one of a kind bottling and manifestation of each maverick’s unique skill set, The Dalmore L’Anima was inspired by Bottura and Paterson’s conversations and shared creativity.

Paterson selected whiskies embodying the chocolate orange profile which The Dalmore is known for, while layering with flavours reminiscent of Bottura’s kitchen and beloved Italian produce.

The rare and aged bottling will be auctioned at Sotheby’s in an online sale in Spring 2019, running from 25 April to 9 May, with all proceeds benefiting Bottura’s non-profit organization, Food For Soul, which empowers communities to fight food waste through social inclusion.

Created in partnership with The Dalmore’s Master Distiller, Richard Paterson, this expertly crafted single malt whisky is a celebration of the shared respect for tradition and innovation that unites the pair.

The Dalmore L’Anima, Aged 49 Years (‘L’Anima meaning “soul” in Italian), is a unique single malt, created from three unique assemblages which were brought together by Master Distiller, Richard Paterson using some of the distillery’s most exquisite casks.

This one of a kind bottle is a marriage of rare expressions which were initially matured in freshly emptied ex-bourbon barrels, Gonzalez Byass casks which previously held 40 year old ‘Pedro Ximenez’ sherry and Graham’s Vintage Port Pipes.

On the nose, the single malt has exotic aromas of sun-kissed raisins, bitter chocolate and old English marmalade; to taste, hints of freshly brewed Java coffee, Demerara sugar, pecan pie and crème brûlée, while Sanguinello blood oranges linger on the after taste alongside rich treacle and succulent figs.

This natural strength whisky (41.5% ABV) is elegantly held in a crystal decanter featuring a sterling silver collar accompanied by a stopper, a silver stag, and sophisticated engraving. It is presented in a luxurious bespoke, handcrafted cabinet made from Italian Olive Wood, American Black Walnut and solid Ebony by expert Scottish craftsman John Galvin.
