Our dough is made using an ancient Italian recipe, passed down from generation to generation in Southern
Italy. We use Caputo 00 flour for a smooth texture and a lower gluten content making the dough easy to digest.

cross-contamination with our non-gluten-free oven. We are not a gluten-free facility, but we do take pride
in accommodating gluten sensitive diets.
We use Fresh, Local ingredients. This means the preparation time may be a little longer,
