Chocolate Cheesecake Serves 2 Preparation time: 20 minutes Chilling time: 2hrs 30mins. ________________________________________________________________ Ingredients 120g chocolate digestives or Hobnobs 25g butter For the filling: 150ml double cream 1/3 tin of condensed milk (approx. 130ml) 1 heaped tbsp cocoa powder 75g dark chocolate 75g cream cheese Grated chocolate and raspberries for decoration Method 1. Crush the biscuits in a plastic bag and melt the butter in the microwave in a dish covered with cling film. Mix the biscuits and melted butter together. 2. Press the mixture into the base of a loose bottomed flan or cake tin. Cool in the fridge for 30 minutes. 3. Melt the chocolate in a glass bowl set over a pan of simmering water. 4. Whisk the rest of the ingredients together. 5. Pour in the melted chocolate and whisk until thick. Pour over the biscuit base and place in the fridge to set for 2 hours. 6. Turn out of the tin and decorate with grated chocolate and raspberries.
