Winter one day,Summer the next!March can be a bit of a funny time for cooks - it’s too early for a salad but a hearty stew sometimes feels all wrong. Combine that with the ‘hungry gap’ where the winter crops are coming to an end and new spring vegetables yet to arrive, and you’re left with a pretty uninspiring time to be in the kitchen.

As always, spices can come to the rescue! Here are some ingredients that are equally effective in anything rich and warming as they are flavouring something light and summery:

Chipotle chillies - the rich, smoky, almost meaty flavour of chipotle really suits stews and slow-cooked meat dishes (add a whole one to a beef stew or a chilli con carne), or add a pinch of chipotle chilli powder or flakes to a fresh chopped salsa with lots| of fresh coriander leaf and lime juice

Dukkah - an Egyptian blend of roasted spices, sesame seeds and hazlenuts. It’s not hot - more toasty, crunchy and aromatic with lots of cumin and coriander seed. It’s really useful to add texture and a hint of spice to an otherwise plain vegetable soup (just sprinkle on a generous amount at the table), or sprinkle over roasted vegetable salads (particularly good with potatoes!)

Sweet Smoked Paprika - add a generous pinch of smoked paprika to soups and tomato based sauces to give a rich depth of flavour as well as making it taste more hearty and warming. You can also make a simple Salsa Gallega by mixing a squeeze of lemon, chopped garlic and olive oil with 1tbsp smoked paprika to make a thin dressing that’s fantastic with fish or grilled vegetables.

If all else fails at this time of year, some simple comfort food usually hits the spot. As we all know, anything on toast is pretty much the ultimate comfort food and you can use any of the ingredients above to add heat and flavour, or give the enclosed Toast Sensation sample a try! It’s got lots of smoked paprika (sweet and hot), plus mild chilli flakes, nutmeg and thyme so makes a fantastic seasoning for all sorts of food at this time of year!
