Introduction

At Grumpy Mule we’d like to change the way you think about coffee

2

Page 5: Compact Guide to Grumpy Mule

The coffees that we source come fromfarms, estates and cooperatives wherethere is a drive to improve quality, butnever at the expense of the localenvironment or community. To ensureoptimum quality, they are also sourcedin line with the varying harvestingseasons that exist between coffeegrowing origins.

We focus on single origin coffees thattruly reflect the individual regions inwhich the coffee grows, takingadvantage of unique micro-climates,terrains and the skills and knowledge ofthe farmer. Here, the character of thefarm combined with the influence ofmicro-climate, terrain and soil in theregion where the coffee grows, all havean impact on the taste of the coffee.

We pay premium prices for outstandingcoffees, where the farmer or producergroup has succeeded in cultivating andprocessing a harvest that is ofexceptional quality. Quality allows thefarmer to command a sustainable pricefor their crop and to re-invest for thefuture.

By roasting the coffees to suit theirindividual character and ensuring thehighest standard of freshness, we hopethat you can share and enjoy thesecoffees with family and friends!

Our FAIRTRADE & ORGANIC& ORGANIC certified

coffees are the heart and soul of

the farming communities, where

small-holder producers and their local

co-operatives generate income for

coffee families and help to support the

wider community.

Fairtrade provides a better deal for

producers in developing countries,

creating opportunities for farmers and

workers to improve their lives,

their communities, and to protect their

environment (www.info.fairtrade.net).

This partnership helps coffee growing

communities to re-invest for the future,

and by using organic, sustainable farming

methods it ensures that the coffee is

tended with great care and the quality of

each harvest continues to develop.

Swiss Water® Decaffeinated

The decaf version of Grumpy Mule’s best selling coffee; the organically grown Gayo Highlands is cultivated by smallholder producers in the highland districts of Central Aceh and Bener Meriah in northern Sumatra. The Fairtrade-certified KBQB Cooperative (Koperasi Baitul Qiradh Baburrayyan) has been certified since 2007 and now has around 5000 producer members.

The Swiss Water method of decaffeinating coffee is prized for preserving the aroma and flavour of the coffee without the use of chemicals. Roasted a touch darker, there is a rounded, chocolatey flavour to the coffee with good body. Very smooth and satisfying.

An excellent decaf for all-day drinking, suitable for a range of coffee making equipment.

Enjoying the breath-taking backdrop of the Sierra Nevada de Santa Marta mountain range, the shade grown, organic and Fairtrade certified coffee is carefully cultivated on small plots of land using traditional practices. Yirgacheffe

Yirgacheffe is probably the most tea-like of all coffees and is best enjoyed without milk. It has a distinguishing bergamot aroma and provides a delightfully light, zesty cup.

A delicate, refreshing daytime coffee, best suited to cafetières, filters and percolators.

As the birthplace of coffee, Ethiopia is regarded with great affection by enthusiasts and Yirgacheffe is perhaps the most exciting Arabica to be grown and processed here.

The Oromia Coffee Farmers Cooperative Union is a network of primary cooperatives whose small farmer members are indigenous to the Oromia state of South and South-Western Ethiopia. Founded in 1999 by 35 small, organically certified cooperatives it since has expanded to embrace a host of cooperatives with similar goals. Coffee cultivation takes place on smallholder plots in these mountainous, remote highlands where traditional, organic farming is part of the culture.

The Fairtrade-certified Union Pro-Agro co-operative (La Asociación Unión de Productores Agropecuarios) is based in Caranavi in Bolivia’s Yungas region. It has around 250 smallholder producers in total; of which around 20% are women; each with an average of 3 hectares dedicated to organic coffee. The producers, working within their community “colonias” also grow other aromatic, citrus and medicinal plants. The coffees are grown organically at altitudes up to 1750m.

In addition to the Fairtrade and organic premiums, the women producers receive a further premium exclusively for themselves under the Café Femenino Coffee Project (www.cafefemenino.com) and a donation of $0.05 per pound of coffee is also made to a women’s crisis organisation in the UK.

This organic, 100% Café Femenino coffee possesses a delightfully rich body, balanced acidity and with enticing notes of caramel, dark chocolate and a hint of coriander spiciness.

This is a highly distinctive and sweetly aromatic coffee with a very clean, lemony taste. Lighter bodied but wonderfully complex and flavoursome. A Grumpy Mule team favourite.

A vibrant first cup of the day, best suited to cafetières, filters and percolators.

Now with around 2000 members of which around 80% are women, Musasa (or “Dukunde Kawa”) Cooperative is based in the Rushashi district of Kigali Ngali province. The natural advantages of climate, altitude and Red Bourbon coffee trees present a unique opportunity for Musasa and its farmers – to embrace the skills and knowledge that allow them to grow and process high quality lots of coffees.

Each year we buy a unique “E lot” of sun-dried, Bourbon Arabica from the Musasa cooperative. These exceptional lots represent the very finest specialty coffees available from Musasa and the coffee has enjoyed repeated success in the Great Taste Awards.

Intense yet refined in character, this is a real coffee lover’s dream. The fragrance is lively and buttery, with winey blackcurrant flavours leading to an almost liquorice like, lasting finish.Great for breakfast or indeed any time of day. Best suited to cafetières, filters and percolators.

Another of East Africa’s most distinguished coffee plantations, the Blackburn Estate is owned and managed by husband and wife team Michael and Tina Gehrken. It can be found on the western slopes of Mount Oldeani in Northern Tanzania, an idyllic farm gazing down on the wide valley below.

Being located near to the scenic Ngorongoro conservation area, both elephants and water buffalo are frequent “trespassers” on the estate. The huge elephant footprint Ian found one morning during his visit has inspired the name of this exceptional coffee. They’d actually taken an overnight liking to one of the estates underground water pipes and had impressively excavated it to create a spontaneous watering hole!

To this day, Ian still maintains that this is the best coffee farm he’s visited yet.

Diamond Mountain is a slow ripening, shade grown coffee from the higher reaches of the farms’ cultivated areas growing from 1400 to 1700 metres above sea level. With a juicy sweetness, citric brightness and peppery nose this coffee perfectly demonstrates why Boquete has one of the world’s most exciting coffee growing regions.

Very pleasant for all-day drinking. Best suited to cafetières, filters and percolators.

Hacienda La Esmeralda – famous for the rare and celebrated Esmeralda Special “Geisha” Arabica that we occasionally buy, is located in the picturesque highlands surrounding the town of Boquete in Western Panama. It is perhaps one of the most stunning coffee areas we’ve visited.

The Peterson family are passionate about quality coffee and they continue to strive for excellence in coffee. They provide careful stewardship of the land and support for both the 45 permanent and 300 seasonal workers and their respective families.

For every pack sold, Grumpy Mule donates 20p to the Rubel Raxtu School in Pocola, Guatemala to help buy equipment, books and furnishings and to support the education of the pupils in this coffee growing community.

Escuela Rubel Raxtul was named after the farmer who donated the land on which the school stands - the land is within the boundaries of the coffee farm - and was opened in 1966. This school for 4 -12 years olds teaches over 200 boys and girls with lessons given in the local Q’eqchi language and Spanish. There are presently 7 teachers and 1 head teacher.

The micro-climates found in the Cobán region of Guatemala are often misty, wet and humid which influences the characteristics of the coffees produced here. Guatemala Pocola possesses a honeyed aroma, rounded mouth-feel and mild appley acidity finished with a hint of tropical fruits and with a touch of background nuttiness.

Our coffees showcase the very pinnacle of specialty coffee; these are the coffees that highlight the skill of the producer and the uniqueness of the climate and terrain where the coffee grows.

These are coffees of the finest vintages, often grown at dizzying altitudes in mineral rich, volcanic soils. Harvested and processed in small batches, these seasonal, limited edition coffees are tended with the upmost care by skilled farmers.

Look out for our Cup of Excellence® award winning coffees. Judged at origin, these are micro-lots of the highest quality with the producer of each winning coffee presented with the prestigious Cup of Excellence award. This pioneering program has been unearthing coffee gems and rewarding farmers since 1999 and it’s a program we’re proud to support.

All of our Micro-Lot coffees are artisan roasted in tiny batches on our eco-friendly Loring Smart Roaster, from Santa Rosa, California.

A Grumpy Mule world exclusive, this award winning coffee was produced by 400 farmers affiliated to one of Musasa’s key washing stations, near to Gakenke in the Ruli sector of Northern Rwanda in association with RWASHOSCCO and under lead farmer Ladislas Ntagozera.

The ripe bourbon Arabica cherries are hand-picked, fully washed in mountain spring water then sun-dried on raised tables. This lot placed 7th in the prestigious Cup of Excellence awards and we purchased it in its entirety.

We roast this batch a touch darker than our regular Musasa coffee, and this seems to bring out some jammy, berry notes in the coffee. Complex, sweet with a balanced citrus acidity this is great for all methods of brewed coffee.

Señor Melo is married with 11 children, and around a quarter of his 9.6Ha farm is planted with Arabica coffee trees. Coffee and farming are vital to provide means of living for the family. His Las Cochas farm is very traditional, with a small dedicated beneficio (wet mill) for processing the coffee cherries before they are dried in the sun.

Ninety Plus describe Nekisse as a coffee born out of an experiment in post shipment selection and blending from areas of common altitude and variety in the Shakisso and Sidamo regions. They’re increasingly moving towards a single heirloom varietal from the many dozens found in the area, in order to truly focus define the flavour profile of Nekisse.

The first time we tried the coffee – and having cupped it with many friends in the industry since – it became apparent that this was one of the most outstanding coffees around. We hope you enjoy it too.

A Brief Guide

Our freshly roasted, distinctive coffees can be brewed in a wide range of making equipment to get the very best from the inviting aromas and complex flavours, but here are a few tips to help you identify the right coffee grind and brew the perfect cup.

Using fresh coffee beans is a great way to enjoy Grumpy Mule coffees. Grinding your own coffee beans provides the best possible coffee experience with the enticing sounds and aromas of freshly ground coffee. It’s worth investing in a burr grinder, rather than a blade grinder, for the best results.

Also referred to as “omni-grind” coffee, our packs of ground coffee are ground to suit most coffee making equipment, in particular French press (cafetieres), filters and percolators, including Italian mokka pots. If you have an espresso machine, this grind of coffee is a little too coarse for the best results and we’d recommend the “espresso grind” option below.

It’s important to us that our pre-ground coffee arrives to you with the aroma and flavour of freshly roasted coffee. To this end we grind our coffee immediately after roasting and directly into freshness packs, surrounding the coffee with a nitrogen gas atmosphere to protect it.

to Brewing and Freshness

Wholebean Coffee

Ground Coffee

Page 35: Compact Guide to Grumpy Mule

Grumpy Mule Espresso GrindIf you have espresso coffee making equipment but no grinder of your own, then this option (available from the Grumpy Mule online store) may be the best method. This finer grind allows more extraction of the aromas and flavours in the short time that the pressurised water is in contact with the coffee grounds. Our espresso blends are a great choice for grinding in this manner. Please also see the Organic Espresso, Café Mule tin on page 26. Brewing TipsEnsure your coffee making equipment is spotlessly clean before use so as not to taint the delicate flavours of the coffee. Use freshly drawn, filtered water for the cleanest taste (please note that mineral water could distort the flavour) and please consider that the optimum brewing temperature for coffee is around 92°C, so let the heated water come off the boil before using it. If preparing espresso coffee, it’s recommended to finely grind beans just prior to extraction for the very best results as the freshly released gases will help to develop the rich crema of the espresso.

Freshness TipsStore your coffee in cool, dry conditions away from any direct sunlight. Once each pack is opened, store in an airtight container. Try to use the coffee as quickly possible to preserve the magical aromas and flavours. Ideally this should be within 2 weeks.
