HALIBUT PUDDING WITH TOMATOAND LEMON DRESSINGServes four

Ingredients10oz / 285g halibut1 egg1tsp curry powderHalf pt / 285ml double creamA splash of cognacSalt and pepper2tbsp chicken stock2tbsp double cream4 tomatoes concasse1tsp chopped parsley

Juice of 1 lemon8tbsp olive oil2 tomatoes concasse1tbsp chopped parsley

Method1 Chill the skinned, trimmed fish, egg andcream. Then put the fish into a chilledprocessor and blitz finely. Slowly add half thecream, clear down with a spatula, add the eggand the rest of the cream. Blitz to a smooth,dropping consistency, sprinkle with currypowder, and use Cognac to dilute powder andstir in. Then pass the mixture through a finesieve and allow to stand for 30 minutes.

2 Butter four moulds and half fill them with themixture. Create a space in the centre for thefilling. Meanwhile reduce the stock and creamtogether to thicken then cool. Add tomato andparsley to mixture and check seasoning. Putinto centre of mould, cover and fill. Smooth topand cook ‘en bain marie’ at 160ºc forapproximately 12 minutes. Then remove fromthe oven and allow to stand.

3 Meanwhile mix lemon juice and oil, season

and add tomato and parsley. Turn the puddingsout. Then pour the dressing over and serve.

LOIN OF KENTISH LAMB WITHGARLIC AND PARSLEYServes four

Ingredients2 short loins of lamb2 garlic cloves1 tbsp chopped parsley1 tbsp oilSalt and pepper

Method1 Trim the lamb with just enough thin fat tosurround the eye of the meat. Crush the garlic,mix with salt and parsley and spread on theinside of the fat and roll over, trim off excessfat. Tie with string and allow to rest.

2 Roast in oven 210ºc for five minutes and turndown to 190ºc to cook out. Take out and leaveto rest.

3 Make the sauce in a roasting tray and strainfor service.

THYME BRAISED POTATOESServes four

Ingredients4 round or oval shaped potatoes2oz / 60g butter1tbsp oilSprig of thyme1pt / 568ml chicken stockSalt and pepper

Method1 Shape potatoes, equal sized. Melt 1oz / 30gbutter and oil together and colour top side ofthe potatoes golden brown in an oven proof

dish. Turn the potatoes over and put the stockinto a dish, filling to half way up the potatoes.Keep four pieces of thyme for decoration andput the rest into stock.

2 Roast in oven until cooked and all the stockevaporates, add more if necessary. Brush thetops of the potatoes frequently with meltedbutter. When cooked season and serve withpiece of thyme stuck on top.

3 Shred the cabbage finely, blanch, then heatin butter with a few cumin seeds.

YORKSHIRE RHUBARB AND ORANGE FOOLServes six

Ingredients12 sponge cake rings to fit into Martini glasses4oz / 115g marmaladeGrated rind and juice of four oranges and two lemons8oz / 230g cooked rhubarb4oz / 115g caster sugarOrange segments1pt / 568ml double cream

Method1 Sandwich two discs of sponge cake withmarmalade. Put orange segments and rhubarbinto the bottom of a glass. Put sandwich ofsponge on top then add more rhubarb.

2 Mix rind and juices with sugar thoroughly.Whip three quarters of the cream until thick butnot stiff. Slowly beat the juices into the cream.

3 Spoon the mixture over the cake and chilluntil the cream sets and the juice has separatedover the cake, preferably overnight. Whip therest of the cream and pipe on top, decorateand serve.
