a really nice decaf, with a good amount of blueberry and raspberry on the nose, along with cane sugar. the berry follows into the cup, along with an intense bittersweet chocolate. a medium body with a little fluff to it
rounds out a cup that’s sweet and easy to drink.
this coffee comes to us through the ethiopia commodities exchange, perhaps the most common path for coffee in ethiopia. all small farmers in ethiopia have two options for selling their coffee: by joining a cooperative, or selling to
a private washing station and seeing their coffee go through the ecx auction. coffees at these washing stations are graded according to quality, allowing farmers to be paid based on the quality of their coffee. generally speak-
ing, farmers who sell through washing stations are paid based on what the auctions are bringing in, allowing the farmers to receive payment that accurately reflects the market.
this particular lot is a grade 4 natural sidamo, purchased by swiss water process via the exporter bagersh, with the intention of decaffeinating it using their water process method.
this coffee is processed naturally, and consists of heirloom varieties.
