WARNING: In order to limit accidents such as electric shocks, personal injury or fire, and in order to limit material damage due tomisuse of the appliance, please read these instructions carefully and follow them strictly. Reading the operating instructions will helpyou get to know your appliance and enable you to use the equipment correctly. The operation manual should be kept within easyaccess to all users for reference and should be read completely by all first time users of the machine.

IMPORTANT WARNING

UNPACKING

• Carefully remove the equipment from the packa-

ging and take out all the boxes or packets containing

attachments or specific items.

INSTALLATION

• We recommend you install your machine on a

stable solid base at a comfortable working height.

CONNECTION

• Always check that your power supply corresponds

to that indicated on the serial number plate and that

it is properly sized.

HANDLING

• Always wear cut-resistant gloves when handling the

cutting plates.

ASSEMBLY PROCEDURES

• Follow the various assembly procedures carefully

(see page 7) and make sure that all the attachments

are correctly positioned.

USE

• Do not open the feed lead / attachment until themotor has come to a complete stop.

• Never tamper with or defeat the purpose of thelocking and safety systems.

• Never put a hand or nonfood object in the entryor exit chutes.

• Do not overload the machine.

CLEANING

• Always unplug your appliance before cleaning.

• Always clean the appliance and attachments atthe end of each use.

• Never place the motor unit in water.

• For parts made of aluminum alloys, use cleaningdetergents suitable for aluminum.

• For plastic parts, do not use detergents that aretoo alkaline (i.e., containing too much caustic sodaor ammonia…).

MAINTENANCE

• Always unplug the appliance before servicing.

• Check the seals regularly and ensure that thesafety devices are in good working order.

• It is particularly important to maintain and checkthe attachments since certain products containcorrosive agents e.g. citric acid.

• NOTICE: Never operate the appliance if the powercord or plug has been damaged. If the machine failsto operate as described in this manual, or if themachine malfunctions in any way, removethe machine from use and have it ser viced.Additionally, discard all food processed at the timeof the malfunction.

This lead is designed for the preparation of longvegetables like carrots, cucumbers, leeks, or of fragilefruit and vegetables such as tomatoes, bananas, etc.The entry ports in this lead can also be used ascutting guides for special preparations requiring highcutting precision.

ANGLE FEED HEAD

This lead assembly performsthe same functions as the onedescribed above with itsstraight tube, but is differentin that it is equipped witha sloping tube especiallydesigned for slanted cuttingas well as a straight tube.

• BULK FEED ATTACHMENT

This attachment is intendedfor continuous cutting tasks.It is ideal for slicing delicatevegetables such as mush-roomsand tomatoes, gratingcarrots, slicing potatoes andcutting French fries. The bulkfeed is not suitable for tasks,such as : slicing long vege-tables (use the small lead or the angle feed lead). Usethe large lead assembly for vegetables that are too bigto be fed into this attachment.

See the instructions to follow anduse the rubber plate locking nut /agitator in order to avoid blockagesand variations in the quality of cut.

INTRODUCTION TO YOUR NEWCL 55 Serie “D” VEGETABLEPREPARATION MACHINE

The CL 55 is a versatile machine designed to meetyour professional needs. It can perform a number oftasks, as well as save much in time and labor.The CL 55 is supplied with a wide range of cuttingplates and grids to satisfy even the most demandingchefs when it comes to cutt ing up fruits andvegetables, i.e. slicing, grating, julienne, dicing andFrench fries.Its numerous functions will open the door to a wholenew culinary world.Thanks to its simple design, all components requiringfrequent handling for maintenance or cleaning canbe easily assembled and disassembled.

SWITCHING ONTHE MACHINE

Before connecting, check that your power supplycorresponds to that indicated on the machine’sidentification plate.

FUNCTIONS OF FEEDLEADS / ATTACHMENTS

• LARGE LEAD ASSEMBLYThis lead allows you to prepareall types of vegetables:The large feed lead is used toprepare bulky vegetables such ascabbage, celery, lettuce, etc. Asmall tube and pusher is providedin this lead for the preparation oflong or fragile fruits or vegetables.

Two types of plate locking nuts are designed for thelarge lead assembly:

1) The (long) plate-locking nut holdsthe cutting plate in place for the prepa-ration of all vegetables except for cab-bage.

2) The (short) hollowing nut is used onlyto prepare cabbage. This tool can beused to shred or grate a whole cabbagewithout having to cut it.

A special tool has also beenincluded to remove the (short)hollowing nut.

Feeding tray3) An optional stainless steelfeeding tray is available tofacil i tate the loading ofvegetables into the largelead assembly.

• TUBE FEED HEADS

STRAIGHT TUBE FEED HEAD

This lead consists of twostraight hollow tubes with adiameter of 75 mm, a 2 inch in-sert and two pushers (2 inchand 2-3/4). The insert allowsyou to modify the diameter ofthe tubes.

b) If you have a dicing combination:I.e. a grid and a special slicing plate for dicedvegetables.

ASSEMBLY

A) CL 55 PUSHER FEED-HEAD• PUSHER FEED-HEAD

1) With the motor basefacing you, place thedischarge plate onto theshaft.

SIDE A facing upwards (ejectionrib downwards) for fragile vege-tables or citrus fruit (such as tomatoesor mushrooms).SIDE B facing upwards (ejection ribupwards) for all other types of fruit orvegetables.

Use the discharge arm forfine grating and slicing only(cabbage, celery, carrots,cheese, etc.).

2) Assembling the cutting plate and / or dicing orFrench fry grid:a) If you have opted fora slicing, grating orjulienne plate:Position the plate on themotor shaft.Rotate the plate until itdrops into place. The slotin the center stem of theplate should be resting on the motor shaft pin.

3) Then, screw the appropriate locking or hollowingnut onto the motor shaft according to the type ofvegetable to be prepared.

It should be remembered that the long locking nutis suitable for all types of vegetables except forcabbage. Use the hollowing nut for cabbage.

4) Position the large leadassembly on the motorbase. The latch is nowfacing you on your right.

5) Slide the hinge pin intothe locations provided atthe back of the motorbase. Then, lock the leadonto the motor base withthe latch.

Place the dicing grid over the motor shaft. As shownin the picture, the grid rests on a ledge in the motorbase. This ledge must be clean and free of productin order for the machine to operate correctly.Next, fit the corresponding slicing plate (straightedged blade) onto the motor shaft. Rotate the plateuntil the slot in the blade hub drops onto the pin in themotor shaft.Continue to rotate the blade a full 360 degrees tomake sure the plate doesn’t scrub against theplastic grid. If rubbing occurs-do not proceed. Callyour authorized service agency.

Slicing plates and dicing grids can be mounted in thefollowing combinations:

3) Screw the rubberplate-locking nut / agi-tator into the motor shaft.

4) Position the bulk feedattachment on the motorbase. The latch is nowfacing you on your right.

5) Slide the hinge pin intothe slots provided at theback of the motor base.Then, lock the attachmentonto the motor baseusing the latch. Themachine should notoperate unless the latch isin place.

Position the French frygrid over the motor shaftwith the raised, bladedgrid facing the dischargechute.Next put the appropriateslicing plate on the motorshaft.

Rotate the plate until theslot in the plate hub isaligned with the motorshaft pin and causes theblade to drop into place.Continue to rotate onefull turn. If the cuttingplate scrubs the grid-donot proceed. Contact

your authorized service agency.

CHANGING THE PLATES

ALWAYS WEAR CUTTING GLOVES WHEN HANDLINGTHE CUTTING PLATES.

The machine should be switched off (by pressing thered push-button) before changing plates.

6) If you are using the fee-ding tray, do notfollow the instructions asdescribed in step 5).Instead, position the traysupport against the hingeof the lead and slidethe hinge pin into thelocations situated at theback of the motor base.

The plates can be changed without dismantling thefeeding tray.

7) Fit the lead securelyonto the motor unit usingthe locking latch.

8) Then position the trayon the support if needed.

• SMALL LEAD ASSEMBLY1) And 2) Proceed as described for the large leadassembly (You can only make French fries with thebulk feed).

3) Position the lead on the motor base, with the latchfacing you on your right.

4) Slide the hinge pin intothe holes provided at theback of the motor baseand fasten the latch.

B) CL55 AUTOMATIC1), 2a), and 2b) Proceed as described for the largelead assembly.2 c) If you are using a French fry plate combination.(French fry grid and a special French fry slicing platemake up a combination.)

5) Then fit the discharge plate, the slicing, grating orjulienne plate, or the dicing equipment as descri-bed in step 1) and 2) in the previous section on thechosen lead / attachment.

6) Close the lead / attachment and fasten the latch.

USES AND CHOICEOF PLATES

1) With the motor unit facing you, use your right handto release the latch used to lock the attachment ontothe motor base.

2) a) Feed opening fitted with a lever:

Lift the latch and tilt the attachment back. Then,unscrew the locking nut or hollowing nut. Use thewrench supplied to remove the hollowing nut.

b) With a large lead assembly equippedwith a feeding tray:

• Remove the tray from the support.• It is not necessary to remove the support to

change the plate.• Then proceed as specified in step 2 a).

c) With small lead assembly:

First remove the inserts and the pushers, lift thelatch, and tilt the lead back.

d) Bulk Feed Attachment:

Lift the latch and tilt the attachment back.

3) Put on your cut resistant gloves then free the plateby lifting it by its edges. It may be necessary torotate the plate slightly counterclockwise and thenlift. For dicing equipment, you are advised to pullout the grid and plate assembly together. Thenremove the discharge plate using the two holes. Ifthe discharge plate is stuck, turn it slightly in thecounterclockwise direction.

4) Before assembling the dicing equipment, it isadvisable to clean the inside of the motor support/ chute thoroughly with a damp cloth or sponge,especially the part onto which the grid is to rest.Always use a properly cleaned grid. Neverprocess soft food after hard without cleaning thegrid.

Proper cleaning of the machine is one of the mostimportant preventive maintenance measures theuser can employ. The high acid content of food cancause harm to electrical parts contained within thehousing. Although these elements are isolated fromthe outside through seals vegetable juices will tend toseep. If vegetable juices are permitted to collect on themachine over periods of use, erosion of the seals canoccur.

MAINTENANCE

• BLADES, PLATES AND GRIDSThe blades on the slicing and julienne plates and thegrids on the grating plates are all subject to wear andshould be changed as required to ensure highquality cutting.

It is recommended that the machine be cleaned aftereach operational use, and at least once per day.The continuous feed lead, discharge plates, andcutting plates can be cleaned in a dishwasher.However, we suggest that you use a mild (non-corrosive) detergent designed for “soft metals” suchas aluminum. Dishwashers are best avoided in orderto prevent the aluminum from becoming tarnished.We recommend that you clean the attachments ina 3-pot sink system or according to local healthdepartment regulations.Dishwashers are best avoided in order to preventthe aluminium from becoming tarnished. Instead werecommend that you clean the machine by hand usingwashing-up liquid.If you do put your machine in a dishwasher, wesuggest that you use a detergent designed speciallyfor aluminium.Never immerse the motor base in water. Clean itwith a damp cloth or sponge.

SAFETY

I M P O R T A N TCheck that your detergent is suitable forcleaning plastic parts. Some washing agentsare too alkaline (e.g. high levels of caustic sodaor ammonia) and totally incompatible withcer tain types of plastic, causing them todeteriorate rapidly.

The discs are extremely sharp. Handle with care.

1) The CL 55 is equipped with a safety system thatturns the machine off when the pusher (on the pusherfeed lead) is turned out away from the opening. Themachine will start again, once the pusher is swungback into place over the feed opening.

2) The CL 55 is fitted with a temperature fuse thatautomatically stops the motor if the machine is lefton for too long or overloaded.If this happens, allow the machine to cool completelybefore restarting. If the machine has become jammedpress the off button and UNPLUG the machinefrom the wall outlet. Remove the feed lead and Clearthe jam (wear cut-resistant gloves). And restart byfirst pressing the reset button located on the bottom ofthe motor base, then closing the lead/attachment andpressing the on button.The hinge pin must be fitted in its position at the backof the motor unit before the machine is switched on.

Do not open the feed head / attachment untilthe motor has come to a complete stop.Never tamper with the locking or safetysystems or defeat their purpose.Never place anything other than foodproducts into the entry port.Never put anything into the exit port.Always use the food pushers to force the foodthrough the entry ports.Do not overload the machine or apply excesspressure with the food pushers.
