Clarity Publishing is an independent publisher based in Malaysia with a passion for curating high-quality non-fiction titles that weave together great stories with outstanding design, photography and artwork.

Since we opened our doors in 2013, the goal was never to become a book-assembly line but rather to discover and work with Malaysian talent to develop unique titles that excite us and our readers.

We love taking risks and heading off well-worn paths - I hope that this is reflected in our eclectic list!

2016 promises to be an exciting year for us as we launch our new imprint – Tropical Spice Garden Books – a collaboration with the Tropical Spice Garden, one of SE Asia’s most outstanding eco-attractions (see page 12).

Pearly KeePearly Kee is a fifth-generation Penang Nyonya and celebrated food ambassador for the island. Her authentic Nyonya cooking classes have attracted students from all over the world, including, professionals and true foodies drawn by her encyclopaedic knowledge and cheeky, feisty style.

In addition to her popular cooking classes, Pearly regularly travels around the world in her role as Nyonya food consultant to various restaurants and hotels. She’s appeared on TV with celebrity chefs, including Will Meyrick, Ainsley Harriott and John Torode.

I’m lucky to have all the fresh spices and herbs growing in my garden so I don’t have to go far to gather the leaves. I always challenge my students to make their own version with whatever fresh herbs and spices they can find at home.

I add the shredded leaves right at the very end so that the rice doesn’t become soggy and clump together.

Pearly’s tipsAvoid over boiling the coconut milk as it will make the dish extra oily.

You can add stir fried aubergine (brinjals) slices to the recipe, it tastes great with the lovely white sauce.

1) Squeeze the tamarind repeatedly in the water. Rest for 15 minutes and continue squeezing. Strain the water through your fingers into a blender to remove the pulp (fingers are better than a sieve which will trap the tamarind cream!). 2) Grind all the spice paste ingredients and tamarind water to create a fine paste.3) In a bowl, mix coconut cream with water.4) Heat oil and fry the shallots, remove as soon as these become crisp. Drain the fried shallots and keep aside on a plate.5) Using the same oil, fry the garlic until it becomes crisp, drain and set aside on a plate. 6) Remove excess oil leaving about 1 teaspoon of oil and stir fry the red and green chillies for about 10 seconds. Remove the chillies. 7) With the same oil, stir fry the prawns until firm and dish. 8) Fry the ground spice paste and coconut milk at low heat. Allow it to boil for 5 minutes at low heat, turn off the heat when it comes to a rolling boil.9) Pour the white sauce into a serving plate, add the stir fried chillies, prawns and top with toasted cashew nuts. 10) Garnish with fried shallots and garlic.

Sambal GorengPrawns in white sauce

I have no idea why this dish is called sambal goreng, as there is definitely no sambal in it! Perhaps the early Nyonyas got confused with Malay cooking terminology.

SPICE PASTE15g/ 1/2 ounce tamarind (assam)70ml/ 1/3 cup water2 stalks lemongrass, finely sliced1 flat teaspoon shrimp paste (belachan)20 to 24 cashew nuts1/4 teaspoon salt

OTHER INGREDIENTS50ml/ 1/4 cup coconut cream50ml/ 1/4 cup water 4 to 5 tablespoons cooking oil4 to 6 shallots, sliced 4 to 6 cloves garlic, sliced 2 fresh red chillies, remove seeds and cut into triangles2 green chillies, remove seeds and cut into triangles20 medium size fresh prawns with the shells and heads removed, mixed with 1/8 teaspoon salt and 1/4 teaspoon sugar 20 to 24 toasted, chopped cashew nuts for garnish

1) Cut the turmeric in thin slices and immediately mix this into the rice to turn it yellow. Set this aside.

2) Deep fry the salted fish till lightly golden and set aside.3) In an oil-less wok, toast the shrimp paste on low heat until it flakes. Pound till fine.4) Pound the deep fried fish, dried prawns and shrimp paste into a fine powder and mix into

the rice. Add the coconut and continue to mix. Add in the dried ingredients slowly to make sure that the rice doesn’t become lumpy. Add white pepper, sugar and salt to taste.

5) Add in the shallots, lemongrass and torch ginger slices. Keep mixing the rice.6) Place a flattened turmeric leaf on a chopping board and stack the wild pepper, sand ginger,

kaffir lime, laksa, basil and mint leaves on top (in order) and roll into a tight cigar. Slice the rolled leaves as finely as you can (pick out and discard leaves that are too thick) and mix into the rice. Check the seasoning and serve.

Nasi UlamJungle herb rice

2cm/1 inch fresh turmeric (kunyit)200g/ 1/2 pound cooked Basmati rice (left overnight)10g salted fish (kiam hu)2 teaspoon shrimp paste 2 tablespoons dried prawns, finely pounded 2 tablespoons grated, toasted coconut (kerisik) 1/2 teaspoon white pepper1 teaspoon sugar 1/4 teaspoon salt10 shallots, cut into thin rings 1 stalk lemongrass (serai), finely sliced1 torch ginger flower (bunga kantan), finely sliced1 turmeric (kunyit) leaf, cut into half8 wild pepper leaves (daun kadok) 4 sand ginger (cekur) leaves4 kaffir lime leaves3 stalks laksa leaves3 stalks basil leaves 3 stalks mint leaves 10 small green chillies (cili padi) – this is super hot and optional!
