TURKEYSet oven to 190C/170C fan/Gas mark 5. For accurate timing, always weigh your turkey after it’s been stuffed.
The latest advice from British Turkey Information Service is if the turkey is over 4kg, calculate 20mins per kg + 90 mins. If the bird is
under 4kg, calculate 20mins per kg +70 mins.
To test if it’s done, make sure the juices run clear when you pierce the thigh where it meets the body.
If not, put it back in the oven for a further 20mins, then test again.

BONELESS JOINTS: 180°C, 350°F, Gas mark 4-5, 20-25mins per 450g.
TOP TIPS FOR THE PERFECT STEAKRemove the meat from the fridge and bring to room temperature before cooking - just like red wine it should be allowed to breathe!
Always pre-heat the grill. Griddle or frying pan to high before cooking. Sear quickly for 2-3minutes on each side.
For Rare: remove after searing and allow to rest.
For Medium - Rare/Medium: turn down the heat and cook a further 2-3minutes on each side,
depending on thickness.
For Well Done: cook a further 1-11/2minutes on each side.
Turn as little as possible - and do not overcook.
Resting is essential to have a succulent, tender steak. It allows the meat to relax aft er cooking. Relaxing gives the juices time to go
back into the meat so that it is juicy and succulent all the way through. It is important to rest your meat after cooking:
Rare 2 1/2mins each side 6mins
Medium 4mins on each side 4mins
Well Done 6mins on each side 1mins.
BEEF JOINTSSirloin, Fore rib Roast, Silverside:
180°C, 350°F, Gas mark 4-5
Rare: 20mins per 450g (lb) plus 20mins.
Medium: 25mins per 450g (lb) plus 25mins.
Well Done: 30mins per 450g (lb) plus 30 mins.
PORK JOINTSBone in or Boneless - Leg/Loin/
Shoulder/Gammon/Belly
Joint: 180°C, 350°F, Gas mark 4-5.
Normal well cooked: 30mins per 450g (lb) plus 30mins.
