If you have a question, concern, or complaint, which you believe has not been satisfactorily addressed by our staff, feel free to call our Administrative Hotline. Our Hotline can also be used to report suspected fraud, waste and abuse in accordance with the federal Deficit Reduction Act of 2005. The Hotline number is posted throughout the facility. An Administrative Assistant will take calls, or you can record a message when no one is available. Please follow the instructions when leaving a recorded message. Your call is confidential, but you do need to provide your name and telephone number, in case we need to contact you for more information, and to inform you of the action taken. You can report Fraud, Waste and Abuse to the Lehigh County Ethics Hotline at 610-782-3999. This information is confidential and caller may remain anonymous.
SPRINGTIME. Even though the Ground Hog saw his shadow, we will
still have six seeks of Winter. Ground Hog’s Day was on February 2nd and the first day of Spring is on March 20th.
Right now, we are in the Lenten season.. Palm Sunday is on March 25th the last Sunday of the month. Holy Week begins on Palm Sunday and ends on Easter Sunday, which is on April 1st. Not only is it Easter, it is also April Fool’s day. So please be on guard for those people who like to play jokes or tricks on unsuspecting people. Children will go on Easter Egg hunts, parties, etc. Parents and their children will be wearing their new Easter outfits. The children will also be on their Spring vacations.
Don’t forget to set your watches and clocks ahead one hour on March 20th. This is the beginning of Daylight Saving time. It will end on the first weekend in November.
Also, this month we will celebrate St. Patrick’s Day, a parade and parties. The parade starts at the Fair Grounds and ends at Hamilton and Fifth Streets. Also Passover is a religious day for our Jewish friends on March 30th.
We would like to make a correction to and article Dorothea submitted last month. It should have read “My father was in France during World War I. My cousins served in World War II”. We are very sorry for the mistake.

March means “comes in like a Lion
and out like a Lamb”, also, the month of March means I will be another year older. More than that it means Spring is here, when we’ll see crocus and daffodils bursting through the ground. Also, St. Patrick’s Day is this month and as much as I tried, I never found a four-leaf clover!

We are excited to announce that we have finally begun the process of data collection through our computerized system.
Data is collected by way of personal interviews with residents, families and staff. Some of these interviews are conducted on the nursing units. Family interviews may also be conducted on the phone. Interviewers are individuals from several disciplines including Social Services, Therapeutic Recreation, Nursing and Resident Assessment.
The information collected during these interviews will assist us in recognizing areas of concern to residents, families and staff. Team meetings will be held where the data will be analyzed and target specific areas where opportunity for improvement exist.
During these interviews, please share any infor-mation that you feel will enhance this process. Our goal is to make living at Cedarbrook, your home, the best experience possible.
The Spring formal is coming to Cedarbrook Allentown. Our theme this year is “BUTTONS and BOWS”. If ANYONE has old buttons they would like to donate, please drop them by the TR Department or call 610-336-5681 for more information. Thank You!

You don’t have to be Irish to know how lucky we are to have such a wonderful group of volunteers. Every day there are volunteers making time in their lives to be at Cedarbrook. They are doing great things for our residents. Our sincere thanks to each of you! We are looking for people to “Spring” into action and join our volunteer team.
Current Volunteer Opportunities:
Spanish speaking volunteers who can visit and converse with residents who only speak Spanish. This is an as-available position.
Help residents with projects in our liquid embroidery (painting on fabric) activity every Monday morning 9:30am - 11:00am. Art skills are helpful but not required. Our residents love this activity and just need helpers.
Transport residents to in-house beauty shop Tuesday mornings 9:00am - 12:00pm.
Help residents play bingo or pinochle. Make resident’s birthdays special. Assist with our Monthly
Birthday Party. Assist residents using computers, iPads, etc.

Our Auxiliary is a group of amazing people who might be small in numbers but accomplish many great and wonderful things for Cedarbrook and its residents. They received as the 2017 Lehigh County’s Unsung Hero Award for all their hard work and dedication to the residents of Cedarbrook.
They are an extremely active organization that has fund raisers sometimes several times in a month. From food sales to raffles they raise money for all sorts of things like entertainment, bingo, games and gifts to name only a few….a full list can be found at the end of this article.
The Auxiliary receives additional funds from residents’ families who select the Auxiliary to be the recipient of memorial donations in honor of their loved one. Dues also account for some of the annual income.
It is through your support of fundraiser events, like the bagel, pretzel and food sales, Gertrude Hawk candy bar sales, raffles, bake sales, and the bazaar that the Auxiliary is able to provide all the below mentioned items. “Thank You” to our Auxiliary and all the wonderful people who continue to support this wonderful organization.
Experience the joy of giving……..join our Cedarbrook Auxiliary. Please contact our Treasurer, Emily Folland or Kerry Magliane, Volunteer Department at 610-336-5684. Dues are only $5.00 per year. Monthly meetings are on the last Wednesday of the month at 10:30am. In the Auditorium, unless otherwise noted.

1 loaf rye bread (toast lightly & cut into cubes)
1 (16oz.) can sauerkraut, drained
1-1/2 cups Swiss cheese, shredded
1-1/2 cup mayonnaise
1/2 cup Russian salad dressing
2 cups corned beef, cut into small pieces
1/2 cup butter, melted (optional)
Put half of the rye bread cubes into a greased 15 x 10 Pyrex. Top with the sauerkraut. Mix the mayo and Russian dressing together and spoon half on top of the sauerkraut. Top with 1 cup of the Swiss cheese. Top with the corned beef. Top with the rest of the mayo/dressing mix. Top with the remainder of the bread cubes and the remainder of the Swiss cheese. Drizzle the melt-ed butter over all. Cover with foil and bake at 350 degrees for 40 minutes. Uncover and bake an additional 10 minutes. Serve hot!
2-2 1/2 pounds corned beef brisket
1 medium onion, sliced
1 stalk celery, cut in 3 pieces
4 medium potatoes, peeled and halved
4 medium carrots, peeled cut in 3 pieces
1 cup beef bouillon
1 bay leaf
1 garlic clove, smashed
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
4 small cabbage, cut into wedges
1 teaspoon caraway seed
Trim brisket of all visible fat, cut to fit 4 quart or larger crockpot. Place onion, celery, potatoes and carrots in bottom of crockpot, lay brisket on top. Whisk together bouillon, bay leaf, garlic, Worcestershire sauce and dry mustard. Pour over brisket, cover pot. Cook on low setting for 8 to 10 hours, adding cabbage wedges and caraway seed for the last hour of cooking.
1/2 lb. Irish bacon, diced
2 large potatoes, peeled and cubed
1 (15 oz) can diced tomatoes with juice
1 cup chicken stock, or as needed
Salt and black pepper to taste
2 cups thinly sliced dark green Savoy cabbage
leaves
Place bacon in a large, deep stockpot or saucepan. Cook over medium high heat until evenly brown. Drain off any excess fat. Stir in potatoes, tomatoes, and enough chicken stock to cover. Season with salt and pepper. Bring to a boil, reduce heat and simmer for 20 minutes, or until potatoes are tender. Stir in cabbage and allow the soup to simmer for a few minutes longer.
4 tablespoons butter, softened (room temp)
1 cup granulated sugar
1 egg beaten (room temp)
4 Granny Smith apples, cored, peeled & diced
(2 cups)
1/4 cup chopped walnuts
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup all-purpose flour
Preheat oven to 350 degrees F. Generously grease 8-inch square cake pan. In a large bowl, cream butter and sugar together until light and fluffy. Add the egg, apples, nuts and vanilla and stir well. Sift in the dry ingredients and mix well. Pour the batter into the pre-pared pan and bake about 45 minutes, until the cake is lightly browned and a toothpick inserted into the center comes out clean. Remove from oven and let the cake set in the pan for 5 minutes, then remove from pan.
1-1/2 cups grated raw potatoes
1 cup all-purpose flour
1/2 cup shredded Cheddar cheese
1 cup leftover mashed potatoes
1/4 tsp salt & 1/4 tsp ground black pepper
2 tablespoon Ranch dressing
1 tablespoon milk
1 egg
2 tablespoons vegetable oil
Mix grated potatoes with flour in a large bowl. Stir ched-dar cheese and mashed potatoes into grated potato mix-ture; season with salt and pepper. Beat egg, ranch dressing, and milk together in a separate bowl; pour mixture into potatoes and stir. Heat vegetable oil in a large skillet over medium heat. Drop tablespoon size scoops of potato mixture into the hot oil. Pan-fry until golden brown, 3 - 4 minutes on each side.
1/2 cup unsalted butter
1 medium onion, thinly sliced
3 leeks, sliced
3 large baking potatoes, peeled and cut into 1/4
inch thick slices
3 (14-1/2 oz.) cans chicken broth
1 teaspoon salt
1/4 teaspoon pepper
Melt butter in large saucepan over low heat; stir in onion & leek. Cover and cook 20 minutes. Stir in potato; cover & cook 15 minutes. Stir in broth, salt and pepper. Reduce heat, simmer 30 minutes or until potato is tender. Remove from heat, cool slightly. Process soup in batches in a blender until smooth, stopping to scrape down sides; return to saucepan, and cook over medium heat until thoroughly heated. Top with your choice of shredded Cheddar cheese, crumbled cooked bacon, chopped chives.

Mr. George Smits, from B-3, enlisted in the service right after high school. He joined the Army and did his basic training at Fort Dix.
George was put on a troop train to Fort Lewis, Washington where he worked payroll for awhile. He tried out for the band and was accepted into the 2nd Infantry Band where he played trumpet and learned saxophone.
He was called to Korea and at first was still with the band until an attack ruined their instruments. The members were sent to various points. George spent about a year at division headquar-ters defense platoon in Korea. He then was sent to Fort Jay, New York and played with their band until his enlistment time was up. Thank you to George for his service

RESIDENTS’ COUNCIL MEETING

The Resident Right for February was read:
BED HOLD POLICIES - MEDICAL ASSISTANCE RESIDENTS The Medical Assistance Program will make payment to your nursing facility to hold (reserve) the bed for you when you are away from the nursing facility for a continuous 24 hour period because you are in the hospital or on therapeutic leave. A bed must be available for you when you return to the nursing facility. Pennsylvania’s limits on Medical Assis-tance Program payments for reserved bed days are as follows: Hospitalizations - A maximum of 15
consecutive days per hospitalization. During the 15 day period, the same bed shall be available to you upon your return to the nursing facility.
Therapeutic leave - A maximum of 30 days per calendar year (leave days must be included in your Plan of Care and must be ordered by your attending physician).

Highlights:
Department of Health surveyors were at Cedarbrook for the annual inspection. We received 3 minor deficiencies which we are working on correcting. The surveyors thank all residents for welcoming them into their home and for participating in the survey process.
There is still respiratory and stomach bug illnesses throughout the building so please continue to be diligent with handwashing.

Dietitian’s Corner Program
February is National Heart Month! This campaign of the American Heart Association helps to promote our awareness of Heart disease, risk factors and treatment. There is also a program called Go Red for Women. The Go Red campaign is to focus on women and their risk for heart disease. Since 1984 more women have died from heart disease than men. The symptoms in women are different from men and sometimes ignored. Heart disease is the number one disease in women with 1 in 3 women dying from heart disease as compared to 1 in 31 from Breast Cancer. The Go Red campaign aims to educate women about their risks which include atherosclerosis, heart failure, arrhythmias and heart valve problems. The more we are educated and informed about our risks for heart disease the more we are able to prevent this disease. Lifestyle factors are very important to prevent or treat heart disease. Recommendations for a healthy lifestyle include: stop smoking, manage your blood sugar and blood pressure, lower cholesterol, know your family history, stay active, lose weight and eat healthy. Regular checkups with your doctor can help to ensure you are on the right track to preventing heart disease. May you all have a happy Valentine’s Day! Thank You

Announcements
February Birthday Party was held on Tuesday, February 12, 2018. We had 30 residents attending and 10 who elected to stay on their unit.
Update: Kitchen Tours did resume on January 17, 2018. We had one resident who toured the kitchen on that day. Please let your Dietitian know if you’re interested. We will be scheduling all tours on Wednesday from 10:30am to
11:15am moving forward. Please remember that all nursing units
have supplies of different condiments.

Hello Friends,
One of the nicest things that I get to experience is how families and friends bond together during difficult times. This is never more evident than at the memorial services we conduct monthly. I'm so impressed when families reach out to other residents and their loved ones. I often repeat the words, we are all in the same boat. We are all passengers sailing through this life. Sometimes the waters are still, and sometimes they are very rough. It is during the rough seas that bonds are formed that carry hurting people over the dangerous waters. Those are the friendships that are often revealed by grateful family members at our memorial services. They often speak of the good quality of care by the nurses and aides. The sense of love and belonging that one experiences here at Cedarbrook is acknowledged. During a time of reflection, families often speak of their appreciation for other residents and their families, who have become a very special part of their lives. Our memorial services are an extremely important part of our church life here in Allentown and Fountain Hill. Make it a point to be a part of our service as we comfort those who are hurting. Above all, I will always point you to the Captain of our ship. The Man who not only calms the sea, but walks to us, on the water. Our Lord. May God Bless You All.

Tips for Keeping Your Money and Valuables Safe
Although we discourage residents from keeping money and valuables in their room, we realize that many of you will choose to do so. Therefore, we would like to offer these tips to help you keep your money and valuables safe from loss or theft. Since you have access to the money in your account during normal business hours Monday through Friday, we suggest that you only withdraw the amount you need for immediate use. If you need larger sums of money for gifts or to reimburse your family members for purchases made on your behalf, we suggest that you contact Financial Services to arrange for payment by check. If you choose to keep money and valuables in your room, we highly recommend that you secure such items in the locked drawer of your bedside cabinet. Keep your key with you, or keep your key out of sight in a safe place. As soon as you realize that your money or property is missing, it is important to report it immediately to the Charge Nurse. Cedarbrook will not assume responsibility for replacing missing property kept by res-idents on their person or in their room. However, we will take action to investigate, and to try to recover your property if possible. Finally, we ask that you help us maintain a current inventory of your personal property. Any property that you purchase or receive during your stay should be added to your Valuables Received After Admission Form, including a description of the property. This infor-mation is essential when trying to locate missing items.
