Bev Dawson D-3 St. Patrick’s Day Trivia Saint Patrick was British. Although he made

his mark by introducing Christianity to Ireland in the year 432, Patrick himself was not Irish. He was born to Roman parents in Scotland or Wales in the late 4th century.

Th Irish take Saint Patrick’s Day seriously. As you might expect, Saint Patrick’s Day is a huge deal in his old stomping grounds. It’s a National holiday in both Ireland and Northern Ireland.

New York City’s Saint Patrick’s Day parade is one of the world’s largest parades. Since 1762, 250,000 marchers have traipsed up 5th Avenue on foot in the parade.

Chicago feels lucky, too. New York may have more manpower, but Chicago has a spectacle all its own. The city has been celebrating Saint Patrick’s Day by dumping green dye into the Chicago River since 1962. It takes 40 tons of dye to get the river to a suitably festive shade.

It used to be a dry holiday. For most of the 20th century, Saint Patrick’s Day was consid-ered a strictly religious holiday in Ireland, which meant that the nation’s pubs were closed for business on March 17th. In 1970, the day was converted to a National Holiday and the stout resumed flowing.

There is a reason for the Shamrocks. How did the Shamrock become associated with Saint Patrick? According to Irish legend, the Saint used the three-leafed plant as a metaphor for the Holy Trinity when he was first introducing Christianity to Ireland.

March Memories Thank you to all who voted me in as your new President of the Resident Counsel. I will try to do my best to please you this year. March 17th is St. Patrick’s Day, the wearing of the green. Years ago my husband, Bill and I were King and Queen of the Knights of Columbus. That was the year I won two crowns. One was at the Annual Snowball Dance where Bill and I were chosen to represent the Fourth Degree of the Knights of Columbus. Two of my granddaughters will be celebrating their birthdays this month; Susan, who is married to Daryl and has two children. Payton who is a cheerleader in middle school and Xander who is three years old. Hannah, my youngest granddaugh-ter, is living with her father in Milton, PA. Shrove Tuesday was on February 25th. I hope you enjoyed eating a doughnut. I can remember when my grandmother would make potato dough-nuts. They were out of this world. She made so many doughnuts...there were doughnuts on the large buffet, dining room table and the extra table in the kitchen. Ash Wednesday was on Febru-ary 26th, which was the first day of the Lenten season. Daylight Saving Time begins on March 8th, so remember to turn your clocks and watches ahead one hour the night before. The First Day of Spring is on March 19th. Dorothea Shunk - C-3

You don’t have to be Irish to know how lucky we are to have such a wonderful group of volunteers. Every day there are volunteers making time in their lives to be at Cedarbrook Senior Care & Rehab. They are doing great things for our residents. Our sincere thanks to each of you! We are looking for people to “spring” into action and join our volunteer team.

Current Volunteer Opportunities: Cedarbrook Allentown – Spanish speaking Volunteers who can visit and converse with residents who speak

Spanish. This may be done days, evenings, or weekends. Help residents have fun in our Music Makers, sing-along activity every Thursday

morning from 9:30 am - 11:30 am. Our residents love this activity and just need helpers.

Transport residents to in-house beauty shop Tuesday or Thursday mornings from 9:00 am - 12:00 pm. Pushing wheelchairs is required.

Help residents play Bingo, Pinochle, or other games, mornings, afternoons, or weekends. Most shifts are just two hours.

Make resident’s birthdays special. Assist with our Monthly Birthday Party. This occurs the second Tuesday of each month from 10:30 am - 12:30 pm.

Volunteer who could play the piano at some of the events. Most activities are just one hour long.

Remember…a few hours of your time can make a world of difference to someone else. Please consider volunteering at Cedarbrook.

Have you ever wondered what Lent is? My Southern friend would say “that fuzzy stuff that gets caught in your belly button.” Lint sounds like “Lent” when he says it! We know that it has something to do with Easter but that is about it. Lent, in the Church calendar, refers to the forty-day period leading up to Easter. Traditionally, this is a time of preparation. More importantly, it is a time for self-reflection. This is a time to examine ourselves to see if anything has come between us and our relationship with God. The Church tends to observe Lent through fasting. Fasting can help us prepare for Easter. Fasting does not have to be just food. We can fast anything that may be drawing us away from the Lord or something that is painful to give up. Perhaps you have noticed it is getting increasingly difficult to turn off the TV. Maybe you have been increasing your screen time and decreasing the amount of time you have been spending with the Lord. This may be a good time to limit, or do without, TV for the next forty days. Whatever it may be, we must make sure we are drawing closer to the Lord in its absence. For example, if it is shutting off the TV in the evening, then make sure you are spending that newfound time in prayer. Tell the Lord that you are sacrificing this time for Him and ask Him to draw nearer to you as you seek to draw nearer to Him. It helps us to focus on the importance of that day! The importance that Christ took our place on the Cross and died for our sins. The importance that death could not hold Him and on the third day God raised Him from the grave! We not only celebrate this Easter Sunday but every Sunday! Lent paves that way for Easter. Let us make sure we are fasting for the right reasons. The Bible says that we should consult God before we fast. We should not fast, give some-thing up, for any reason other than pleasing God and drawing closer to Him. Let us prepare our hearts during this time of Lent. Let us be prepared to celebrate the Risen Christ this Easter. Let us pray as David did in Psalm 139:23-24, “Search me, God, and know my heart; test me and know my anxious thoughts. 24See if there is any offensive way in me, and lead me in the way everlasting (NIV). Dietitian’s Corner Program

February is National Heart Month! This campaign of the American Heart Associa-tion helps to promote our awareness of Heart disease, risk factors and treatment. There is also a program called Go Red for Women. The Go Red campaign is to focus on women and their risk for heart disease. Since 1984 more women have died from heart disease than men. The symptoms in women are different from men and sometimes ignored. Heart disease is the number one disease in women with 1 in 3 women dying from heart disease. The Go Red campaign aims to educate women about their risks which include atheroscle-rosis, heart failure, arrhythmias and heart valve problems. The more we are educat-ed and informed about our risks for heart disease the more we are able to prevent this disease. Lifestyle factors are very important to prevent or treat heart disease. Recommendations for a healthy lifestyle include: stop smoking, manage your blood sugar and blood pressure, lower cholesterol, know your family history, stay active, lose weight and eat healthy. Regular checkups with your doctor can help to ensure you are on the right track to preventing heart disease. May you all have a happy Valentine’s Day!

1 loaf rye bread (toast lightly & cut into cubes)

1 (16oz.) can sauerkraut, drained

1-1/2 cups Swiss cheese, shredded

1-1/2 cup mayonnaise

1/2 cup Russian salad dressing

2 cups corned beef, cut into small pieces

1/2 cup butter, melted (optional)

Put half of the rye bread cubes into a greased 15 x 10 Pyrex. Top with the sauerkraut. Mix the mayo and Russian dressing together and spoon half on top of the sauerkraut. Top with 1 cup of the Swiss cheese. Top with the corned beef. Top with the rest of the mayo/dressing mix. Top with the remainder of the bread cubes and the remainder of the Swiss cheese. Drizzle the melt-ed butter over all. Cover with foil and bake at 350 degrees for 40 minutes. Uncover and bake an additional 10 minutes. Serve hot!

2-2 1/2 pounds corned beef brisket

1 medium onion, sliced

1 stalk celery, cut in 3 pieces

4 medium potatoes, peeled and halved

4 medium carrots, peeled cut in 3 pieces

1 cup beef bouillon

1 bay leaf

1 garlic clove, smashed

1 teaspoon Worcestershire sauce

1/2 teaspoon dry mustard

4 small cabbage, cut into wedges

1 teaspoon caraway seed

Trim brisket of all visible fat, cut to fit 4 quart or larger crockpot. Place onion, celery, potatoes and carrots in bottom of crockpot, lay brisket on top. Whisk together bouillon, bay leaf, garlic, Worcestershire sauce and dry mustard. Pour over brisket, cover pot. Cook on low setting for 8 to 10 hours, adding cabbage wedges and caraway seed for the last hour of cooking.

1/2 lb. Irish bacon, diced

2 large potatoes, peeled and cubed

1 (15 oz) can diced tomatoes with juice

1 cup chicken stock, or as needed

Salt and black pepper to taste

2 cups thinly sliced dark green Savoy cabbage leaves

Place bacon in a large, deep stockpot or saucepan. Cook over medium high heat until evenly brown. Drain off any excess fat. Stir in potatoes, tomatoes, and enough chicken stock to cover. Season with salt and pepper. Bring to a boil, reduce heat and simmer for 20 minutes, or until potatoes are tender. Stir in cabbage and allow the soup to simmer for a few minutes longer.

1 cup granulated sugar

1 egg beaten (room temp)

4 Granny Smith apples, cored, peeled & diced (2 cups)

1/4 cup chopped walnuts

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 cup all-purpose flour

Preheat oven to 350 degrees F. Generously grease 8-inch square cake pan. In a large bowl, cream butter and sugar together until light and fluffy. Add the egg, apples, nuts and vanilla and stir well. Sift in the dry ingredients and mix well. Pour the batter into the pre-pared pan and bake about 45 minutes, until the cake is lightly browned and a toothpick inserted into the center comes out clean. Remove from oven and let the cake set in the pan for 5 minutes, then remove from pan.

1-1/2 cups grated raw potatoes

1 cup all-purpose flour

1/2 cup shredded Cheddar cheese

1 cup leftover mashed potatoes

1/4 tsp salt & 1/4 tsp ground black pepper

2 tablespoon Ranch dressing

1 tablespoon milk

1 egg

2 tablespoons vegetable oil

Mix grated potatoes with flour in a large bowl. Stir ched-dar cheese and mashed potatoes into grated potato mix-ture; season with salt and pepper. Beat egg, ranch dressing, and milk together in a separate bowl; pour mixture into potatoes and stir. Heat vegetable oil in a large skillet over medium heat. Drop tablespoon size scoops of potato mixture into the hot oil. Pan-fry until golden brown, 3 - 4 minutes on each side.

1/2 cup unsalted butter

1 medium onion, thinly sliced

3 leeks, sliced

3 large baking potatoes, peeled and cut into 1/4 inch thick slices

3 (14-1/2 oz.) cans chicken broth

1 teaspoon salt

1/4 teaspoon pepper

Melt butter in large saucepan over low heat; stir in onion & leek. Cover and cook 20 minutes. Stir in potato; cover & cook 15 minutes. Stir in broth, salt and pepper. Reduce heat, simmer 30 minutes or until potato is tender. Remove from heat, cool slightly. Process soup in batches in a blender until smooth, stopping to scrape down sides; return to saucepan, and cook over medium heat until thoroughly heated. Top with your choice of shredded Cheddar cheese, crumbled cooked bacon, chopped chives.

Residents with wireless devices such as laptops, note-books, tablets (Kindle, Nook, etc) may request access through their Social Worker or Therapeutic Recreation Aide. Our PC Specialist will assign a unique username and password, which must be kept confidential. Visitors may request access at the switchboard. Usernames and pass-words for visitors will automatically expire after three days.

Recently, The Morning Call, had an article about Snow Geese and their increasing sightings in the Lehigh Valley. Could this be the result of global warming? Snow Geese have long been present seasonally in quarries around Fogelsville, but often overlooked by area birders. Large numbers of Snow Geese, and small numbers of Tundra Swans , also are found at the Middle Creek Wildlife Management Area on the Lancaster / Lebanon County border. The best time to go there is early to mid-March.

RESIDENTS’ COUNCIL MEETING MONDAY, FEBRUARY 10, 2020

Resident Rights: PROTECTION OF PERSONAL FUNDS -

You are required to deposit your personal funds with your nursing facility. If you choose, however, to deposit your personal funds with your nursing facility, your nursing facility must provide you with a written authorization form which you must sign, that requires the nursing facility to manage and account for your personal funds OVER $50.00 in an interest-bearing account. This account must be kept separate from any of your nursing facility’s operating accounts. If your funds are kept in the same account (pooled accounts) as other residents, there must be an accounting of each resident’s share of the funds and interest in the account. Any of your personal funds UNDER $50.00 must be kept in a noninterest-bearing account, interest-bearing account, or petty cash fund. Your nursing facility must maintain a full and complete separate accounting of your personal funds; and permit you or your legal representative reasonable access to the records of your account. If you are a resident receiving medical assistance benefits, your nursing facility must let you know when the balance in your account plus the value of your other nonexempt resources reaches $200.00 less than the amount that may cause you to lose your eligibility for medical assistance benefits. In the event of your death, your nursing facility must promptly (within 30 days) turn over to the executor of your estate your personal funds with a final accounting of those funds. Your nursing facility must provide assurances to the appropriate state authorities that the personal funds you deposited with your nursing facility are safe and can be accounted for. If you are a resident receiving Medicare or medical assistance benefits, your nursing facility may not deduct from your personal funds the cost of any service or item for which payment is covered by medical assistance or Medicare, whichever is applicable. Highlights: Jason Cumello, Administrator, reported the design for the renovation project

started a few weeks ago. There are 2 steps necessary before the renovation can begin: 1. A new roof on the laundry building to house supplies.

2. Old juvenile building leveled to the ground to pave a parking lot. Activities for the month of February were reviewed. Resident thanked Life Enrichment Department for the many programs in the

Auditorium. The next meeting will be held on Monday, March 9, 2020 @ 2:15 pm in the

Auditorium.

Tips for Keeping Your Money and Valuables Safe

Although we discourage residents from keeping money and valuables in their room, we realize that many of you will choose to do so. Therefore, we would like to offer these tips to help you keep your money and valuables safe from loss or theft. Since you have access to the money in your account during normal business hours Monday through Friday, we suggest that you only withdraw the amount you need for immediate use. If you need larger sums of money for gifts or to reimburse your family members for purchases made on your behalf, we suggest that you contact Financial Services to arrange for payment by check. If you choose to keep money and valuables in your room, we highly recommend that you secure such items in the locked drawer of your bedside cabinet. Keep your key with you, or keep your key out of sight in a safe place. As soon as you realize that your money or property is missing, it is important to report it immediately to the Charge Nurse. Cedarbrook will not assume responsibility for replacing missing property kept by residents on their person or in their room. However, we will take action to investigate, and to try to recover your property if possible. Finally, we ask that you help us maintain a current inventory of your personal property. Any property that you purchase or receive during your stay should be added to your Valuables Received After Admission Form, includ-ing a description of the property. This information is essential when trying to locate missing items.
