A little taste of a Chilliwack Christmas

My Favorite food over the holiday besides … ummmm food in general, has to be stuffing! Seriously, stuffing, not the new fangled, “I picked the recipe out of a Martha Stewart magazine type of stuff-ing,” but the good ole fashioned made up and stuffed in the bird Martha didn’t mess with it regular stuffing. The kind of stuffing that is making your mouth water even right now as I talk about it. The kind of stuffing that Guy Fietti would call the

“bullet Train from Flavor Town” on his Triple D food show.

I worked for a catering company in Vancouver for many years beginning when I was about 13-14 and soon had the company’s chef teach me how to effectively and quickly carve a turkey, this talent soon became my ticket into the kitchen at home where dad found that he could visit and share in the “Christmas cheer” while I cut the bird. It was here that I quickly found a way to get some of that wonderful stuffing that always ran out while the bowl was being passed

around the table ………. I munched it while “I” was taking it out of the bird!!! Eureka!!! Who would have thought that heaven could look like ripping the stuff-ing out of a bird’s carcass, but there it was one spoon for the bowl and one for me, one for the bowl and…. Oops did that fall on the counter? Now my boys have observed the cutting technique and try and help me out at Christmas dinner but I always respond with love and good cheer “No, you visit, I’ll handle this.” From the Anderson family “Merry Christmas People of the WACK!”

I love the fact that the holiday season brings out some of the best food you’ll have all year, and much more of it! The family dinners, the extra restaurant outings and the appy parties are always great, but I enjoy the simplicities of the season. A candy cane or a box of chocolates around every corner, and Mandarin oranges are everywhere! I always enjoy that first orange in late November to remind me how close we are to the holidays, and they seem to have a bit more of that “Christmas” flavour as we get deeper into December.

When I was a kid, Santa placed an orange in the toe of my stocking each year that served as an early breakfast for my brother and I well before others in the family woke up. After eating the orange, it seemed acceptable to eat the chocolate!

I still start every Christmas morning with a Mandarin orange.

When we were children – and still when we were adults – my brother, sister and I could hardly wait for Christmas. Not for the gifts, not for the turkey, not for the lights and Santa. No, the big treat for us started about 10 days before Christmas when Mom would make her famous peppernuts.

Peppernuts are, in fact, not nuts. They are made by rolling delicately spiced – nutmeg and cinnamon for sure, we never knew the full recipe – cookie dough into a long snake-like spiral. Then, holding it up by one end, Mom would use well-cleaned scissors to snip off just over half an inch of the ever-shortening “snake”- placing each piece on a greased cookie sheet which we then slipped into the heated oven. And waited while the sweet smell of heaven wafted through the kitchen. They were baked to a golden brown – maybe just a few minutes longer than “done” – but never burned. When they came out of the oven they were placed on a towel laid out on the counter until cool. Then, before we could snitch even one, Mom hid them away to “age” so they would be ready to be slipped into little bags and deposited with other special treats into our respective Christmas stockings. Having our own peppernuts on Christmas morning made the whole ritual of gift-opening just that much more special. By the time we all gathered for the big turnkey dinner later in the day, the remainder of the year’s peppernut crop was in bowls in the living room as our most treasured pre-dinner “appetizer”. Mom is long-gone to her reward and several next-generation Moms and cooks have tried to replicate our childhood treat. But, although their attempts are good and appreciated, I know they will never ever quite reproduce Mom’s Peppernuts.

For many, the holiday season is filled with long-held traditions of family and friends, decorated trees and wrapping paper, Santa visits and candy canes. And food.

Lots of food.Breakfast, lunch, din-

ner and dessert traditions. Must-have turkey, stuffing, Brussels sprouts, yams, mashed potatoes, gravy and more – all cooked in a spe-cific way, some by one spe-cific person, and all filled with memories.

The Chilliwack Progress asked several commu-nity members to share their favourite food memories of the holidays. These were their responses:

It was hard to pick one favourite food for the Christmas season! But my daughter is home this weekend and she made an awesome breakfast this morning, just like I taught her (only better) and it made me think how fun, and special our Christmas breaky is.

Our tradition has always been that stockings can be opened first thing, but then all the presents must wait until after we enjoy a leisurely break-

fast together, just like this one! Yes, it was torture for the kids for many years, but, Smoked Salmon Eggs Benedict would make it (almost) worth the wait. Eggs fresh from our own backyard chickens, wild coho caught and smoked by Dad, with delicious hollandaise, on a bed of spinach. And of course served on hand-crafted pottery made by Mom.

And nowadays, it’s even better with our grown kids in the kitchen taking charge, and out-doing my breakfast creations!

My favorite food during the holiday season has to be our traditional fondue that our family does on New Year’s Eve. I love the atmosphere it creates and I love the social aspect of it as well.

turkey sandwiches in the evening of Christmas Day. My family always had our main Christmas dinner at 3 p.m. so we could watch the Queen’s speech while we ate, so by 8 p.m. we were hungry again.

The sandwiches themselves were stuffed with all my favourite ingredients including stuffing and pickled onions.

At the time I probably did not always appreciate the significant of gathering to share food. When I reflect on my Christmas’ in England now, I realize it represented quality family time. I treasure those memories, and hope to continue many of them with my own family.

This time was also was the prelude to our evening of board games and the annual Only Fools and Horses Christmas special on the television.

My favorite Christmas food is the hardest question.

It is not one type of food that makes to the top of my list -- it is the whole feast.

The turkey. The stuffing. The gravy and all the trimmings.

I guess it’s the stuffing. Mom made a plain bread stuffing that tasted great and I still make a version of it to this day, lots of butter, sage, thyme, marjoram, onions, celery, and bread that the whole family broke up. Roasted in the bird to get the turkey juices into it. Is there anything better?

Now as a chef I like to play around with it for my guests but at home for me I go back to

Mom’s style for the memories. But I still remember the little

cream-filled chocolate bells we used to have in dishes all day long. There were lots of candies and other sweets but I loved those bells. Even after I moved out mom would send me the

bells in my stocking every year. I can’t find them now and they were only around at Christmas but thinking about them helps me remember the carefree Christmases we had when I was a kid.

Coming from a Dutch background my favorite holiday food is Oliebollen. This is like an apple and raisin fritter. It is traditionally made on New Year’s Eve. When made fresh they are wonderful.

Sprinkle some icing sugar prior to serving and they are heaven sent. New Year’s Eve was a very festive event for my family particularly as Jan. 1st was my mother’s birthday. Coupled with Christmas and New Year’s Eve this was a very special time of year and oliebollen brings back all those wonderful memories.

Capturing the spiritIt’s easy to get cynical around Christmas time. We lament the rabid

commercialism and insatiable consumerism. We think of the less fortu-nate, and wonder why more isn’t being done.

But in Chilliwack, it’s important to take a moment and look around at what is being done.

Every year a remarkable number of individuals and businesses step forward to spread a little Christmas cheer. They donate their time, their money, their energy and enthusiasm to help others share in the holiday spirit.

Chilliwack Community Services, the Salvation Army and so many more come together in a inspired effort that last year helped nearly 800 people – many of them children.

School groups, seniors centres and anonymous individuals pitch in to help, either by partnering with other groups or acting on their own. Businesses launch their own initiatives, or quietly use their leverage to give back to their community.

True, more can always be done. The need doesn’t end with the season.

But as Charles Dickens said, “...it is at Christmas time that want is most keenly felt.”

Helping ease that want is a noble thing. Most do it regardless of any recognition they might receive. (In fact, many would rather have none.)

However, laying a shoulder to the stubborn reality of poverty deserves the community’s thanks. When we work together, that effort becomes a little easier.

We see that throughout the year, whether through centres like Ruth and Naomi’s, the new health and housing contact centre, or the daily efforts by so many volunteers.

On the eve of Christmas let’s look past the critics who say the season has lost its meaning. There are too many people who give so much of themselves to help others.

Their’s is a gift we all enjoy.Merry Christmas.

VICTORIA – One of Canada’s great entrepreneurial success stories in recent years is WestJet, the Calgary-based airline that is expanding across the country and taking on European routes.

Clive Beddoe, the founding CEO of Westjet, was famous for helping the cabin crew tidy up the plane before getting off a flight. And the company is also known for its profit-sharing program, with all employees referred to as “owners” who have a stake in the success of the operation.

I thought of this management approach when news emerged that the B.C. government was offering public service unions a new kind of contract, with a five-year term and wage increas-es tied to improved economic growth.

The surprising thing is that unions are accepting the idea, even though provincial growth

must exceed the government’s independent economic forecast council projections before it can take effect in a given year.

The gener-ally non-militant Health Sciences Association was the first to recom-mend acceptance of a five-year agreement with only 5.5 per cent raises guaran-teed. Then they were joined by negotiators for

51,000 health and social services employees, represented by the B.C. Government Employees’ Union and other unions that have long been adversaries of the B.C. Liberals.

John Fryer, negotiator for the BCGEU going back to the epic battles with Social Credit gov-

ernments and now a professor at University of Victoria, wasn’t impressed when he heard the news.

“These deals reflect what hap-pens when public sector unions back the losing party in a pro-vincial election,” he said. “Union bargaining power takes a trip down the pooper.”

I think there’s more than that going on. Perhaps today’s union leadership is beginning to accept that its wage, benefit and pension arrangements look pretty good compared to the harsh reality of private businesses competing in a global economy.

I asked Premier Christy Clark if this new approach is inspired by private-sector profit sharing. She agreed that is the model.

“I think that’s a great principle for all of us to work from,” Clark said. “Until now, the growth of public sector wages has been

completely insulated from chang-es in the private sector. And this is the first time we’ve ever been able to successfully link those two things. At this point it’s still a small increment wage growth, but it’s a big change, and I hope we can continue to build on it.”

From an employee perspective, it is indeed modest. If real gross domestic product increases one per cent beyond the independent forecast used in the provincial budget, employees get an addi-tional half of one per cent raise for that year.

Contrast this labour relations development with what’s hap-pening on the federal scene. A classic confrontation is brewing between the Harper government and the Public Service Alliance of Canada.

A key dispute is over sick days, which the government estimates are averaging 18 a year. PSAC

currently has 15 “bankable” sick days a year, which the union president refers to as a “negoti-ated right.”

It takes me back to my first union job, where I was warned never to take just one sick day. We negotiated for two at a time, so always take two, the union rep told me. Implicit in this is the mindset that employees should give as little and take as much as possible.

Looking through my files each December for the B.C. story of the year, I consider what is likely to matter five or 10 years from now.

This partnership approach to building the provincial economy is my pick for 2013.

Chilliwack mayor Sharon Gaetz has been re-elected as chair of the Fraser Valley Regional District board of directors on Tuesday. Abbotsford city councillor Patricia Ross has been re-elect-ed as vice-chair.

Both Gaetz and Abbotsford mayor Bruce Banman stood for election to the chair seat. Banman, nominat-ed by Mission mayor Ted Adlem, spoke of bringing a “new and fresh” voice to the cam-paign against Metro Vancouver’s proposed Waste-to-Energy gar-bage incinerator during his nomination speech, calling the issue “the single biggest battle we have before us.” He said he brought a dif ferent leadership style to the table that

encouraged people to speak their minds and be heard.

Gaetz stood for re-election after a nomina-tion by Area A direc-

tor Lloyd Forman. She spoke of 2013 as being a year of success for the FVRD, and of the board working well together and with her.

“I’ve been very vocal in expressing your view and my views to the province,” Gaetz told the directors before the vote.

Ross was acclaimed to her vice-chair seat after Adlem, who was nominated to that posi-tion as well, refused to stand for it.

After the results, Ross thanked the board for putting their faith behind Gaetz and her-self for another year.

“We are very proud

to represent this region and all we have to offer. We’re very proud of the people that sit around this table and all the people we represent.”

It was the morning of Christmas Eve

last year, and once again it didn’t feel like Christmas.

I was having a coffee and looking at one of those family portraits, and I got homesick – I missed my mom and dad and family, and those magical Christmases we shared together in Ontario. I missed not having that special feeling that I used to get every year.

A couple of years ago, I bought a ton of outdoor Christmas lights and decorated all of the hedges, evergreens and fence. I had just finished my cancer treatments and didn’t know how many more Christmases I would be around for – desperately hop-ing the lights would bring back that special Christmas feeling.

It didn’t.So last year I bought

a Santa Claus outfit for a visit to BC Cancer Agency’s Fraser Valley Centre – where I was treated and where I have been volunteer-ing every week for the past 16 months – at Surrey Memorial Hospital.

As I made my way through the various clinics, patients’ eyes would light up with excitement. I was hear-ing voices from all sides – things like: “Hi Santa!” and “Merry Christmas, Santa” and “Hey Santa, can we get a picture of you with us?”

Within five minutes that special feeling returned, and I was a kid again.

I didn’t rush home and decorate the house with lights, though. In fact, within hours of leaving the centre I lost the feeling, which made me really sad.

So, on the morning of Christmas Eve, I decided to get dressed as Santa Claus again, and return to the can-cer centre.

As soon as I walked into the lobby, a woman ran up to me, pleading, “Oh Santa, could I get a picture with you and my

mom?” I said, “Sure – ho, ho ho!”

The mother slowly walked up to me. She

was in her patient gown and was wear-ing a Christmas hat. I gave her a hug and posed for the picture, when her daughter suddenly said, “Mom, why are you crying?”

I squeezed her closer and she stared up at me, with tears rolling down her cheek: “Because I never thought I would ever meet Santa Claus!”

I kissed her on the cheek and whispered,

“I will always be with you.”

I toured the can-cer centre and then walked down the hall to the hospital and took the elevator up to 51 North – the oncol-ogy floor. I had been a patient there several times during my can-cer treatments, when I was at my lowest point.

I walked into each patient’s room and wished them all a happy holiday.

On my way back to the elevator, I noticed a ‘Palliative Care’ sign over the entrance to another wing, where the very sick and/or terminally ill patients are.

I walked into the

ward and all of the medical staff were surprised to see Santa. After posing for several photos, I asked if it would be OK to say hello to the patients. They replied in unison:“Of course you can – you’re Santa Claus!”

I made my way around the ward, entering each of the rooms and holding the hand of each of the patients. I didn’t know what to say, but what suddenly burst out of my mouth was “I know that you’ve always believed in me and I just wanted to drop by to say hello.”

One patient – an older man wearing a

Christmas hat – said he had awoken that morning excited with the hope that maybe a friend or family mem-ber might drop by for a visit.

But none had… until Santa Claus.

He held my hand for the longest time and just stared at me. He then muttered, “Thank you, Santa. Merry Christmas.”

I turned to leave his room – I didn’t want him to see me cry.

After all, he believed in Santa Claus.

And now, so do I.

Jennifer Kemp was 16 years old the first time she helped out at the Peewee Jamboree hockey tournament. A spectator up to then, her dad talked her into volunteering and plunked her in the time-keeper’s box.

From six in the morn-ing to six at night, the teenager sat shivering in her little spot, run-ning the clock whilst jot-ting down goals, assists and penalties.

Traumatic stuff, sure-ly.

“I definitely messed it up, and my penmanship was pretty sloppy back then,” she laughed.

Jennifer made it through that first year, and inexplicably was back for the next. And the next. And the next. This week, she’ll be back in ‘her office’ for a 14th year as C h i l l i w a c k ’ s flagship tourna-ment celebrates its 55th year.

“These little kids are out there playing their hearts out, and in their eyes they’re going for the Stanley Cup,” Jennifer grins, when asked why she keeps coming back. “The stands are packed with parents and grand-parents, aunts and uncles. You see their faces when they look at the crowd, and when they score a goal, they

have the biggest smiles on their face.”

There may be no family with deeper ties to the Jamboree than Jennifer’s Kemps.

Her grandpa did her job in the early 1970s, sometimes sliding over to keep order in the penalty box.

Her grandma served food at Evergreen Hall, dishing up three meals a day to anyone involved in the tourney — back in the days when the local army base sup-plied the chow and visit-ing teams slept in the Evergreen Hall gym.

Jennifer’s dad, Doug, got involved in the early to mid 1970s, first as a coach and later as an official.

He helped out with his little brother’s pee-wee B team, but his true calling was as a referee. Forty-three years ago, he put on the striped jersey, grabbed a whis-tle and skated onto the ice at the Chilliwack Coliseum.

He’s been around long enough now to be supervising a third generation of Jamboree players.

Doug’s son and Jennifer’s brother,

Jason, played in the Jamboree in 1994 and 1995. In one of those years his team made it to the tournament final before falling in heartbreak-ing fashion to a team from Hope.

“I remember being really young and going to the arena to

watch the games that my dad was reffing,” Jason said. “Then, hav-ing a chance to play in it a few years later was special.”

When he was fin-ished playing, Jason followed in his father’s

skate-steps, becoming a referee when he was 20 years old. He’s ref-fed the Jamboree many times since, and view-ing it through adult eyes has made it no less special.

“ W h a t ’ s funny is that I’m a teacher, and a lot of the play-ers have been my students,” he chuckled. “When I send them to the penalty box, I hear about it Monday. And now, I am find myself reffing along-side a lot of the kids I taught.”

Jason has a son now, two-year-old Tyler.

The kid’s expressed a love for hockey, and is on track to be the next Kemp to skate in the

Boxing Week tourney. Collectively, the

Kemps have seen it all with the Peewee Jamboree.

“You used to have all the good teams from the Lower Mainland, the Burnaby and North Shore Winter Clubs and teams like that,” Doug said, fondly remembering the Peewee Jamboree’s hey-day. “The tour-nament ran like clock-work, and

for a small community, everyone got involved. It was a real close-knit kind of thing, and a big thing to be at the Peewee Jamboree.”

Gradually, that hey-day fell away, replaced by a two-decade decline.

But now, the Kemps believe they are wit-nessing the Jamboree’s resurgence.

Last year’s tourna-ment had one of the biggest fields in recent memory, to the point where Doug had to come out of ‘retirement’ due to a referee shortage.

A small army of volunteers seems intent on restoring the Jamboree to its former glory.

“You have to take your hat off to the new committee who’ve gotten it back to this level,” Doug said. “There were over 100 games last year. When Jason played, they were lucky to have 50. They’ve gotten the

Jamboree back to being something you want to see.”

Having it at this time of year has always made the tournament extra

special. The Kemps

make a point of keeping their schedules clear, making the Jamboree a part of their holiday experience.

“All of the kids have their new sticks that they just got for Christmas and they’re going

to score 10 goals with those sticks,” Jennifer laughed. “The older kids are trying some of the moves they see on TV with the World Juniors. It’s just such a wonderful Christmas tradition.”

● This year’s tourna-ment runs from Dec. 27 to 30, with 40 teams and 675 youths partici-pating.

All four ice sheets at Twin Rinks and Prospera Centre will be used.

Teams are com-ing from the Lower Mainland, Interior, Vancouver Island and United States.

Holden finds hockey home

A popular former Chilliwack Bruin is trying to cement big-league employment with the National Hockey League’s Colorado Avalanche.

Nick Holden, who captained the since-departed Western Hockey League fran-chise during the 2007-08 season, has made it into 13 games with the Avs this year.

He’s contributed too.The Alberta native

has five points.His first NHL

goal came Nov. 10 as his team hosted the Washington Capitals. His tally late in the sec-ond period ended up the game winner in a 4-1 Avs victory.

His second came Dec. 5 with his team visiting the Edmonton Oilers.

Playing against his hometown team (St. Alberta is a suburb of Edmonton), the 26-year-old D-man had the first Avalanche goal in an 8-2 loss.

Holden is in his first year in the Colorado organization after bouncing around the Columbus Blue Jackets system.

He split parts of the last six years between the Blue Jackets and American Hockey League (Syracuse Crunch and Springfield Falcons).

Chilliwack’s Spartan Swim Club hosted the Spartan Santa Swim Meet at the Chilliwack Leisure Landing Centre Dec. 14-15, welcoming 210 out-of-town swim-mers.

Thirty Spartans par-ticipated.

Calvin Dumont-Belanger excelled in the 10-and-under boys’ division, winning five races. He placed first in the 400 and 800 metre freestyles, 200m back-stroke and fly and 400m individual medley.

E l e v e n - y e a r - o l d Sean Deacon was just as dominant, winning seven races. Deacon took top spot in the 50, 100, 200 and 800m free-styles, 100 and 200m backstrokes and 200m fly. In the same divi-sion, Myles Wheeler finished first in the 400 and 1500m freestyles, 100m breaststroke and 400m IM.

Anton Stoeckly was third in the 200m freestyle and Logan Sparkes was third in the 100m fly.

Wyatt Hine (12-13 year old boys) had five firsts in the 100 and 200m breaststrokes, 100m fly, 200m IM and 800m freestyle. Lucas Santangelo was third in the 800m freestyle and 400m IM.

Kara Wismer (12-13 year old girls) placed second in the 200m backstroke, adding thirds in the 100 and 200m breaststrokes and 100m backstroke.

Jean Leslie won the 100m and 200m back-strokes.

Anna Dumont-Belanger was second in the 200m fly and third in the 400m IM and 800m freestyle.

In the 14-and-over boys division, Carson Loeppky won the 50, 100 and 1500m free-styles, 100 and 200m breaststrokes, 100m fly and 200m IM.

Aidan Braun was first in the 800m freestyle and second in the 200m backstroke.

Kila Hine (14-and-over girls) was third in the 200m fly.

Brooke Kienas was second in the 50m free-style.

Nadia Strelioff won the 100m breaststroke and 400m IM.

Sydney Torok fin-ished third in the 200, 400 and 800m free-styles.

Jane passed away in Chili-wack, BC on December 13, 2013. Jane was born in Po-land in 1924 to Michael and Marjanny Fryza and moved to Manitoba, Canada with her family when she was a child. The family farmed in the Monominto area outside of Winnipeg. Jane married Wal-ter Mayer in 1943 and they had eight children together. They worked hard on their dairy farm in Anola, Manitoba for many years and moved to Chilliwack in 1977 when Wal-ter retired. Walter passed away in 1980. Jane is survived by her chil-dren, James, Frances, Gladys, Don, Mike, Patricia, Kathy and Robert; many grandchildren and great grandchildren. Jane had a zest for life, an en-gaging smile and a welcome embrace for everyone who came to her home. Jane loved gardening, cooking cabbage rolls and perogies, knitting mit-tens and blankets, roller skat-ing and dancing in her young-er years. She had unshakeable faith in the Bible’s promise of a resurrec-tion to life here on earth and she enjoyed sharing this hope with others. Special thanks to Dr. Gupta and the fabulous nursing staff in Chilliwack hos-pital for the compassionate care they gave to our mom, Jane. A memorial service to be held at the Kingdom Hall of Jeho-vah’s Witnesses, 45660 Wat-son Road, Chilliwack on Satur-day December 28, 2013 at 1:00pm. A tea will follow at the Riding Club Hall on Spadi-na Avenue.
