Located in Chicago’s historic Stockyards, Chicago Meat Authority, Inc. is a forward thinking processor of value added beef and pork items with a strong focus on selling the HRI market, meat purveyors, and multi unit regional and national chains up to and including the big box stores. CMA also specializes in custom cuts for further processors including but not limited to grinding operations, deli manufacturers, and the prepared entrée market. CMA operates out of two facilities in a campus environment encompassing 80,000 square feet.

General Overview and HistoryLocated in Chicago’s historic Stockyards, Chicago Meat Authority, Inc. is a full line

processor of beef, pork, and veal for both food service and further processors. Cutting everything from steaks to chops to a full line of portion-controlled meats, CMA offers a broad line of both stock and custom products. CMA opened its doors on January 22, 1990 and in that fi rst year, the company transacted $6 million in sales out of a single 10,000 square foot facility. Now, in our

20th year, we will exceed $90 million in sales while operating out of two facilities in a campus environment encompassing our 80,000 square feet.

Facility Information • 80,000 Square Feet in two separate USDA facilities. • In 1990, the CMA plant was 10,000 square feet. Key expansion projects were implemented in 1991, 1994, 1998, 2004, 2006 and 2008. • Weekly capacity exceeds 3 million pounds.

Quality Assurance Quality Assurance begins at CMA from the moment raw material enters the facility and continues

through the entire production process until shipping. We use a state-of-the-art lab, on-site research and development, line inspectors and a team of full-time, experienced quality control professionals.

The extensive measures taken by CMA to be the cleanest and safest in the industry were recently recognized by the American Institute of Baking with a “Superior” rating in our annual audit.
