Numerous factors contributed to thesalvation of the Jewish people fromHaman's decree, not least amongst

them Mordechai’s rousing of the Jews to re-pentance and Esther's efforts on their behalf.Yet the name of the festival - the one wordchosen to express its essence - refers to aseemingly minor detail: the fact that Hamanselected the date of his proposed annihilationof the Jews by casting lots (pur is Persian for"lot"). Obviously, the significance of Haman'slots lies at the very heart ofwhat Purim is all about.

Why did Haman cast lots?Because he was attemptingto break what, to his mind,was a "vicious cycle" thathad been plaguing him andhis ilk since the appearanceof the Jewish nation athousand years earlier.Many great and powerfulmen, from Pharaoh toNebuchadnezzar - not tomention Haman's own an-cestors, the Amalekites -had tried to destroy thesepeople. Granted, the Jewshave a great and powerfulG-d, but they also have this inane habit of an-gering Him with their transgressions. All oneneeds to do, it would seem, is wait for such anopportune moment. But always, at the verylast minute, the Jews repent and, time andagain, their G-d is reconciled with them andsaves them.

Haman knew that the Jews had sinned yetagain by worshipping Nebuchadnezzar's idoland partaking of Achashverosh's feast; butwho knows how long their estrangement fromG-d will last this time?

As long as our plans hinge upon the virtueor iniquity of Israel, reasoned Haman, we'lljust have a repeat of the same old scenario. Amore basic approach is called for. Can it bethat G-d really cares about one people morethan another? Can it be that He is trulypleased by "good" deeds and angered by"bad" ones? Surely G-d is beyond all that.There might be a level of reality on whichgoodness is rewarded and evil is punished, buton a higher plane, these things are obviously

meaningless. On that level, atruly infinite G-d has noconcern with what goes onin the material world, and theprime minister of the might-iest empire on earth can dowhat he chooses to a small,dispersed minority.

So Haman cast lots, hopingto "connect" to that level ofreality that transcends thelaws of good and evil - tothat level of reality on which,he believed, everything is upfor grabs, as free of anymoral rules as a throw ofdice.

What Haman failed to re-alize was that the people of Israel are G-d'schosen people - that even on the level of di-vine "choice," which transcends all logical cri-teria, G-d desires them and protects them. Itis true that G-d, in essence, is beyond it all;but this very G-d chose - for no other reasonthan such was His desire - to take the peopleof Israel as His own.

The Jew always knows this in the deepestpart of his soul, even if his external behaviormay, at times, run awry of this realization.This, ultimately, is the reason why we alwaysreturn to G-d, and why G-d always forgivesus in the end.

This, ultimately, is the very essence of themiracle of Purim, and the very essence of themiracle called "the people of Israel."•

Directions

Ingredients• 3 eggs• 1 cup granulated sugar• 3/4 cup vegetable oil• 2 1/2 teaspoons vanilla extract• 1/2 cup orange juice• 5 1/2 cups all-purpose flour• 1 tablespoon baking powder• 1 cup fruit preserves, any flavor

2. In a large bowl, beat the eggs andsugar until lightly and fluffy. Stir in theoil, vanilla and orange juice. Combinethe flour and baking powder; stir intothe batter to form a stiff dough. Ifdough is not stiff enough to roll out, stirin more flour. On a lightly floured sur-face, roll dough out to 1/4 inch inthickness. Cut into circles using a cookiecutter or the rim of a drinking glass.Place cookies 2 inches apart onto theprepared cookie sheets. Spoon about2 teaspoons of preserves into the cen-ter of each one. Pinch the edges toform three corners.

3. Bake for 12 to 15 minutes inthe preheated oven, or until lightlybrowned. Allow cookies to coolfor 1 minute on the cookie sheetbefore removing to wire racks to

cool completely.

1. Preheat oven to 3500.Grease cookie sheets.

Tartaric Acid / Cream of Tartar

Q. I read that tartaric acid is made fromwine or grape juice. Does that mean

that kosher tartaric acid is made from kosherwine?

A. Shulchan Aruch YD 123:16 rules that thedeposits which collect on the inside walls of

barrels used for non-kosher wine are permittedif those deposits dried on the barrel-wall for 12months. The reason for that leniency is thatafter the deposits dry for that long they aretreated like “dirt” (non-food) and are permittedeven though the source of those deposits isnon-kosher wine. [This halacha does not applyto all issurim.] It is these deposits which areused to produce tartaric acid and cream of tar-tar (see Darchei Teshuvah 123:53), and they aretherefore kosher even when produced fromnon-kosher wine.Nowadays, these materials are not made from12-month old deposits, but rather from grape-based items which have been mechanically driedover the course of a few hours. Some rule thatthe leniency only applies to the exact case dis-cussed in Shulchan Aruch and therefore do notconsider mechanically-dried tartaric acid to bekosher unless it is made from kosher wine.However, the cRc and most American Hashga-chos follow the lenient approach which arguesthat the product is kosher as long as the me-chanical drying mimics the (moisture-reducingqualities of the) 12-month air-drying.

Brandy (non-kosher) in dough

Q. Someone mixed non-kosher brandy intodough. Is it batel b’shishah or b’shishim?

A. Brandy is a distilled product made frompure wine and typically it would not have

any other ingredients of significance. [Distilla-tion is a process which uses heat to concentrate

alcoholic beverages via separating the (desirable)alcohol from the (less-desirable) water.] The primary reason why a brandy would be notkosher is because it is stam yayin (wine touchedby a non-Jew), and the bitul/nullification ofstam yayin has a unique halacha. If stam yayinwas mixed into a beverage (other than wine) it isbatel b’shishah (batel if diluted in 6 times its vol-ume) and if was mixed into a solid food then itrequires the standard bitul b’shishim. [For moreon this see Shulchan Aruch YD 134:2 & 5, Taz114:4, Nekudos HaKesef ad loc., and IggerosMoshe YD 1:62.] Accordingly, in this situation, the dough is onlypermitted if it contained 60 times the volumeof the brandy.

Broccoli and Cauliflower

Q. I was wondering what the difference isbetween broccoli and cauliflower; why

when it comes to broccoli do your guidelinessay that it’s close to impossible to check andfor cauliflower you provide directions?

A. We have found that bugs often crawl intothe florets of broccoli, and that it very dif-

ficult and tedious for people to properly checkthrough the tiny spaces between the parts of thefloret. Accordingly, we do not recommend thatconsumers attempt to clean or check broccoli,and we do not allow cRc certified facilities to usefresh broccoli. [Frozen broccoli with properkosher certification is acceptable for use.]In contrast, our experience is that cauliflowerflorets are packed together so tightly that bugsare almost never found within the floret, andthey are only found in the large and smallbranches that support the floret. Therefore thatarea does not need checking and we were able towrite a procedure for washing and checking therest of the food.
