Serve pancakes with chocolate sauce and sliced fresh or poached cherries. For a treat, dip cherries in melted dark chocolate. Refrigerate until firm. Ingredients Batter 60g flour ½ tsp baking powder 3 eggs 60g sugar 300ml milk or cream ½ tsp vanilla extract Other 1 tbsp butter, softened, for greasing 1 tbsp caster sugar 300g cherries, stoned if you prefer Icing sugar, for dusting Method Preheat the oven to 1800C. Mix all the batter ingredients with a pinch of salt in a blender or food processor until totally smooth, then set aside for 20–30 minutes. Meanwhile, grease a 25cm round baking dish with the softened butter, then sprinkle over the sugar. Scatter cherries over the base of the dish. Pour over the batter until the cherries are just covered. Place in oven to bake for about 30–35 minutes, or until puffy and golden. Dust the clafoutis with icing sugar and serve lukewarm with cream or quality vanilla icecream. Storing Cherries are picked ripe and sweet from the tree, they do not continue to ripen once they are picked. Keep them cool to keep them fresh – so put that bowl of cherries in the fridge! Store dry and loosely packed in a closed container in the fridge until ready to serve (0-4 degrees is best). Leave the stems on to maintain freshness. To serve – rinse under cold water, drain and enjoy. Remove stones for young children, or for cooking, using a cherry/olive stoner. Poach cherries in red wine with a little sugar and spices or orange rind and serve with vanilla ice-cream.

Serve pancakes with chocolate sauce and sliced fresh or poached cherries.

For a treat, dip cherries in melted dark chocolate. Refrigerate until firm.

MethodPreheat the oven to 1800C. Mix all the batter ingredients with a pinch of salt in a blender or food processor until totally smooth, then set aside for 20–30 minutes.Meanwhile, grease a 25cm round baking dish with the softened butter, then sprinkle over the sugar.
