Preparation time: 10 mins | Baking time: 13 – 17 minutes

Category: Cookies

Ingredients:

Wheat flour – 1 cup Custard Powder – 1/4 cup (I used vanilla flavor) Light Brown sugar – 1/3 cup White sugar – 2 tbsp Baking Soda – 1/4 tsp Baking powder – 1/2 tsp Butter – 1/3 cup melted in room temperature Milk – 2 tbsp Vanilla essence – 1/4 tsp

Method: Preheat the oven to 350 degree F and place the parchement paper/ butter paper/ Aluminium foil on the cookie tray and grease the cooking tray with cooking spray.

Seive the flour, baking soda, baking powder and salt and transfer them into a bowl. Add brown sugar, white sugar and custard powder and mix well. Add

butter to the dry ingredients and make crumble.

Custard cookies

Add 2 tbsp of milk and make a soft dough. Make small balls and in a clean surface, press each ball lightly and bake the cookies for about 13 – 17 minutes or until cookies are lightly gold brown. Cool them and enjoy.

Notes: Can use cookie cutter for desired shape.

I prefer my cookies on the sweeter side, so adjust sugar according to your taste.

Cookies appear chewy initially but they became crisp after they are cooled completely.

Add extract according to the flavour of custard powder. If you are using butterscotch custard use extracts accordingly.

I used both brown sugar and white sugar, instead white sugar can be fully used.

All purpose flour/maida can be used instead of wheat flour.

Oil can be used instead of butter.

Cocoa powder can be used if you like chocolate flavour.

Who will know it better than Carnatic vocalist Shubhashri Ramachandran that taking a legacy forward at a young age is an uphill task? While Shubhashri, the daughter of Sangita Kalanidhi and Padma Bhushan Trissur Ramachandran and Kalaimamani Charumathi concedes that she can’t escape comparisons, she also says that it comes with one huge advantage. “They have set high standards for me. Otherwise, I wouldn’t be pushing myself so much,” she says.

With a line-up of kutcheris in the ongoing music festival across sabhas, Shubhashri is, however, keen to make a mark of her own. Training under her parents and the legendary D K Pattamal, Shubhashri also trained in Hindustani music under veteran vocalist Meera Savoor.

Performing from the age of 14 and at the Margazhi festival from the age of 16, Shubhashri calls the music festival the most important season for an artiste. Part of the GNB-MLV style of music, Shubhashri has chosen a few ragas that are rarely heard in the classical music circuit. “I have chosen ones like Andolika, Malavi and Khamas. Apart from ashtapathis, along with compositions by Purandaradasa and Muthuswami Dikshitar, I am also performing bhajans, thumris and abhangs. It is purely classical and I am not making a major portion of it hindustani. Rasikas still want a complete carnatic music concert,” she says.

The vocalist, who is in the sub-singer category of artistes, adds that though the space has increased for young artistes like her, there is a fall in the number of audiences as well. “I have grown through the years as an artiste. The space for artistes has definitely increased, but with that, the number of rasikas has come down. Earlier, sabhas were restricted to Mylapore, now it has gone as far as Nanganallur and Chrompet,” she adds.

Highly influenced by the music of M L Vasanthakumari, GNB, Semmangudi Srinivasa Iyer, U Srinivas and P Unnikrishnan, Shubhashri says that she is in no hurry to reach stardom. “It is all a matter of time. You never know which artiste will click. Ten years from now, I will know where I am,” she adds.

When we study about a country in social studies, we should learn about the culture and heritage of the people. In general , children study lessons taught by social studies teacher, for obtaining marks in that subject. They ought to learn good things while studying about a country. I read an article about DENMARK, a Scandinavian nation. It has been rated as “The happiest country” in the world.

Denmark, a country of Northern Europe has Sweden and Norway as its overseas neighbours. It has its ties with its neighbours in its culture and history. It is a proficient sea faring nation. Denmark is cloaked in total darkness during winter. Unlike the majority of our country men who indulge in violence, riots, strikes, agitations, bandhs etc; Danes, the people of Denmark are hard working people. Their architecture, art, music, movies, theatre, ballet and opera are internationally known well. They are peace loving people. In our country,

peace lovers get frustrated and dissatisfied because of undue advantage taken by the regional parties and cast leaders provoking the society against the government.

The unique features of Indian culture are getting lost by unworthy people who induce chaotic conditions. In Denmark, the people enjoy peaceful life even though they have been adopting modern life style. They are proud of their rich culture and are keen on maintaining their culture and heritage. A self imposed discipline make them realise their responsibilities. Ethical codes of candidates are taken into account, while electing their representatives. Good candidates are elected to govern. Their elected government provides better living conditions for its citizens. Our political party leaders and their cadres should learn to preserve dignity of their political life from the Danish culture.

Our politicians should learn that ‘money can’t buy happiness’. Danes enjoy

happiness because they have a good family life, work life and social life. The smooth working of the Indian society and its progress get spoiled by bad elements of caste leaders and politicians. They want to keep people in a state of ignorance, whenever the ruling government brings good policies. The people of Denmark trust their government. The people respect the laws. In India, the people have no respect for

laws. This we see daily even at a busy traffic signal kept at the junction of the roads. By bribing the authorities, the culprits escape punishments in our country which we don’t see in Denmark.

Their moral code and discipline are to be appreciated. Their educational system is to be lauded for their moral code and discipline. The Danish state provides education of high standard to all. Children

are taught English, German and French at schools. They acquire good knowledge and language skills at school level.
