PICKLED RED ONIONS½ red onion, thinly sliced½ c. rice vinegarPinch of salt and a pinch of sugar CILANTRO CHIMICHURRI1 packed cup each cilantro and parsley1/4 cup each water and olive oil1/4 c. cashews or sunflower seeds1 clove garlic1/2 tsp. saltjuice of 2 limes
RECIPE BOX
Pickled Red Onions: Combine the ingredients for the pickled onions in a jar and add water to cover, if needed. Cover and place in the fridge while you prepare the rest of the meal.Chimichurri: Hit up the food processor or blender and pulse all the ingredients together until smooth. Place in fridge until ready to serve.Brussels Sprouts: Saute the sprouts and seasoning with a little olive oil and salt until softened.Corn: Saute the corn and jalapeño with some salt, olive oil, and lime juice. Let the corn sit in the hot pan, undisturbed, for a few minutes to get that roasty, charred thing going on.
Seasoned brussels sprouts, tangy onions, crumbled feta… you can’t go wrong when you make these tacos for dinner! Prepare them using the steps below, assemble, then enjoy!

THE DECC
As you all know, there are times throughout the year when it gets pretty crazy around the DECC. The busyness of back-to-back events, concerts, and conferences can be stressful if it feels like there is hardly time to breath. We often get compliments on the way our staff takes care of our guests and that is wonderful- great job! While it's important to continue taking care of our guests...it's equally important to take care of ourselves, too- especially during these busy times. It's vital to find a way to recharge each day. Find something simple that you enjoy: a hot bath, a nature walk, sipping a hot cup of coffee as you watch the sun come up, or even simply closing your eyes for 10 minutes. Whatever it is, take the time to do it. Take care of yourself first. Your work here will be more enjoyable when you feel refreshed and, in turn, it will be easier to continue making our guests feel welcome, even during these busy weeks.

D WNLOADWith the weather finally getting nice, it is also finally time to start tackling those yard projects. Before you head into the yard, here are some yard work safety tips that can help you avoid the ER: • Know your equipment – Before operating any equip-ment, be sure to read the manual and all the safety information. • Practice ladder safety – Make sure your ladder is set firmly on a level surface. Never set a ladder on top of boxes or other objects to reach high areas. If you are setting up in front of a door, lock or barricade the door, and let those around you know so know one tries to go through. Never stand on the top rung.
• Watch your children – Every year thousands of children are hurt by lawn-care tools. Keep small children inside while you are working and never allow anyone under 12 to operate a push mower, or under 16 to operate a riding mower. • Protect your body – Wear protective gear! Lawnmow-ers and weed whackers can hit sticks, rocks and other items, turning them into flying projectiles. Wear long pants to protect your legs from flying objects and wear non-slip, closed-toe shoes. Safety glasses or shatter-re-sistant sunglasses, as well as earplugs, are also great ideas! • Call before you dig – If you are doing any work that requires digging, call 811. A locator will come out for free and mark underground utility lines. • Be smart – Never operate lawn machinery or heavy garden equipment while under the influence of drugs or alcohol. The snow has finally melted (almost). Spring is a great time as the Earth around us greens up, where we can green up our own lives as well. Here are some tips on how your spring, and the rest of your year, can be even greener! 1. Declutter your life. Get rid of STUFF!Keep: Only keep items you have used in the past year, the rest goes in the “to go” pile. Hold on to essentials: don’t get rid of something you use, just because it is old.Donate: Clothes or household items that you upgraded or replaced and never got rid of the older model. Keep items out of landfills by asking family and friends if they need anything, or bring them to places like Saver’s or Goodwill, for a tax credit or discount on future purchases.Recycle or Dispose: Old magazines, junk mail, extra books should get recycled. A family of four uses on average 1.25 tons of paper each year. Recycling 1 ton of paper saves 3.3 cubic yards of landfill space and can power the average home for six months. Be aware when disposing of chemicals, these should be brought to the WLSDD facility on 27th Ave W. Before disposing of anything, try to find a creative way to reuse the item!2. Spring clean the natural way! Avoid harsh chemical clean-ers. Find green or natural cleaners at the store, or save money and make your own. In a spray bottle combine 2 c. water, ¼ c. white vinegar, ¼ tsp. tea tree oil, and ¼ tsp. lavender oil. For countertops, floors, and appliances, mix one part water and one part vinegar.3. Go for an energy upgrade. Replace your incandescent light bulbs with CFLs or even better- LEDs. The price of LEDs has really dropped and there are many very affordable options out there. Making the switch can save you over $100/year on your electric bill.4. Wash the salt off your car. While it might seem more earth friendly to wash your car at home, this can use double to quadruple the water that a commercial car wash uses!5. Start your compost! Food waste, along with yard clippings, makes up 24% of our nation’s solid waste. This could all be composted to turn into beneficial soil for gardens at your home. Don’t have a yard to compost in? Food waste can be dropped off at WLSSD location on E. Superior St, Grande Ave, and 8th St to be turned into compost! Source: earth911.com

Cindy has spent the last 5 years working in our Guest Services Department. Her favorite thing about the DECC is the people she works with. Cindy said she has never worked anywhere that has such teamwork like we do here! She was nominated for her “great attitude” and she says she is proud that it shows. Cindy always tries to have a smile for everyone as that is what it means to be “Midwest Nice”. Some of her favorite things in life? Being a mom and a grandma! Keep up the good work for a couple more weeks and then we can all take a little break around Memorial Day. May always seems to have a very large variety of events. On Sunday, June 9th we will be hosting a Movie Day in Symphony Hall as our June Wellness Event! This event will be open to all DECC employees and their families.

The Wellness Committee will select the final choices from the employee suggestion list and then we'll send a survey for employees to have the final vote. In an article from the New York Times on global warming, Duluth, MN is listed as a city that promises cool relief. Jesse Keenan, a lecturer at Harvard University, receives the question “where to move to be safe from climate change?” He suggests climate-proof Duluth! A climatologist at the MN DNR, Kenneth Blumenfeld, says “Nowhere in the world is immune from climate change, including Duluth. We’re getting more precipi-tation in bigger amounts than we ever really observed. But when you stand back and look around, it’s almost like, we’ve got it good. Climate projections suggest that, because of geographic factors, the region around Duluth, the Great Lakes area, will be one of the few places in America where the effects of climate change may be more easily managed.” So let’s give thanks for our cool temperatures, lower wildfire risk, being inland enough that we’re protected from the effects of sea level rise, and mostly... the fresh, voluminous water that Lake Superior provides.
HYDRATION CHALLENGE STARTS MAY 1ST!Our UMD Intern, Mikaela, is running a hydration challenge to encourage employees to drink their recommended eight 8-oz glass-es of water each day. The theme is “Drain the Tank” and DECC employees will work together to stay hydrated. The more people that participate, the more water can be “drained” from the tank....which means we will be drawing more winners for tickets to the Great Lakes Aquarium!
