APRIL 2018 Chats News In May this year my daughter got married and a week later I received pictures of the places she and her new husband had been holidaying at. There were videos of orangutans swinging from branch to branch in Borneo, pictures of stunning views of the Kuala Lumpur cityscape from the Revolving Restaurant Atmosphere 360 which is housed in the 7 th tallest tower in the world and many more. What sent me drooling however was this picture of my new son-in-law, Alex (see below) with a smug look on his face; and who could blame him? He was about to tuck into one of my favourite foods – the Dosa! Growing up in Malaysia with parents originating from Kerala (land of coconuts) in South India, whatever my mum cooked, it was always delightfully aromatic, creamy and full of spices. Dosa was a breakfast food and we would have it with savoury coconut chutney. In the evening at tea-time the same Dosa batter would be used to create a mouth-watering crepe with a filling of fresh coconut roasted in ghee and mixed with palm sugar. For dinner at night I would have a plain Dosa with chicken curry. It is such a versatile food. You can have a paper dosa, a masala dosa, an egg dosa and so on. For those of you who may be interested here is a recipe you may like to try: 1 x cup urad dal –also known as skinless black gram 2 x cups raw rice 1 teasp fenugreek seeds ¼ x cup cooked rice. Wash dal, rice and fenugreek seeds together until the water runs clear. Soak in water for at least 8hours. Add the cooked rice and blend in an electric blender until you get a smooth batter. Keep overnight. In the morning the batter would have fermented and increased to double its size. Add salt to the mixture and cook over a hot frying pan or griddle as you would a pancake You can use butter or ghee to oil the pan. The pan must be on medium to high heat or else your batter might stick to the pan. Good luck and happy cooking. ~ Merry The Chats Office Number: 6282 1555 For weekend and aſterhours transport emergencies call 0447 893 081 (please note that this phone is only manned when an acvity is running) Chats Office: Level 5, Quay Building, 31 Cambridge Rd, Bellerive AUGUST 2018 “When spring came, even the false spring, there were no problems except where to be happiest.” ~ Ernest Hemmingway ~
