    Do not be intimidated for

    any reason. That is rule number

    one (and there are very few real

    rules after that). For the most

    part, going wine tasting is aboutthe easiest thing in the world,

    especially here in California

    where wineries and tasting

    rooms abound. You can find

    wineries specializing in red

    wines of all types, those that are

    famous for their white wines

    and others who pour sparkling wine. It is a matter of

    doing a little research and planning your day. Most tasting

    rooms open around 10 a.m. and close between 4:30 and6 p.m.

    Before you start off pack a few essentials:Water

    (plenty of water) and something to snack on crackers or

    a baguette. Many wineries have picnic areas and there are

    plenty of delis and bakeries that can make up a lunch for

    you, or make your own. Which brings us to eating and

    drinking, the kind that doesnt directly involve wine.Be sure to nibble during the day and make sure you

    make time for lunch. Two tips: drink at least twice as

    much water as you do wine, and remember that you

    dont have to drink everything poured into your glass.

    There is a reason tasting bars have dump buckets and a

    pitcher of water to wash out your glass.

    That said, here are some tips that have proven to be

    helpful and are designed to help make the sensory

    adventure of wine tasting all the more enjoyable.Dont be afraid to ask questions. Time and time again

    I have heard knowledgeable winery workers say that

    there is no such thing as a stupid question, and they

    mean that.

    You can drink what you want, in the order you want.If you only like reds, say so; if you dont like sweet wines,

    speak up. But the idea of starting with whites, then going

    on to reds and then sweet wines is a good guide.

    Zinfandel is red. I am sure you know that but it never

    hurts to remind everyone.If there is a particular wine you want to try and it is

    not on the list, ask. There might be a bottle around that

    was opened for a trade tasting or by the winemaker. Most

    tasting rooms are happy to pour a little if you show

    enthusiasm.If you plan to take wine home with you, either in the

    car or on a plane, buy a

    cardboard box with Styrofoam

    wine inserts. Fill it during the

    day and this keeps wine from

    rolling around in the trunk.Check out the smaller

    wineries. It is a revelation.

    Take notes on the wines you

    most enjoyed.

    Take advantage of tours

    when the winery offers them, but

    keep in mind that they take

    anywhere from 20 minutes to well over an hour, so one a

    day is plenty.

    Buy wines that you can only find at the winery. Theseoften include smaller (375 ml) bottles of limited

    production Ports or dessert wines. Dont buy a wine you

    can get at a supermarket back home. Youll pay more, and

    besides, whats the point?Look for tasting rooms in towns. Many of these are

    cooperative tasting rooms, where in one place you might

    find wines from a dozen or more small-to-medium

    premium producers. They are scattered throughout the

    area and more are opening all the time.

    Dont give too much thought to ratings and vintages.

    Its like art: if you like it, its a good wine. It is as simple as

    that.Remember that you dont have to do the driving. It

    takes no more than a phone call to rent anything from a

    Town Car or restored classic convertible to stretch limos

    and a 20-passenger bus. All have drivers that will stow

    your wine for you and the local companies know the

    area. As to taking that wine home, ten people sharing one

    of those impossibly long limousines is fine and fun, but if

    you all plan to buy a couple of cases the trunk which is

    no bigger than a normal luxury cars is going to fill upfast and youre going to find yourself filling the interior

    floor with boxes and using cases of Cabernet as footrest.

    Tell the transportation company what you have in

    mind and listen to their advice. They know the territory

    and the people and personalities.Know your limits. If you get close to it let others taste

    and you can listen. It beats ending the day in a blur, and

    if need be calling a taxi is cheaper than the alternative.And if at a seated tasting, dont be afraid to leave a

    gratuity. Its more than worth the five or ten dollars to getwisdom and wine and a great time. BY CHARLES NEAVE

    Silver Horse Winery is located on the winerys estate

    vineyard on the east side of Paso Robles. The vineyard consists

    of 40 acres of Cabernet Sauvignon, Grenache, Malbec, Petit

    Verdot, Syrah and Tempranillo. These six varieties grow

    exceptionally well in the warm, dry climate which is so

    common around the Pleasant Valley Wine Trail. Silver Horse

    crafts small lot wines from this estate vineyard; at times the

    vineyard can produce less than one ton of fruit per acre.

    Winemaker Steve Kroener describes his wines as being,100% food friendly, and with the layered complexity and

    balanced acidity of each bottling, there is no doubt about it.

    The Albarino is perfect for sipping with artisanal cheese and

    charcuterie. The Petite Sirah has become what some might call

    a cult wine and Silver Horse offers a prime example of the

    Rhone variety. Recently, wine critics have take note of Steves

    winemaking and the unique vineyards of the east side of Paso

    Robles. The 2009 Sage, a Bordeaux-style blend of Cabernet

    Sauvignon, Malbec, Merlot and Petit Verdot, was awarded agold medal from the San Francisco Chronicle Wine

    Competion.

    In 2005, the Kroener family built a state of the art winery

    facility and hospitality and event center. The exclusive and

    luxurious tasting room offers samples of Silver Horse wines

    Friday through Sunday from 11 a.m. to 5 p.m. Silver Horse

    In the picturesque northern reaches of Paso Robles Wine

    Country lies a passionate dream-turned-reality. Eight years

    ago, longtime friends and business partners, Ken Warwick

    and Nigel Lythgoe, shared a remarkable bottle of Paso Robles

    Cabernet Sauvignon and chased it down to discover an

    amazing wine community and a landscape that reminded

    them of their childhood home in Northern England. It

    wasnt long before they got excited about the prospect ofowning their own vineyard and making wine.

    In the intervening years, a beautiful villa has sprung up

    on the property and the winery has produced a veritable

    flood of award-winning wines. The carefully-tended

    168-acre vineyard boasts 11 different varietals. The location

    of the vineyard up in the hills of San Miguel is ideal for the

    fruit, says Winemaker, Matt Ortman. The soil isnt very

    deep so the vines have to work hard to produce the fruit.

    The vigor of the vine is controlled naturally by the soils andthe results are exceptional grapes.

    With national distribution established in 42 states and

    several countries, along with a solid foundation of an

    outstanding vineyard, Ken and Nigel are building out their

    production facility and opening up their dream to the world.

    October of 2012 saw the opening of a beautifully-appointed

    tasting room, and 2013 will mark the winerys first vintage

    produced in-house under Matt Ortmans purview.

    is home to the Niner Wine Estates Hospitality Center, which is

    sioned building his estate here. Pinot Noir, Sangiovese and

    When discussing Cabernet Sauvignon in Paso Robles, Chateau

    Margene is often the first producer a local wine connoisseur

    recommends. Since 1997, Michael Mooney and his family have

    carefully crafted luxury Bordeaux blends and varietal specific

    Cabernet Sauvignon. As with most winemakers, Michael credits

    much of his outstanding vintages to his estate vineyard, which is

    located in Creston in the eastern portion of the Templeton Gap.

    The grapes are thoughtfully grown in the most sustainable practicesavailable, and then picked carefully lot by lot in amounts of one

    and a half tons per acre. The wine is then aged for 32 months in

    100% French oak, such patience the Mooneys have! And it pays

    off, these outstanding Bordeaux style wines sell out almost

    immediately upon release. In addition to the original Chateau

    Margene label, the Mooney Family label was started in 2006 with a

    focus on Pinot Noirs from Monterey County and Rhne blends

    from Paso Robles. The grapes for the Pinot Noirs are sourced from

    Pasolivo Olive Oil is nestled among some of Paso Robles most

    exemplary wineries off 46 West. The tasting room is run by a very

    knowledge forward and friendly staff that is there to assist in not

    only tasting their products, but in educating on the oil-making

    process and the numerous health benefits associated with olive oils.

    Tasting is always complimentary and includes the ability to taste a

    variety of spices and salts with their hand-crafted olive oils, which

    are big, bold and exemplify all three positive attributes of fresholive oils: fruitiness, bitterness and pungency.

    The olive oils are created start to finish on the premises under

    organic and sustainable practices that result in very little waste

    products. Eleven different varieties of olives, ranging from Spanish

    to Tuscan, are grown on the 45 acre orchard. All olives are

    hand-picked to prevent bruising and cold-pressed within four

    hours with an Italian Pieralisi Major 2 continuous press, which is

    available to tour upon request. The whole olive is pressed,

    including the pit and skin, and the byproduct after separating off

    the oil is a paste that is used as a natural fertilizer in the orchard.

    The harvest takes place once a year in November/December and

    visitors are welcome to spectate. The oils are then packaged in

    eco-friendly tins designed to maximize the protection of the oils.

    Like so many remarkable wineries on the Central Coast, Michael

    Gill Cellars is a side job for proprietors Michael and Shelley Gill a

    labor of love and creative outlet from their respective professions of

    dentist and financial advisor. They say theyre content to be part-time

    wine producers. This way, says Michael, were not on a treadmill

    where we have to keep production quotas to make ends meet. We can

    take our time and do our very best for the wine.

    The Gills planted vines in Paso Robles fifteen years ago, selling fruitto some of the areas most respected winemakers until 2008, when they

    decided to make their own wines. With the opening of the tasting

    room in 2012, theyve happily had their hands full, with Michael in the

    field or cellar and Shelley on counter sales.

    Visitors to the tasting room will find a complement of Rhne,

    Spanish and Italian-varietal wines, including a Syrah fabled to be the

    darkest in the county, a spicy, floral Viognier and a Tempranillo that

    Michael claims is taking people by storm. In the near future, the Gills

    also hope to offer small lots of varietal Counoise, Zinfandel, Primitivo

    and Tannat.

    While the Michael Gill Cellars tasting room has only been open one

    year, to walk inside is to step back in time. Reminiscent of a French

    hunting chateau, the winery is tastefully appointed with treasures from

    the Gills international travels most notably a collection of

    world-class mounts hunted by Michael himself. The tasting rooms

    distinctive architecture incorporates ancient oak trees, while the patio

    The winerys owner, Robert Hall, had many years of

    experience in the hospitality sector prior to acquiring the Hall

    Ranch in Paso Robles. After planting his vineyards he put all his

    Eos is one of the most popular wine tasting destinations in the Central Coast

    The historic Chamisal property, the first vineyard plantedin the Edna Valley, has been producing wines of distinctivecharacter bold, complex and intriguing since 1973.     Pianetta Winery was established in 1995 when John Pianettaembarked on planting a 68-acre vineyard in Southern MontereyCounty, near San Miguel. Prior to farming the vineyard, John servedas a Fighter Pilot in the Navy followed by a 25-year career as acommercial pilot for American Airlines. John is a 4th generationfarmer and the tradition continues with his daughter Caitlin workingalongside him in all aspects of the winery business. The vineyardconsists of Cabernet Sauvignon and Syrah. The Syrah is split into

    two clones, one French (Noir) and one Australian (Shiraz 01).These two clones give John and Caitlin two distinctly differentflavors to work with.

    Pianettas first vintage released was 2002 with only 370 ofCabernet Sauvignon. Today, Pianetta Winery produces about 3000cases of wine. The current portfolio boasts a number of wines with90+ point ratings and a number of gold medals from tastings andWine Competitions around the country, including the San FranciscoChronicle and the LA International Wine Competition. In 2006, thePianettas opened their first tasting room.

    Pianetta Winerys tasting room is located in the quaint downtown

    area of Paso Robles. While strolling through the park and perusingthe shops, stopping in for a sample of Pianettas wine is always atreat. Guests are welcomed into the warm and inviting tasting room,which offers a flight of five or more Pianetta wines for only $6 (thefee is refunded upon purchase). The tasting room is also host toFirst Saturdays: Wine & the Arts an event which features anoriginal artists reception each first Saturday of the month, from 5 to7 p.m. During festival weekends, guests can participate in blindtastings, food pairings, live music and barrel samples.     Il Cortile Ristorante, just west of City Park at 608 12th Street, offers a

    vibe of laid back sophistication that is fast becoming preferred in Paso

    Robles dining. Theres a sense of local satisfaction that, yes, Paso holds

    its own with the big-city establishments, minus any big-city attitude.

    The vision and partnership of husband and wife, Executive Chef

    Santos MacDonal and Carole MacDonal, has been a recipe for success at

    Il Cortile.

    Carole, who oversees the front of the house, is a veteran producer of

    hit television shows, including The Amazing Race, with experience in

    commercials, film and all aspects of production.

    Honduran-born Chef Santos is well-versed in fine dining and menu

    creation. The Giorgio (Malibu) and Bridge Restaurant (L.A.) alumnus

    faithfully represents rustic Italian fine dining with attention toward inte-

    grating components that naturally complement one another. Handmade

    pasta and sauces are mainstays, with menu offerings in antipasti, primi

    and secondi courses.

    In addition to ingredients imported from Italy, Chef Santos uses pro-

    duce, meats and grains from numerous local growers with whom he has

    cultivated strong relationships. This agricultural palette supplies Chef

    MacDonal with the seasons best and provides guests something new to

    try with beloved specialties, like osso bucco and risotto. Summer primi

    offerings include homemade Pappardelle with Wild Boar, and Spaghetti

    with Black Tiger Prawns in a light tomato sauce with spicy lobster oil.

    Together, Carole and Chef Santos have merged their passion for food

    and wine to make devoted clientele of locals and visitors alike, all within
