The furnishings, lighting, decor and materials have all been carefully considered when designing the Cave hotel; nodding to a world of organic and natural inspirations, tempered with a powerful knack for subtle modern luxury. Stained wood-panelled walls and soft warm lighting lend a feeling of comfort and safety, while faux fur throws and crisp white linens complete the elevated, caveman-chic feel. One of the hotel’s key highlights is its excellent golf course – set in the picturesque Kent countryside, the 6,591- yard course is sure to challenge and delight even the seasoned golfer. So brand-new that it was still under construction in some areas when we visited, this resort holds an ambitious vision for the future. Hoping to offer everything from bespoke golf holidays to executive escapes and large wedding celebrations, the Cave is home to highlights such as a saline hydrotherapy pool and a 12-seater jacuzzi with panoramic views over the green. Kent has been known as “the garden of England” for over 400 years thanks to its rich bounty of food and drink – orchards, strawberry fields, oast houses for drying hops, tender lamb, herb gardens, fresh fish from 350 miles of coastline. It’s no wonder then that a highpoint of our visit was the menu of the Firepit Restaurant. The food was a fusion of earthy local comfort and world cuisine, with simple yet striking and multi-layered flavours drawn from across the county all the way to Far-East Asia. The cauliflower with goats cheese and masala sauce was delicious – and the wonderfully retro dessert Baked Alaska was given a well-deserved new lease of life within the world of modern cuisine. Impressive golf course and spa aside, there’s plenty to see and do in the local area. The seaside is under half an hour away by car, offering up delicious seafood in Whitstable and art gallery chic in Margate. People have been making pilgrimages to Canterbury for the last thousand years, and it’s still worth the trip. Make the 15-minute journey to discover the historic town’s UNESCO-listed cathedral, medieval alleyways and ancient city walls. The staff here are enthusiastic to deliver, ensuring that guests always feel welcome and their comfort is put first. Some are experienced and have worked many years in the hospitality trade, whilst others are new to the industry but share the passion for providing excellence. We are excited to see what this impressive hotel will have to offer once fully complete – it has all the makings of something truly special.
