Marty and Amy An-dersen own and oper-ate a 60 head purebred Angus and commercial cow/calf beef farm in New Glarus, Wiscon-sin. Not only are the Andersen’s dedicated beef farmers, Marty is also employed full-time through Zoetis as one of their cattle nutritionists.
Marty plays a vital role in the beef industry as a nutritionist by help-ing producers formulate diets in a very delicate way that both the animal and the farm will benefit. Marty and his team of nutritionists evaluate what a farm has obtained from the previous year’s harvest, com-bine the commodities and pull together a feeding plan that is most resourceful for everyone involved.
“These animals can turn otherwise useless land that cannot be managed for human food production through crops and convert it into the most valuable protein available. That is pretty incredible” says Amy. Beef cattle are masters of being resourceful. Not only can they utilize land that is otherwise not suitable for crop production, cattle can thrive on other food materials that would otherwise be wasted such as cookie crumbles, granola, kool-aid and skittles from factories who cannot package the product to be sold in stores. These ingredients in addition to a balanced diet of proteins, carbohydrates, vitamins and minerals provide a well-balanced and nutritious diet for cattle.
The Andersen’s have partnered with other beef producers from across the country to ensure their calves are as resourceful as possible. After weaning, their calves will travel to Texas where they will graze on winter wheat fields for a total of three months.
“Not only do the calves really blossom on the nutrient-rich wheat fields, the wheat farmers also harvest a better crop too” says Marty. “The calves fertilize the ground while the calves prosper from the wheat fields. Wheat farmers reap a tremendous crop this way. The wheat farmer, the beef farm and the consumer all benefit from this practice.”
As first generation beef farmers, the Andersen’s have had to overcome many obstacles since their
start in 1988. Through hard work and perseverance, the Andersen’s were able to continue producing high quality beef. Amy explained, “We had to cut ends and sacrifice a lot to be where and what we are doing now. If you are willing to make a few sacrifices for your family and your animals, any interested person can start just like we did.”
Marty has a passion for consumer education as he sat on the Cattlemen’s Beef Board of Directors for 6 years planning promotional and educational materials for consumers across the United States. He has seen too many times the misconceptions and misunderstood aspects of the beef industry first-hand. “If you have a question or concern, ask a farmer, seriously.” Marty explained. “The only way you will find a true answer is if you ask someone who raises cattle for a living. We would be more than happy to answer any of your questions.”

From learning agriculture in Spain to exploring sustainability practices in Costa Rica or working with elephants in Thailand, new opportunities could soon be available to the School of Agriculture students at the University of Wisconsin-Platteville. Dr. Rami Reddy, director of the School of Agriculture, is working towards expanding the number of School of Agriculture students who participate in education abroad programs. He, along with several faculty members, spent the winterim visiting institutions abroad and exploring new partnerships for short-term, faculty-led programs.
According to Reddy, the increasingly globalized economy, which especially impacts the field of agriculture, makes it crucial for students to have international experience. “If you call yourself an ‘aggie’ you must know this global agriculture,” said Reddy. “Studying abroad helps students to broaden outside of their thinking and takes away their preconceived notions. They can see how you can make a living on small-scale farms and sustainability practices – things we can’t do in the classroom.”
Reddy, along with Dr. Donita Cartmill, associate professor of environmental horticulture, and Dr. John Tembei, professor of animal science, visited EARTH University in Costa Rica, a private institution specializing in agriculture programs. The campus sits on more than
8,000 acres and is home to a heavily internationalized faculty and student body, which according to Reddy will benefit UW-Platteville students by exposing them to different cultural experiences.
“The institution focuses on preparing students to be change agents,” said Reddy, adding that the university offers experience in student-managed businesses, entrepreneurship and socially conscious decision making, preparing its students to return to their native countries and affect change. The hands-on experiences the faculty explored during their visit included student-run livestock operations, including cattle, swine and goats; greens and herbs, as well as organic and medicinal plant gardens; bio-gas operations; a hugely profitable organic banana plantation; and a butterfly farm.
Dr. Krista Hardyman and Dr. Pete Lammers, both assistant professors of animal science, explored partnerships in Thailand, including the Elephant Nature Park – a rescue and rehabilitation center in northern Thailand. Their visit was supported by the International Education Engagement Grant, offered through UW-Platteville’s International Programs office.
Initially designed primarily for pre-vet students, this short-term education abroad program would offer unique hands-on experience. The sanctuary houses approximately 75 elephants with varying care

Served on Italian bread, these marinated pork kabobs are tender and juicy. Serve with Herbed Chick Pea Salad and fresh fruit.
2 pounds boneless pork loin roast (cut into 3⁄4-inch cubes)3⁄4 cup cider vinegar3⁄4 cup olive oil4 tablespoons lemon juice1 tablespoon worcestershire sauce1 tablespoon dried oregano2 cloves garlic (minced)2 teaspoons black pepper1 teaspoon salt1⁄2 teaspoon cayenne6 slices Italian bread (thick)
Mix together all ingredients except bread, place in a self-sealing plastic bag and refrigerate 4 to 24 hours.
Remove pork cubes from marinade (discarding remaining marinade); thread pork onto skewers*. Grill over hot coals for 4-5 minutes; turn and grill another 4 minutes. Serve by pulling meat off of skewer onto Italian bread.

Blain’s Farm and Fleet continues their involvement and Gold Level Sponsorship to financially support local FFA Chapters through Home Grown, an initiative developed by Red Brand fence.

Global Ag Trends continued from page 26needs, either because they are newborn or elderly and require
specific dietary needs or they have suffered injuries – many of them foot or leg injuries from logging or landmines. Students will work along side staff at the sanctuary, with two to four students per veterinarian or veterinarian technician, which will allow for individualized, hands-on experience. The site is also home to a dog and cat sanctuary and has a relationship with a nearby dog shelter, the Animal Rescue Kingdom. This gives participating students additional first-hand experience, with opportunities to help with spaying and neutering procedures, de-worming, preventative medicine, grooming and more.
“Students could experience spaying and neutering in a U.S. shelter, but what’s different is they wouldn’t have three veterinarians with 12 students, who are slowing down the pace to actually teach the students,” said Hardyman. “There, the procedure is purposely slowed down so that it is as much for the students’ benefit as it is to help animals in the local community. It is geared towards students having time to absorb everything and ask questions.”
Evenings and weekends during the two-week program will allow students time to explore the culture of Chiang Mai Province – including visiting local temples, a meditation lesson with a local monk, Thai cooking classes, the local night bazaar and more. The program will also offer students a unique perspective on how the local culture – heavily influenced by Buddhist and Hindu religions – influences the animal care practices.
“It’s really great for these students to get out and realize not everyone views things the same way we do in the U.S.,” said Hardyman.
Dr. Kevin Bernhardt and Dr. Annie Kinwa-Muzinga, professors of
agribusiness, visited the Spanish-American Institute of International Education in Seville, Spain to explore an opportunity for short-term, faculty-led programs in agriculture. UW-Platteville has a long-standing partnership with SAIIE, dating back to 1984.
According to Bernhardt, while the curriculum offered in this program would be beneficial to students, the international experience will be of more importance. “Many of our students have never traveled much out of Wisconsin let alone the U.S.,” said Bernhardt. “Many have never been on a plane. Every experience they have – flying across an ocean, customs, getting a passport, meeting people who do not speak their language, foods, traditions, architecture, history, opinions of the U.S. and agriculture – will all be invaluable to them as they head towards the beginning of their own careers. As we often say in agribusiness, there is no industry that is more globally demanded or globally supplied than the product of the agriculture industry.”
The School of Agriculture is preparing proposals for the three new short-term, faculty-led programs. Pending approval, the programs in Spain and Thailand could be offered as early as winterim 2019, and the Costa Rica program would be offered in summer 2019.
“I am thankful that there is tremendous support for increasing our international education efforts from Dr. Wayne Weber, dean of the College of Business, Industry, Life Science and Agriculture,” said Reddy. “We are also building these programs with the support of our institutional partners – EARTH University and SAIIE – and we would like to see them offered on a regular basis.”

The Wisconsin Pork Association Youth Committee recently awarded 23 youth with $50 scholarships to help offset the costs of their upcoming 4-H and FFA swine projects. The Youth Pig Project scholarship program began in 2003 as a way to encourage youth to become involved in the Wisconsin pork industry through projects that offer opportunities to develop life skills and showcase career opportunities.
Those receiving scholarships were: Hannah Blackstock, Glen Flora; Cody Dooley, Ettrick; Kaleb Ellis, Independence; Emma Ginard, Campbellsport; Ryan Mahoney, Suring; Blake & Clint Mitchell, Boscobel; Audrey & Victoria North, Platteville; Sawyer Pederson, Ettrick; Emma Schampers, Ixonia; Cullen Schlewitz, Eau Claire; Amber Seitz, Krakow; Nick Sievert, Sobieski; Gunnar Sperle, Cambridge; Heidi Strey, Osseo; Lance, Levi, and Madison Vosberg, Cuba City; Lily & Rayna Wangler, Watertown; Kathryn Witzel, Columbus; and Elizabeth Zimmerman, Osseo.
The 2018 Youth Pig Project Scholarships were made possible this year by the following sponsors: Dailey Show Hogs, Weyauwega; Giese Show Pigs, Alma Center; Graff Show Pigs, Juneau; Jake’s Pig Palace, Eland; Krebs Farms, Rio; Magolski Farms, New London; Tom Knauer Family, Avalon; West Central WI Show Pig Sale, Whitehall; and Wisconsin Pork Association.
To apply, Wisconsin youth submitted a Pig Project Scholarship request to WPA which addressed the following areas: project goals, simple budget for the project, Youth for the Quality Care of Animals certification date, future goals as they relate to the pork industry, and a paragraph stating why the Wisconsin Pork Association should select them for the Youth Pig Project scholarship.

Basic Country Beef Breakfast Sausage2 cups Basic Country Beef Breakfast Sausage1 cup sliced button mushrooms3⁄4 cup diced onion3 cups fresh baby spinach1⁄2 cup reduced-fat shredded Cheddar cheese1 package (13.8 ounces) refrigerated pizza dough1⁄2 cup jalapeño pepper jelly, warmed (optional) or Cream Cheese “Frosting’’ (optional, recipe below )InstructionsPrepare Basic Country Beef Breakfast Sausage. Set aside 2 cups sausage mixture in large bowl; reserve remaining sausage for another use. Add onion and mushrooms to same skillet sprayed with cooking spray over medium heat; cook 5 to 7 minutes or until vegetables are tender, stirring occasionally. Add spinach to skillet; stir to wilt spinach. Add vegetable mixture to beef; set aside 20 to 25 minutes or until mixture is cooled completely, stirring occasionally. Stir in cheese. Basic Country Beef Breakfast Sausage:
Combine 1 pound Ground Beef (96% lean), 2 teaspoons chopped fresh sage or 1⁄2 teaspoon rubbed sage, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1⁄2 teaspoon salt and 1⁄4 to 1⁄2 teaspoon crushed red pepper in large bowl, mixing lightly but thoroughly. Heat large nonstick skillet over medium high heat until hot. Add sausage mixture; cook 8 to 10 minutes, breaking into 1⁄2-inch crumbles and stirring occasionally.
Preheat oven to 425°F. Unroll pizza dough on flat surface; pat or roll dough evenly to 14 x 10-inch rectangle, pinching together any tears, if necessary. Spread sausage mixture on dough, leaving 1⁄2 inch border on short side furthest from you. Starting at closest short end, roll up jelly-roll style, pinching to close. Slice dough into 8 pieces using serrated knife and careful sawing motion; place cut-side-up on greased baking sheet.
Bake in 425°F oven 18 to 20 minutes or until golden brown. Remove buns to cooling rack. While still warm, drizzle with melted jalapeño pepper jelly, if desired.
Cream Cheese “Frosting’’: Combine 1⁄4 cup softened reduced-fat cream cheese and 1 tablespoon milk in small bowl, stirring until smooth. Drizzle over warmed beef buns.
