Well, I want to thank everyone who supported us by picking up the first issue and also those who gave us their

valuable feedback. With that said, we’re back for another round.

We also want to thank everyone who came out to Haven on May 31, to celebrate the launch of Carolina12 Magazine with us. The party was a great success, and we look forward to seeing you all at more parties in the future. As a matter of fact, we’ve got the release party for this issue at Oliver Twist on July 9th and we’re also hosting a 90s Old School House Party at Haven on August 9th. So, be sure to come out to both events and have a good time with us again.

This is our summer issue, which promises to turn up the heat just a little. We’re covering everything from trendy fashion tips for the summer season to day trips that you can take from the Raleigh area.

We were there to cover Strut 08, one of the biggest fashion shows this area has ever seen, but if you’re like me then you’re probably thinking, not another fashion show. Well, I must admit though that Strut 08 did it big. This was a huge production, which featured a number of local designers and a variety of entertainment. Anyway, we share with you what styles from the runway you can look forward to seeing on the street this summer.

Finally, I want to encourage you all to keep your letters coming. We have enjoyed your

comments and questions, and we hope to be able to answer them all. One the best things about this magazine, is that we actually listen to what people have to say. See you next issue.

Jay Matai , the owner of Privilege by Casanova, first got into the fashion industry while attending NYU in New York. While in school Jay had the opportunity to work

for the likes of Tommy Hilfiger and Ralph Lauren, Hilfiger was particularly helpful and served as a mentor when it came time to take things to the next level.

While still in school, Jay began to branch out and sell items of his own on consignment and ultimately became inspired to open his own high end fashion store. We sat down with Jay to get the scoop of how Privilege got started and where it’s heading.

What made you choose Raleigh?We started in NY and now we’re up to 15 stores all together. Four of those locations are here in the Triangle. I had family that lived in Raleigh, and

when I used to visit I realized that no one else was doing what we were.

Describe your style?I have a very European fashion sense. Cool button ups, different washed denims, and accessories

Who is your style icon? Why?I don’t have one particular style icon. I can go from very hip trendy to crazy rock & roll inspired.

What might visitors expect when they first walk through the door?I consider it to be more of a lounge than a store or boutique because we play the latest international music, and unlike other stores we have fashion consultants who are there to assist.

How are the brands picked to be in your boutique? Do you ever support local designers?I travel around the world, and we go to all the

cutting edge markets to pick and choose the strongest points to bring under one roof. Yes, we do support local designers. We’ll put the pieces in the store under consignment first and if they do well, we’ll move them up to the main rack.

What are your best sellers?Ed Hardy, True Religion, Christian Audigier, Rock & Republic.

Who is your typical customer?The 21-35 young professional who’s enjoying the new nightlife in Raleigh as well as the finer things in life.

What sets your boutique apart from the others in your area?Merchandise changes every single week, and we never restock the same goods. So it becomes very exclusive to our customers.

Where do you like to shop, besides your own place? Miami has the most cutting edge fashion in the U.S.

What article of clothing or accessory can you not bear to live without?The trendiest dress shoes.

What are your plans for the future?Our new store in Crabtree will feature a wine bar, a cat walk to display the latest fashion, and we also plan to host a lot of after-hours parties at the store as well.

The rap duo Dro and Drue, hence the name of their group Duo, have been together for almost 13 years. Influenced by such rappers

as Tupac, Nas, and Biggie, they have been on the local scene recording music and performing at live shows throughout the Triangle.

Their sound is reminiscent of such groups as Slum Village and Outkast, and although they don’t consider themselves to be conscious rappers, their message is one of doing better.Recommended Track:Icy Fingers

American Aquarium gives me hope for the Raleigh music scene by blending influences from bands and artists like Wilco, Lucero, Ryan Adams, and the Cardinals, Bruce Springsteen, and even Jerry Lee Lewis. They capture many of the great

novelties of pure southern music; lap steel guitar, raging pianos, howling vocals, and whiskey filled choruses. This six-piece band out of Raleigh started in 2004 and has since released two albums, toured the East Coast, and garnered a valuable fan base. Regardless of whether or not Alt-Country is your favorite genre, you’re bound to have a blast listening to American Aquarium’s newest release “The Bible and the Bottle”. Recommended Track: Clark Avenue

Artist: Little Brotherwww.myspace.com/littlebrotherI am not sure about a lot of things, but I am positive that Durham loves Hip Hop, and that Hip Hop loves Durham. How could they not, with talent like Little Brother? Already nationally renowned, Little Brother encompasses hard-hitting beats,

smooth melodies, catchy choruses, and thought provoking lyrics. In a genre that is already diluted by ring tone “artists”, Little Brother has plans to step up and over the bar that has been set for them with their newest release “and justus for all”. With a summer that finds them in Texas, New Jersey, and San Francisco, and with over two million plays on myspace, success seems to be at their door. Little Brother will surely please fans of those that appreciate lyrically capable artist such as Brother Ali, Sage Francis, and Lupe Fiasco, as well as those that crave the hard-hitting, radio friendly choruses like Kanye and Mr. Carter himself. Recommended Track: “Do Ya Thang”

There’s no such thing as a magic formula, no sure fire tricks of

the trade, no shrewd way of trapping Mr. or Miss Right, and no top dating tips that wave a magic wand. But there are some things that you should always bear in mind along the way. Dating tips are just that - tips; they are not an exact blueprint, and different things will always work differently for different people. However, I have noticed that there are some threads of advice that keep cropping up and therefore, it is worth sharing my top 5 tips here.

1. Preparation. If you really want to succeed in the dating game, you need to do your research and decide what you are looking for. Have fun and don’t take it too seriously, and be prepared for some let downs along the way.

2. Get in the habit of always looking your best. Join a gym, read health magazines, get fit and start a diet. Get your hair cut or styled and begin a new routine of good grooming or beauty treatment. The better you feel about yourself the more others will likely take notice of you.

3. Enjoy dating for what it is, dating. It is meeting people and socializing and spending time in the company of stimulating individuals who may or may not bring you a sparkle. The fact is, most people are interesting and while you may not be out there looking for new friends, you may find one or two fabulous people along the way.

4. Occasionally you should take time off from dating, if things are not going well or if it’s causing you dating fatigue. Dating is an ongoing process and so recharging the batteries and keeping the confidence and optimism levels high is an absolute must. So date in phases if necessary.

5. Finally. Never make yourself too available. People like mystery and the thrill of the chase when they are in the dating phase. In keeping with this do not sleep with your dates early on if you want them to progress, so save, sex until later. The longer a person is made to chase and fall for you within reason, the more likely you’ll successfully move on from the dating phase.

friend who I like a lot. How do I go about telling her how I feel and how do I know when it is the right time?--Brian

A:Yikes... So, this is always a tough thing to do. As far as the

timing, set aside a specific time to get together to talk with her. It doesn’t need to be around all of your friends, it doesn’t need to be right before you two hit up the club, and it DEFINITELY shouldn’t be something you mention in passing... You have feelings for her, and that deserves some real time and attention. The how. Since you’re friends already, I assume you go to lunch or dinner every now and then, so take her out to dinner. Don’t go overboard and take her to some overly romantic “couple” place. Go to a spot familiar to the two of you...the bistro that you go and get sandwiches at mid-day, or the restaurant that you hit up for cheese fries and a late night meal. Remember, nothing too romantic, because while you’re hoping for a yes, there’s always the possibility that she doesn’t feel the same way, so you have to plan for either outcome. Now comes the hard part. Just tell her. “We’ve been friends for (ever, 3

days, 3 years, etc.) and I’ve realized that I (want to take things to the next level, think we would be incredible together, wanna be your baby daddy, etc.). I don’t know if you feet the same way. I don’t expect an answer from you right now, but I would love to take you out, on a date, as more than friends. If you aren’t interested, then that’s okay, I just didn’t want to let this pass.” And don’t get super serious. If you keep the conversation light, she won’t feel pressured. Leave dinner with your normal way of leaving (a hug, walking her to her car, whatever you normally do) and let it be. Hopefully she says yes, and then you can do that whole romantic din-ner thing... If she says no, then you tried, and don’t feel awkward about it. She’s your friend and she loves you... Maybe not in “that way” but she does care for you a lot, and won’t keep bringing it up, or rub it in your face. And if she says no, then just act nor-mal, and don’t mention it again. It’s never someone telling you how they feel that drives you crazy and changes things, it’s people telling you how they feel and then CONSTANTLY remind-ing you about it and trying to push a relationship into fruition. And even if she’s said no, maybe one day she’ll wake up to see what an incredible man you’d be for her... But she has to do that on her own. Good luck... Just breathe, smile... and tell her : )

Sarah K. is an aspiring local model. She was originally born in Algeria, but her family moved here when she was 13 years old. Now at the ripe

old age of 21, she is pursuing her dream of acting and modeling. She has appeared in a local ad campaign for Metro, and she has also been in some other magazine publications such as Titanium Girls and DMB. She’ll also be appearing at the CMA awards this month as a presenter. We sat down with Sarah to get her take on some of the things that are on her mind.

So, what have you been working on for 2008?The main thing is my modeling career that I’m trying to progress. Doing commercials and getting into some acting.

When did you start modeling?The first time I ever wanted to model was when I was 15 and my mom took me to Barbizon school.

What are some of your aspirations?I want to learn more about the fashion industry and also get into more acting.

What do you consider your best feature?My smile and my personality because I am very easy to work with.

What’s your favorite stress reliever?Reading a book, working out or talking to my mom.

So, what is your ethnicity?I am Algerian and part French. My mother is Moroccan.

Describe yourself in three words?Honest, caring, spontaneous.

Favorite way to kill time?Talking on the phone or text and going on the internet. Not Porn.

Pet peeve?I can least stand a stubborn person.

What secret should C12 readers know about you?I like hanging out with guys more than I do with girls. I also like watching football and drinking beer.

How long does it take you to get ready for a hot date?About an hour and half to two hours.

What about for a not so hot date?Still about hour and half to two hours.

Describe your dream date?Fly to NY, have dinner on a skyscraper and of course roses.

What do you do when you want to get a guy’s attention?I like to make eye contact and smile. Sometimes I’ll even buy him a drink.

Best way to get your attention?I like a direct approach when someone comes up and introduces themselves.

What is the best and worst thing about men?The best thing about

men is how they have a practical approach to life. The worst thing about men is their lack of emotion sometimes.

What do you look for in a man?Someone who knows how to be a man and how to take care of his woman. Someone who is confident, understanding and faithful.

How do you like their bank accounts?Real big...just kidding. I just like someone who does well for themselves.

Were you always popular or did you go through an “awkward” stage?I went through an awkward stage when I first moved to this area when I was back in high school.

Which women do you consider to be hot?Angelina Jolie, Beyonce, Oprah. To me it’s more about their personalities, accomplishments and how they carry themselves.

Finally, what’s your weakness?Men!

“I like hanging out with guys

more than I do with girls.”

Remember back in high school when you had posters on your walls? One wall was dedicated to some hot model, singer, or movie star in

a bikini, and the other wall was dedicated to your dream car.

Like most adolescents my dream car was a Porsche. I remember lying on my bed daydreaming about the day I’d be driving down some winding road doing 80 MPH with a hot babe riding shotgun. The only problem I had was the price tag of the car, and maybe the hot babe.

Well, price is no longer an issue. The Porsche Cayman and Cayman S is a dream come true. With the sticker price starting at just $49,000, Porsche has made the dream of owning a high-performance sports car a reality.

When you walk up to the car you know you are about to go on an exhilarating ride that only a Porsche can deliver. When I sat in the driver’s seat, I instantly got goose bumps in anticipation of what was about to happen. The race-inspired ignition is uniquely located to the left of the steering wheel. The interior is remarkably comfortable, with all the controls right at your fingertips.

What do you find when you look under the hood? Nothing but trunk space, because

the Cayman S has a mid-engine layout for better balanced weight distribution. Turning the ignition key brings to life the engine that delivers 295 horsepower and 251 lb.-ft torque. The Cayman S accelerates from 0-60 in 5.1 seconds and has a top speed of 171 MPH. Porsche may have skimped on the price tag but that didn’t stop the engineers from producing a machine that corners like it’s on rails. Shifting is a dream due to the short-throw six-speed manual gearbox. The brakes were breathtaking. During the test drive, we took the car from about 70-0 in what seemed like less than 3 seconds.

To me, the Cayman S was very responsive and handled exactly how a Porsche should. And with the Porsche Exclusive program you can customize your Cayman S in every imaginable way, making sure that no two Porsches are alike.

Daydreaming is still a part of my life, but the Cayman S just might be a dream come true. This was, by far, the best test drive I have ever experienced. I owe a special thanks to Hall Liles at Leith Porsche in Cary, for taking me on this roller coaster of a ride. It’s a long way from your mom’s red 944, or posters on walls for that matter. What a reality check.

Indoor Skydiving Adventure

Like for a lot of people, skydiving has always been on my list of things to do before I leave this earth. However, I never seem to get around to it because it actually involves jumping out of an airplane.

Well, thanks to Paraclete XP SkyVenture, North Carolina is now home to the world’s largest body flight center which opened in Raeford, N.C., on January 11. So, I was finally able to experience the innovative sport of body flight with none of the risk.

The adventure started with an hour and a half road trip south of Raleigh to Raeford. Upon arriving at Paraclete, you’ll be greeted by a friendly and courteous staff who’ll show you around and explain to you what you can expect in your upcoming flight session. First time fliers are grouped together and then prepared by experienced instructors. The instructors will teach you the fundamentals of how to fly in the wind tunnel chamber.

The wind tunnel is a controlled environment that allows members to experience body flight in the safest way possible. The vertical wind tunnel can propel you up to 50 feet into the air. The tunnel moves air up in a vertical column so that you will soar inside of the conical room, surrounded by Plexiglas windows so that your family and friends can watch. Huge fans produce wall-to-wall airflow, creating a smooth and exhilarating experience. Paraclete is one of the biggest vertical wind tunnels on the planet. The tunnel boasts a 16.5-foot circular chamber, and it is completely climate controlled. It has four fans, at 541 horsepower each, to give a great range of air speed, up to 185 mph to be precise. That’s a Category 5 hurricane.

The cool thing is that even if you’re inexperienced, like me, you don’t have to worry. The sport is open to people of all ages and experience levels. Given the tunnel’s size, you can opt to fly with friends or family, but you can also fly alone with your

instructor. With instructor assistance, even first-time fliers can ascend the full 50 feet possible. During your first lesson you will be taught how to fly in place and move back and forth in the chamber. On later visits, you can also be trained on how to do different tricks, such as turns and flips.

With the Paraclete being so close to Pope Air Force Base you may even see some paratroopers, as I did, using the facility to train. Paraclete can also host groups and birthday parties, and a built in video recording system captures all of your moves.

To say it’s a phenomenon would be an understatement! It’s Saturday night April 19th, 2008, and groups flood into local Raleigh sports bars

and restaurants to watch a championship. But they aren’t here for hockey or baseball, and basketball jerseys are replaced by stylish Affliction clothing and shirts reading TapOut across the chest. Looking around the room you can see groups of guys, couples, business professionals and local bikers who have all come to cheer for their favorite athlete in a sport that was once considered nothing more than human cock-fighting. But tonight in homes and gathered throughout the country, fans will watch UFC 82 which will be highlighted with

a long awaited Middleweight championship defense between Matt “the Terror” Serra and George “Rush” St-Pierre.

Within the last 3 years, Mixed Martial Arts, has been the fastest growing sport in America highlighted by the success of Ultimate Fighting Championship and the amount of promotion that they have placed into bringing the sport mainstream. The sport consists of competitors training in different facets of martial arts specifically boxing, thai boxing, wrestling, judo, sambo, and brazilian jiu-jitsu.

During its inception in the early 90s MMA was thought to be to brutal a sport with an “anything goes” format that offered little safety too its competitors. Although there were fans that enjoyed the action, the market for the sport was small, and the thought of Cable actually airing such bloody wars was unthinkable. The sport went through remarkable changes that included higher sanctions and rules that protected the fighters while maintaining the integrity of the combat. Thanks to the popularity of the reality show “The Ultimate Fighter,” our sport has become a

daily conversation starter with fans latching on to their favorite athletes and actually relating to these men just as the public related to past legend boxers like Muhammad Ali.

Locally, MMA has gained a tremendous amount of popularity, and the increase in the number of individuals training in the sport has been exponential. Throughout North Carolina you can find a variety of programs and teams available to train with or join. We are very fortunate to have a number of pro fighters training in the Raleigh-Durham-Fayetteville area, including successful IFL superstar Tim Kennedy and one of my personal training partners Brandon Garner. The variety of those training in the sport is amazing. I myself train locally with TEAM ROC at CrossfitNC, and some of my partners range from former collegiate athletes to software engineers, waiters, welders, and doctors. No matter what we each do, once we step in the cage, our one goal is to experience the feeling and rush from completely destroying the person standing across from us.

Over the past two years, local TEAM ROC coach and Brazilian jiu-jitsu black belt Jason Culbreth along with Doug Muhle has helped lead the way to finally getting MMA legalized once again in North Carolina. This all culminated in the creation of Carolina Fight Promotions, which will serve to create quality MMA events throughout the state and manage up and coming NC fighters. Recently on April 26th, CFP put on an amazing fight here in Raleigh, NC -- “The Return” highlighted a number of local amateurs, including myself. The event was a tremendous success with thousands in attendance to watch 12 thrilling fights in an atmosphere that felt somewhat like a mini UFC fight in Las Vegas.

You might ask yourself, what kind of person,

would actually subject themselves to being hit in the face repeatedly by choice? Well, I can say that I’m that kind of person and you may be wondering whether I grew up getting in fights, am I covered in crazy tattoos, or am I some nut without an education. I can say an emphatic NO to all of these questions; I just love the competition. By day you will find me in a nice suit or scrubs running around the hospital and operating room and by night I’ve got my boxing gloves on or I’m out back working on my cardio by flipping enormous tires.

I found MMA two years ago and after spending a large part of my life wrestling, I

needed something to continue that passion for competition along with a great way to unwind from work. You can’t find a better way to get work off your mind than throwing some punches with fellow fighters. I can’t say enough about how nervous I was to know that I was going to fight my first time in front of a hometown crowd in Raleigh. The only thing that I could think about was not getting knocked out in front of everyone and of course keeping this pretty face undamaged (I know, humor me here).

The day of the fight was exciting as I had lost over 22lbs to make weight and was eager to do some eating after weigh ins. We were interviewed before our fights and then took a ton of promotional photos, which made each of us feel like professional fighters. I can’t describe how large the rush of adrenalin was walking down the runway to the cage when they announced my name. Once I stepped in the cage, all that was on my mind was totally destroying the guy across from me. All I remember is starting the fight and then the ref pulling me off of the guy and awarding me the TKO from strikes.

If you wanted to witness how popular this sport is in Raleigh, all you had to do was be out with me later that night. The number of people that congratulated us was amazing but not nearly as impressive as the requests for information on where to train and when the next fight would be. All I can say is when no-name amateur fighters like me are being recognized, then we are obviously a part of something special with such popularity that the unyielding success of the sport cannot be stopped. MMA athletes continue to be some of the fittest athletes on the planet and this sport will continue to provide the public with the feel of modern day gladiators.

Jason grew up in downtown Raleigh. His father and grandfathers also all worked in downtown Raleigh. About 4-5 years ago

he decided that he wanted to open his own restaurant in downtown Raleigh. 18 Seaboard has been going strong for 3 years now. We sat down with 34-year-old Jason to pick his brain about some of the challenges he faces running a successful restaurant.

Did you cook growing up?I cooked some with my mom and my

grandmother, but I worked in restaurants while I was in high school.

What made you decide you would become a professional chef?There are four things that I enjoy about the restaurant business. First the interaction with customers, second is the creativity, third would be the rush with so many things going on, and finally at the end of the day, hopefully you’ve made a little money.

Where did you train?I’ve worked for good people. I spent time at Magnolia Grill in Durham, Gramercy Tavern in Manhattan, and Peninsula Grill in Charleston.

Would you do it again?I would. I would travel more but I would do it again. I could have probably done a better job of meeting more, people along the way.

Best piece of advice you would give a home enthusiast?Go to the market and cook with the seasons, and be sure to get the best and freshest thing.

Which cooking tools or gadgets are your favorites?Our Vita prep and our wood fire grill.

Which are the most overrated — and underrated — seasonings?Underrated would be salt. A lot of times it’s the difference between great food and good food. Overrated would be Truffle Oil. It’s inexpensive and it’s over used.

Is there a guilty secret — something canned, something hokey — in your arsenal of ingredients?Our biggest shortcut that we use here is canned artichokes. They’re the same every time and they taste good.

Is there a rule of conduct or etiquette in your kitchen that you enforce above all others?We keep it very professional. People need to be focused on the task at hand. We don’t take being busy for granted.

What’s the most embarrassing thing you’ve ever done in a restaurant kitchen?Typically it’s when I burn my own lunch or dinner.

Which item in your home refrigerator would you least like to cop to?Dean’s French Onion dip.

What Raleigh restaurant(s), other than 18 Seaboard, do you like to visit when you have the chance? I like to visit Bella Monica, the Duck & Dumpling and Humble Pie.

You did something awful and are sentenced to die. Dead Chef Walking! What’s your final meal — and we’re not talking five or six courses, though you can have dessert — before you go?I’d have to say Grandma’s Christmas dinner. Roast beef, collards, mashed potatoes, green bean casserole and more dessert than you’d know what to do with.
