    Carne Asada Wraps with Apricot Salsaand Spiced Corn Rice

    INGREDIENTS (MAKES 4 SERVINGS)

    Our steak this week is rom Fallon Hills

    Ranch in Tomales, CA. The cows graze on

    a mix o perennial grasses like ryegrass and

    subterranean clover which provide continuous

    nutrition or the animals and a superior quality

    meat. We couldnt resist including some stone

    ruit, at the peak o their season. The resh

    sweetness o apricot salsa is tangy and delicious.

    PREP TIME: 25 MINUTES ACTIVE TIME: 45 MINUTES | DAIRY FREE

    Seasoned Wild Rice

    1 Cup Wild Rice

    2 tsp. Chili Powder

    1 tsp. Cumin

    1 tsp. Oregano

    tsp. Salt

    tsp. Cinamon

    2 Cups Water*

    2 Tbsp. Olive Oil*

    2 Ears o Corn

    8 oz. Apricots

    Cherry Tomatoes

    2 Scallions

    2 Limes

    Pinch O Salt*

    2 Yellow Onions

    2 Red Peppers

    Steak, Carne Asada

    Spice Mix

    2 tsp. Chili Powder

    Salt

    Baby Broccoli

    8 Flour Tortillas

    Q Put seasoned rice, 2 cups water, and 2 Tbsp. olive

    oil in a medium pot over high heat. Bring to boil and then

    immediately lower heat to very low, cover, and simmer or

    35 - 40 minutes. Set a timer or 30 minutes and add corn

    to rice ater 30 minutes.

    Q Shuck corn, cut kernels rom corn cobs, and set aside.

    Q Remove pits and chop apricots. Put in a small bowl.

    Slice tomatoes, chop scallions and add to bowl. Squeeze in

    juice rom 1 lime, add a pinch osalt. Stir and set aside.

    Q In the same pan, over medium heat, cook onions or

    about 3 minutes. Add the peppers and cook or about 3

    more minutes, stirring occasionally until sotened.

    Q Add the baby broccoli and cook or 2 more minutesstirring and remove rom heat.

    Q Use a sharp knie to thinly slice carne asada across the

    grain. Add carne asada to pan with veggies and cover.

    Q Slice onions in hal, peel each hal, then slice into hal

    circles. De-seed and slice peppers into strips. Roughly

    chop baby broccoli discarding thick stems.

    Q Pre-heat a large saut pan over medium-high heat. When

    pan is hot, add uncut carne asada, sprinkle with the

    spice mix.

    Q Cook 2 - 4 minutes on each side depending on

    thickness. Carne asada should be seared on the outside

    and pink in the middle. Remove to a cutting board.

    Q Cut the other lime in wedges or garnish.

    Q I desired, warm tortillas in a dry skillet on medium until

    warm and sot.Q Top tortillas with meat, veggies, and salsa and roll.

    Q Serve with rice and lime wedges. Enjoy your home

    cooked east!

    If you like it spicy, top with your favorite hot sauce.
