Although wine has been grown in Napa since the 1850s, its premium-wine scene began in earnest in the 1960s under the auspices of such luminaries as Robert Mondavi. The wines of Napa shot to almost instant international acclaim after stunning the world by outpacing classic wines of Bordeaux and Burgundy at the Paris tasting of 1976. Equally stunning is the valley itself, stretching from San Francisco Bay to Mount Saint Helena, with its wooded hills and mountain peaks channeling maritime fogs that breathe a sort of mystic life into the region, bookending brilliantly sunny days with misty mornings and evenings. Aside from the fog-cooled valleys of Carneros (which straddles Napa and Sonoma) and Oak Knoll, which feature Pinot Noir, Napa is firmly devoted to Cabernet, Merlot and Chardonnay, with mountain sites in partic-ular specializing in Cabernet Sauvignon.

Wine-growing in Sonoma traces its roots back to at least the 1820s. Indeed, some wineries still in operation today were making wines during the gold rush. While at times dwelling in the shadow of their famous Napa neighbours, the wines and winemakers of Sonoma have steadily built a reputation and shown they can stand with the best in the world. The region and its terroirs are dynamic and varied, from Sonoma Coast in the west to Napa-adja-cent Knights Valley in the east; in between, temperate Alexander Valley and Russian River Valley along with warmer Dry Creek Valley; and Carneros and soaring Sonoma Mountain in the south. Cool coastal and valley sites tend to focus on Pinot Noir, Chardonnay and sparkling wines, Dry Creek Valley specializes in Zinfandel, and the rest of the region is dedicated mainly to Cabernet and Merlot.

Variety Show• Grillo produces bright, fresh white wines with lemon, apple and an underlying nutty tone.

• Carricante has been a fixture on Mount Etna for nearly 1,000 years. As a single varietal, it has crisp acidity, bright citrus, mineral and mint.

• Nero d’Avola is Sicily’s leading red grape, and its juicy plum and dark fruit notes appear in both blends and single- varietal expressions.

• Nerello Mascalese and Nerello Cappuccio often appear together in blends and are the base for many of the finest reds sourced from the mineral-rich volcanic soils surrounding Mount Etna.

• Frappato is typically seen in blends. This aromatic grape can create light-bodied single-varietal wines that bring Gamay to mind.

• Perricone is another blending grape that adds texture and colour, as well as suggestions of red berry, earth and herbs.

Hare was established in 2016, making it a newer Niagara producer, but one with an old soul. The winery was built using repurposed materials including locally sourced barn boards and 100-year-old bricks from Detroit factories, and the vines themselves are 25 years old. “They’re in the prime of their lives, and have never looked better,” says owner and general manager John Hare. “We make quality, small-batch wines. One of the biggest challenges with Icewine is waiting for the coldest days to harvest. We don’t want to pick too early, but don’t want to miss the opportunity to have Icewine if the weather doesn’t go below -8 C again. Because of their balance of acidity to sweetness, Icewines will age for well over 10 years. The oldest Icewine I’ve tasted was made by Karl Kaiser (founder and winemaker at Inniskillin). It was a 17-year-old sparkling Vidal Icewine. The bubbles were gone, but the acidity and aromas were wonderful. The wine had caramelized in colour but was delicious.”

“We treat our Icewine grapes in much the same way as we do our sparkling,” says Daniel Speck, co-owner at Henry of Pelham, “tailoring our viticulture to highlighting freshness and acidity. We will pick for sparkling first, shortly after Labour Day, and we may not harvest our Icewine until January. Think about that: we harvest longer than we grow in Ontario. Terroir plays a huge role in making these three wines. Riesling has the thinnest skins, making it more vulnerable, so we harvest it earliest and it creates, I think, the Icewines with the most interesting balance. They start out fruity and aromatic, and as they age, we get more marmalade tones. Vidal is the workhorse of Icewine and has thicker skins and is very winter hardy. It starts out with peach and tropical notes and gives more butterscotch and toffee character as it ages. The red Icewine is at its best and most exciting when it’s young. I like to think of this pack like a box of chocolates.”

“Making Icewine in Niagara can be a gamble, as you try to assess the ideal time to harvest while the region goes through periods of freeze and thaw,” says Scott McGregor, winemaker at Lakeview Cellars. “Icewine requires consistent temperatures of -8 C before the grapes can be harvested, with -10 to -12 C being optimal. One thing about Niagara-on- the-Lake is that we can be certain the cold will come, so we’re lucky enough to have the luxury to pass on opportunities for harvesting, allowing the grapes even more hang time. The moderating effect of the lake means we can pick much later than other areas, which gives the fruit more time to develop on the vine, and the flavours we get are worth waiting for. But there’s no question it’s a risk. As with all wines, balance is key. Icewine should be decadent and luscious with explosive flavour. But it has to be balanced; the sweetness shouldn’t overpower. This one has great lychee, honey and tropical notes.”
