Cajun beef wraps

SERVES 2 SERVES 4 INGREDIENTS1 green capsicum1 red onion

200g 400g lean beef mince2 tbs cup (20g) fresh breadcrumbs made from wholemeal bread

1 egg1 tsp 3 tsp Cajun spice mix (optional) 2 tsp 1 tbs lemon juice3 tsp 1 tbs light whole-egg mayonnaise 2 tsp 1 tbs lemon juice

1 garlic clove, crushed2 4 AFD wholegrain wraps

1 baby cos lettuce, leaves separated1 2 tomatoes, chopped

METHOD1. Finely chop half the capsicum and half the onion. Thinly slice remaining

capsicum and onion.2. Combine mince, breadcrumbs, egg, spice mix (if using), corn, chopped

capsicum and chopped onion in a bowl. Shape mixture into twelve 2cm-thick patties. Shape mixture into six 2cm-thick patties to serve 2.

3. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook patties for 3–4 minutes each side or until cooked through.

4. Meanwhile, combine mayonnaise, juice and garlic in a bowl.5. Drizzle wraps with half the mayonnaise mixture. Top with lettuce, tomatoes,

sliced capsicum, sliced onion and patties. Drizzle with remaining mayonnaise mixture. Roll to enclose filling. Serve.

Serving suggestion: 0 SmartPoints® value spiced carrot and pumpkin chips. Preheat oven to 200°C. Spread 2 large (1 large to serve 2) carrots (cut into batons) and 400g (200g to serve 2) butternut pumpkin (cut into batons) on a baking tray. Lightly spray with oil and sprinkle with 1 teaspoon smoked paprika ( teaspoon to serve 2). Bake for 30 minutes or until golden and tender.
