Parades and pageants are part of the day along with patriotic and political speeches. Noisy fireworks might be the best part, even though they may be dangerous, too. And the food? Lemonade is a traditional beverage. Watermelon and strawberries and corn on the cob are almost always on the table. It’s a good time to enjoy these foods of summer. The bonus? Your family may celebrate 4th of July with a beach picnic in Monterey. Places on the sand are claimed

by mid-morning, blankets spread and folding chairs unfolded. Delicious smells rise from BBQ grills. Everyone appears to be in a festive mood.

Children run about waving small flags and grandmothers stand in the sea water up to their knees. Eventually it is really dark and the fireworks display begins. The day has been exciting and patriotic - a little rowdy, maybe - or jubilant, as we celebrate our country. 4th of July has been this way from the beginning, youknow. Parades and pageants are part of the day along with patriotic and politicalspeeches. Noisy fireworks might be the best part, even though they may bedangerous, too.

And the food? Lemonade is a traditional beverage. Watermelon andstrawberries and corn on the cob are almost always on the table. It’s a good time toenjoy these foods of summer. The bonus? These foods are good for our health aswell as delicious!

Gathering together to share in food and drink has been an important Independence Day ritual, going back to 1777. At shared meals we’ve told stories, remembered the past, and enjoyed lively discussions and debates about many things, from politics to women.

Americans have always enjoyed delicious foods on the 4th of July, from barbecued meats to seasonal vegetables and fruits to tasty piesand cakes. In Grandmother’s day, a meal of Cold Fried Chicken, Potato Salad, Cucumberand Butter Sandwiches, Watermelon and Chocolate Cake was the traditional meal.Mid-Century to now? We still enjoy grilled Hamburgers and Hot Dogs, Ranch Beans andWatermelon.

In the Old Days, these may have been sitting in the sun for hours. In fact, in yearspast, some Independence Days came in the midst of cholera epidemics! If we are carefulwhen we transport and prepare picnic foods, we’ll be assured of enjoying a meal with nounpleasant consequences. Tips for serving safe food are on page 6. There is newinformation about beef, so please check it out.

Try these delicious cold drinks. You can make them easily in the blender. (Be sure to wash the blender immediately after using). Eachrecipe makes enough for 8 glasses.

Watermelon Agua Fresca

About 3 hours before:

1. With a large spoon, remove red part of1 really ripe (about 12-lb) watermelon.Blend in batches, putting liquid into a

large bowl as you work.

2. Add juice of 4 limes, 2/3 cup sugar, 1handful wwashed fresh mint (coarselychopped). Stir and cover bowl. Let sitat room temperature.

3. When ready to serve, pour watermelon liquid through a strainer into a large glass jar. Add 1-quart club soda and 3 limes thinly sliced.

4. The ajua fresca can be served with a ladle (soup server) over ice cubes in tall glasses.

You could make this for a family picnic on 4th of July.

Horchata

The night before:

1. In a large bowl, put 2/3 cup long grain rice, 1¼¼¼¼¼cup chopped almonds, 1 (3") piece of canela (cinnamon), broken in pieces.

2. Pour 2½ ½ ½ ½ ½ cups boiling water in the bowl and stir well. Cool.

3. Refrigerate overnight.

4. Pour mix in blender, add 2/3 cups sugar and blend on high for about 3 minutes; till smooth.

5. Pour this liquid through a strainer. Mix with 2 cups cold low- fat milk. Pour over ice cubes in tall glasses.

Enjoy.

La fruta estival - hasta las palabras tienen un sonido poético. Eso es porque lafruta estival es el mejor regalo de la Naturaleza. Estas frutas están llenas de Vitamina C,Vitamina A, fibra soluble, y sabor.

Piense en las ciruelas, los duraznos y los albaricoques. Piense de las fresas - o enun vaso lleno de trozos de melones, pepinos y naranjas con limón y chile, con los saboresdulces y picosos mezclados para hacer un jugo fabuloso, goteando de la barbilla. Ah, lafruta estival...

Brochetas de las frutas jugosas:• Corte sus frutas favoritas en pedazos grandes y póngalas en brochetas de bambú. (Cerezas, melón, piñas, duraznos y fresas- todos son deliciosos)• Sumérjelas en yogur vainilla (bajo en grasa) y ¡Disfrútelas!

Sorbetes de Fruta:• En la licuadora, mezcle 1-taza de yogur vainilla (bajo en grasa) y 2-tazas duraznos o albaricoques (o su otra fruta favorita).• Vierta en formas para que se congelen por lo menos una hora. ¡Disfrútelas!

Summer fruit- even the words sound like poetry. That’s because summer fruitsare the best gift from Mother Nature. They are full of Vitamin A, Vitamin C, soluble fiberand lots of flavor.

Think about plums, peaches or apricots. Think about strawberries - or a glass filledwith chunks of melon, cucumbers and oranges, with lime and chile, with the spicy-sweetflavors mixing to make a fabulous juice, dripping down your chin. Ah, summer fruit...

Juicy Fruit Sticks:• Cut your favorite fruits into large chunks and thread them onto bamboo skewers.

(Try cherries, melon, peaches, pineapple or strawberries)• Dip these into low-fat vanilla yogurt and enjoy!

Fruitcicles:• In the blender, mix 1-cup low- fat vanilla yogurt and 2-cups of peaches or apricots (or your favorite summer fruit).• Pour into popsicle molds to freeze for 1 hour. Enjoy!

Try these too!

2 hands full favorite fruit, 2 packets instant oatmeal - put in blender & fill it with milk. Buzzz- instant creamy- good fruit shake for you & a friend for breakfast. It has what you need!

Mix light creamcheese with aTEENSY bit ofsugar. Spread ongraham crackers& top with berriesor sliced peachesor plums. Coldfruit “pizza”squares- yum!

Mix 2 cups ofyour favesummer fruitw/a TEENSYbit of sugar.Let it sit forat least ½ hour.Meanwhile, softensome low-fatfrozen vanillayogurt. Swirlthe fruit in& put back inthe freezer 1hr.before eating.Your family will beso impressed!

• Keep meats in the frig (40F or colder) until right before grilling. If you’reusing food from the freezer, thaw it in the refrigerator.

· Marinate food in the frig. DO NOT USE LEFTOVER MARINADE. It cancontaminate the cooked food, so just throw it out.

· ALWAYS wash your hands before (and after) working with raw meat. Use a SEPARATE cutting board for meats and for fresh veggies and fruits (or

other ready-to-eat foods). Wash & sanitize boards BEFORE and AFTER use

· Traveling to the grill? Keep raw meats in a separate cooler w/lots of ice.

• Most important of all- Cook the meat till it is 160F inside. The only way to tell is to use a thermometer. You cannot tell by looking at a burger or steak. *If you don’t use a thermometer, you may be putting your family at risk for “food poisoning” (serious injury or even death)- especially your children and grandparents. *Info from the FDA

• Guarde las carnes en el refrigerador (40F o más frío) hasta poco antes decocinar. Si está usando comida del congelador, déjela descongelar en elrefrigerador.

• Más importante de todo- cocine la carne hasta que la temperatura interna esté a160F. La única manera de saber esto es el uso de un termómetro. Usted no puede saber la temperatura al mirar la hamburguesa o bistec. *Si no usa un termómetro, posiblemente hay riesgos de intoxicaciones alimentarias, (enfermedad seria o hasta la muerte) especialmente para sus niños o abuelos. *Por la FDA

En la playa o en el parque, su familia puede jugar fútbol. Cada persona puedejugar, y cada persona puede ganar. Este año, pruebe algo diferente- algo antiguo. Ustedpuede usar un aro de hula hula y un palo para mover el aropor el camino sin caerse el aro, como la niña en esta foto.

Carreras de costales fueron populares por generaciones, como puede ver en el foto al fondo.

Más divertido son las carreras de 3 piernas, cuandonovios u amigos se agarran el uno al otro por la cintura yponen sus piernas juntas adentro el costal - entonces ellosbrincan por el circuito juntos. ¡El peligro mayor es el caersede risas!

O, pruebe un lanzamiento de globos llenas del agua, o una contienda de tira decuerda - o un concurso de jugar con aros de hula hula. Cuando esté tan cansado paracontinuar, enfríese en el agua del mar o del río. El verano. Si - ¡es divirtido!

At the beach or park, your family can play soccer. Everyone can join in and

everyone can be a “winner”.

This year, try something old. You can use a hula hoop and a stick to see if you can move the hoop along a path without it falling down, like the girl in the picture

above.

Sack races have been popular for generations, as you can see in this

picture.

Even more fun are 3-legged sack races, where sweethearts or friends graspeach other around the waist and put their “inside” legs into one sack- then hop alongthe race track together. The biggest danger here is falling down from laughter!

Or, try a water balloon toss, a tug of war, or a hula hoop contest. When you aretoo tired to continue- cool off in the surf or steam. Summer fun!

Sunday: Roast a Chicken with a handful of garlic cloves inside. Serve with steamed SmallPotatoes & Green Beans, Sliced Avocado & Tomato, Fresh Plum Sundae

Monday: Do Country Pork Ribs in the Slow Cooker; serve on toasted Sandwich rollswith dark green salad and melon wedges.

Tuesday: Set up a Family Pizza Bar: individual pizza crusts or split whole wheat rolls spreadwith Italian-flavored tomato paste; shredded part-skim mozzarella, sliced olives, onions,tomato, bell pepper, mushrooms, turkey-pepperoni or sausage. Add blanched (pre--cooked) thin-sliced zuchini or other green veggie. Bake till piping hot; serve with mixed fruit chunks.

Wednesday: Grilling today: Chicken Paillarde (marinate boneless, skinless thighs in olive oil,lime juice, garlic, black pepper. Grill & baste w/your favorite BBQ sauce) - or - Hot Dog (see page 2)Grilled fresh Corn, Green Bean Salad, Coleslaw, BBQ Beans, Whole Grain GarlicBread, Watermelon & Diana’s Special lowered fat Chocolate Cupcakes. WatermelonAgua Fresca and Lemonade Iced Tea. Definitely a “sometimes” food day!

Thursday: Hot day? Try a Whole-Meal Salad: Romaine lettuce, sliced hard-cooked Egg,Chopped Walnuts or Almonds, Crumbled Cheese, Strips of Ham & Bell Pepper, TomatoWedges, Olives, (Other choices - Blanched Green Veggies cooked Corn Kernels and BlackBeans). Toss with olive oil and lemon juice - or fat-free honey Dijon Dressing. Add Tortillas orWhole Grain Rolls and enjoy Fresh Peach Crisp.
