STRUFOLI PART 2

1. Put 1 cup flour and salt into a medium bowl. Make a well in center and add 1 egg at a time, mixing slightly after each addition. Add vanilla extract. Stir in more of the flour to make a soft dough.

2. Turn dough onto a floured surface and knead until dough is smooth and elastic. Cover and let stand about 30 minuets.

3. Divide dough into halves. Lightly roll each half into a rectangle ¼-inch thick; cut into strips ¼-inch wide. Use palm of hand to roll strips to pencil thickness. Cut into pieces about ¼- to ½-inch long.

4. Fill a deep saucepan a little over half full with oil; heat slowly to 375 ºF. 5. Put honey and sugar into a small (3-cup) skillet; place over low heat

about 5 minuets. Stir in orange peel. Set aside but keep warm. 6. Add only as many pieces of dough at a time to hot oil as will float one

layer deep. Fry 3 to 5 minuets, or until lightly browned, turning as necessary. Drain on absorbent paper.

7. Add hot cooked pieces to warm honey; stir until they are coated with syrup, then lift out with a slotted spoon or fork and put on a foil-covered tray.

8. Refrigerate until slightly chilled. Arrange in a conical shape on a serving plate: Invert a small custard cup at center of plate and pile the coated pieces over and around it. Sprinkle the tiny candies over the top.

9. To serve, spoon apart in clusters. 8 to 10 dozen cookies.
