1. GENERAL INFORMATION

1.1 IMPORTANCE OF THE INSTRUCTION BOOK

This INSTRUCTION BOOK has been written to allow a good installation of the BUTTER CHURN and it has to be considered as part of the equipment and must be conserved for the lifetime of your machine. We recommend therefore reading carefully the following pages and always following the indications and suggestions. The machine has to be installed by a skilled technician The operator, before using the machine must know perfectly the machine working. The instruction book has to be kept at complete disposal of the operator.

ONCE MACHINE HAS BEEN POSITIONED ON THE GROUND, IN ITS FINAL WORKING POSITION, AND BEFORE START FIRST WORKING CYCLE, PLEASE VERIFY CAREFULLY THAT ALL THE SCREW, NUTS AND BOLTS AND FIRMLY FIXED AND NOT LOOSEN (BECAUSE OF TRANSPORT'S VIBRATIONS).

FURTHERMORE CHECK, TO TIGHTEN FIRMLY THE PULLEYS AFTER THAT MACHINE HAS BEEN WORKING A CYCLE OF PROCESS.

1.3 GUARANTEE PIETRIBIASI MICHELANGELO SRL, guarantees the mechanical working of the machine for 12 months from delivery date indicated on the relevant delivery note The guarantee is limited to the replacing of damages or defected parts due to bad quality of material or due to the manufacturing. The guarantee does not include defects depending on normal wear and tear; unskilfulness or negligence of the operator; and it does not include the service tools. Guarantee of the motors and electric parts ceases at their start-up. Possible damages of defects must be communicated by registered letter or by fax within 8 days from their discovery It is important to know that the loading of the barrel must not exceed 1/3 of the barrel capacity, for an optimal efficiency of the machine, on the contrary the guarantee will automatically expire. PIETRIBIASI, after having recognised the presence of the defect, is obliged to replace the defective element, provided that the parts had not been tampered with; modified or repaired and on condition that the customer had punctually fulfilled the contractual obligations. The customer must send at his care the elements to be replaced to the seller who will provide for the substitution in the shortest possible time. Transport fees and charges for the new installation will be at customer’ charge . In case parts will be installed in a second time, the guarantee will cover only the parts with the above-mentioned procedure.

2.2 MACHINE USE

The machine must be used for the butter production, which is formed by the agglomeration of the globules of the cream fat part into a unique mass due to the violent agitation or beating. Machine is provided with a structure which supports a stainless steel barrel; The cream is poured inside the barrel through a large longitudinal window , outfitted with door and relevant gasket for the closure. An electric motor and a system of transmission allow the barrel rotation; the cream adheres to the barrel walls by the centrifugal force and by gravity falls. In a first time the butter churn speed rotation is moderate in order to allow to the cream to swell; then gases are et free through the proper hole, the movement is then accelerated, the speed is kept constant until some taps coming from the barrel internal side can be heard. You can check this process by the sight glass, so it is necessary to reduce the rotation speed to avoid the lumps give origin to a doughy butter; washing will result difficult. As soon as the butter lump reaches a dimension of a rice grain, the butter churn has to be opened and the whey is drained. Now the butter is ready for the washing and for the final discharge on the proper trolleys for their transport and packaging.

Machine is for indoor use only During machine working no people from outside must be present in proximity of the machine ! but only the operator in charge Do not use the machine :

• in places with risk of explosions

• in places with temperature lower than 0 °C

Conditions of use not allowed :

• machine improper use by unskilled personnel;

• normal maintenance shortage;

• unauthorised modifications or interventions (particularly on safety devices);

• use of spare parts non original or non specific for the model;

• total or partial non-compliance of the instructions;

• tampering of safety devices and commands;

• disassembling of fixed parts;

• use of machine in places different to the ones foreseen

2.4 COMANDS DESCRIPTION

MAIN SWITCH Placed on electric board (Pos. 1 Ill. 2) gives and cut the electric feeding to the panel. O - OFF = Cut-off, electric board is not fed I - ON = switched on, electric panel is fed from the net

START BUTTON Placed in the command area on the front of the machine (Pos. 2 Ill. 2), black colour with automatic return. By pushing this button the current reaches the motor which makes the barrel rotating

STOP BUTTON – EMERGENCY “Mushroom” type button, red colour with rotating unlocking. Placed in the command area on the front of the machine (Pos. 3 Ill . 2), this rules the motor stop and consequently of the barrel.

GEAR LEVER Lever to change speed from the butter-making phase to the kneading phase and vice-versa (Pos. 4 Ill. 2). Butter making = Barrel rotation maximum speed Kneading = Barrel minimum rotation with roller rotation

3. MACHINE INSTALLATION 3.1 MACHINE RECEIPT

Machine is generally delivered into a wooden case, in a cage or fixed on pallet and wrapped into plastic film. The anti-accident protection is separately delivered, disassembled. It will be the customer – or a technician that will provide for its assembling following the instructions shown in section “Anti-accident Protection Assembly ”. To unload the package use a forklift paying attention that the lifter could support the weight of the package !!

After having unloaded the machine; kept off the packaging, verify its integrity and check that machine is in accordance to the order specifications (Ill. 4).

In case of damages or missing parts, please call the carrier or Pietribiasi (0039-0445-621088).

3.2 MACHINE POSITIONING

Prepare a levelled floor, suitable to support the machine weight. Position the machine following the below listed sequences :

• Block the barrel with the roller gear

protection carter downward (Ill. 5).

• Place a rope or better a bend under the headstock by crossing it to the hook of the crane; with another rope, tie the pin of the rear support and cross it to the raising hook.

• Adjust the length of the rope in the way that machine is horizontally.

• In order to avoid damages, provide to protect the parts in contact with the ropes through some cloth pillows .

3.3 MACHINE FIXING

For a machine good working it is essential that machine is well placed on the ground. Block the machine for a higher stability with the 6 expansion bolts (look at the scheme for the dimensions). Pay attention that all 6 backings are touching with the floor surface (Ill. 6).

4. RULES FOR THE USE IN SAFETY OF THE MACHINE

4.1 PERSONNEL EMPLOYED ON THE MACHINE The operator assigned to work on the machine, beside his preparation and skilfulness, must read the instruction book paying particular attention to the safety rules and to the section of his competence The personnel employed con be identified into:

a)

OPERATOR : charged for the cream filling, for the check during the phases of butter-making and kneading, for the product discharge, for the machine cleaning.

b)

FITTER: charged for the mechanical maintenance of the machine.

c)

ELECTRICIAN: charged for the electric maintenance of the machine.

4.2 MACHINE USE

Machine must be installed in a clean and luminous working place, the space surrounding the machine must always be cleared away from obstacles and must be well lit. Be sure that the floor is flat and that it can support the weight of the machine.

Provide for a space around the machine respecting the drawing (Ill. 9), to assure an easy admittance for the maintenance

4.3 SAFETY DEVICES

The Butter churn mod. ZP 100/800 is outfitted with below listed safety devices to safeguard the operators:

1. Main switch positioned on the electric board (Ill. 2, part. 1). 2. Stop / Emergency switch “mushroom” type placed on the machine front (Ill. 2, part. 3) 3. Complete covering shield of the machine with opening door outfitted with switch (Ill. 10). 4. Fixed carters for dangerous parts (Ill.11). Furthermore, machine shows the following warning labels:

4.4 PROTECTION

Machine is outfitted with a general switch placed on the electric board (Pos. 1 - Ill. 2), and a stop / emergency switch placed on the front of machine in the command area (Pos. 3 - Ill. 2).

Only the electrician must open the electric board, by unscrewing the 4 screws.

ATTENTION : DO NOT WORK WHEN MACHINE IS WITHOUT PROTECTION

4.5 RULES FOR THE OPERATOR SAFETY

FOLLOW THE BELOW LISTED PROVISIONS:

• In order to avoid dangerous situations the operators are obliged to read carefully this instruction book; be sure that the operators have well understood the procedures of use and intervention before installation and use of the machine.

• In case some passages of the documentation are not perfectly clear, please contact PIETRIBIASI before any intervention on the machine.

• Do not lean tools and objects on the machine during working phase.

• Do not leave objects, which can obstacle the operator work, around the machine.

• Even though the electric panel is hermetically closed, do not turn to the panel jets of water during machine washing phase.

• Protections and safety devices of the machine must not be removed unless for intervention of repairing or maintenance. Their putting back in operation has to be done as soon as possible and anyway before the machine start-up.

• Wear clothes with tight-wrist sleeves; clothes must not present any flying parts ‘cause these could be entangled in the machine.

• During phases of product filling and discharge, the operator must wear the special gloves for aliments, in such a way to avoid possible contamination of product due to the direct contact with hands.

• Read all labels stuck on the machine and never remove or cover them.

• Only trained personnel can work on the machine.

• PIETRIBIASI is not responsible for accidents or damages in case machine is used by

not-trained personnel, in case of inadequate use of machine, besides of course the non-compliance, even partial, of the safety rules, intervention general procedures as well as the instruction stated in this instruction book

4.6 POSSIBLE RISKS AND EMERGENCY CONDITIONS Machine has been designed in such a way to reduce the risks in the best way It is fundamental that any operator knows and keeps in mind the possible risks :

• Risk of crushing for the machine falling during installation;

• Risk of electrocution in case of electric parts immersion or in case machine get in touch with water jets;

• Risk of slip and contact with edges or corners when the place where the machine is installed is humid.

5. MACHINE START-UP

WARNING!!: BEFORE READING THIS SECTION IT IS NECESSARY TO HAVE WELL-

UNDERSTOOD WHAT QUOTED IN SECTION 4, FOR THE RIGHT USE OF THE

MACHINE

PIETRIBIASI is not responsible for accidents or damages in case machine is used by not-trained personnel, in case of inadequate use of machine, besides of course the non-compliance, even partial, of the safety rules, intervention general procedures as well as the instruction stated in this instruction book

5.1 PRELIMINARY OPERATIONS

Before the electrical connection and the barrel filling, verify that:

• All machine components are correctly assembled.

• All protections are well fixed.

• Anti-accident protection door is closed.

• No tools or utensils must be left inside or upon the machine.

• Whey discharge valve is closed (Pos. 10 - Ill. 2)

5.2 ELECTRIC CONNECTION

Before proceeding with the electric connection, read carefully the data shown in section 2 “General Characteristics of the Machine ”, or the label stuck near the main switch (Fig. 1).

• Be sure that tension of electric network is the same as the one of the machine. The electric connection to the machine must be done by respecting the CEI RULES for the plants, assuring a good earthing connection; see scheme at section 2 for power absorption.

• After the connection verify the rotation way of the motor corresponds to the one indicated by the arrows placed on the barrel side.

• Check that the lever of the main switch is on “O” position

• Insert the plug into a power socket.

• Give tension by turning the lever of main switch in “I” position

• Then, push “Start” button and verify the well running of machine.

6. WORKING PHASES

THE MACHINE START-UP MUST BE CARRIED OUT BY THE OPERATOR WHO MUST KNOW AND FOLLOW ALL THE PROCEDURES FOR A SAFETY WORKING.

6.1 START-UP PHASE

• Put the barrel in rotation with the gear lever in “KNEADING ” position (Min. rotation of the barrel with roller rotation), by pushing the “Start” button (Pos. 2 - Ill. 2).

• Set the filling hole in the desired position.

• After having checked that whey discharge valve is closed (Pos. 10 - Ill. 2), open the door of the barrel (Pos. 6 - Ill. 2).

• Fill with the cream at temperature of 12 °C approx., in case add ice water; the filling must not be higher than 1/3 of the barrel capacity, this in order to obtain the best efficiency and to avoid to force too much the machine; if these instructions won’t be adopted the guarantee will automatically expire.

• Close the barrel door. 6.2 BUTTER –MAKING PHASE

• Now, when machine stopped, turn the gear lever (Pos. 4 - Ill. 2) into BUTTER-MAKING position (Barrel rotation to the maximum speed). In case gear lever will not fit well you have to turn on and turn off the machine and repeat the operation.

• After having checked that the door of anti-accident protection is closed, push the “Start” button (Pos. 2 - Ill. 2)

6.3 KNEADING PHASE

Once the butter-making is obtained:

• Stop the machine by pushing the “stop” button (Pos. 3 - Ill. 2).

• Set the gear lever (Pos. 4 - Ill. 2) into “KNEADING ” position (Low rotation of the barrel with rollers rotation) In case gear lever will not fit well you have to turn on and turn off the machine and repeat the operation..

• Then, restart the machine by pushing the “start” button (Pos. 2 - Ill. 2).

ATTENTION !!: DO NOT CHANGE SPEED WHILE THE MACHINE IS RUNNING.

6.4 DISCHARGE PHASE

• W the kneading phase is over, stop the machine by pushing “stop” button (Pos. 3 - Ill. 2), it is important to stop it when the whey discharge valve (Pos. 10 - Ill. 2) is turned downwards, in order to allow the whey outlet.

• Open the discharge valve and let the whey flow down .

• At this point proceed with the butter washing by filling the butter churn with a quantity of

drinkable water equivalent to the drained whey, preferably at the temperature of 13-15 °C., sometimes and especially in summer time the temperature can be reduced of some degrees.

• Let the barrel make some revolutions, slowly.

• Open the whey discharge valve and make the cloudy water flow down.

• Repeat once more the washing with the same procedures (the water at the end must be limpid).

• When washing is over, open the barrel door (Pos. 6 - Ill. 2) and take off the mixture.

• During the butter production it is good practice to stop the machine to reduce the pressure of the cream in the barrel, this operation is made possible through the whey discharge valve turned upwards

IMPORTANT : DURONG THE PHASES OF PRODUCT FILLING AND DISCHARGE, THE OPERATOR MUST WEAR SDPECIAL GLOVES FOR ALIMENTS, IN ORDER TO AVOID POSSIBLE CONTAMINATIONS OF THE PRODUCT CAUSED TO THE DIRECT CONTACT WITH THE

HANDS.

7. MACHINE CLEANING

ATTENTION: Before the external cleaning of the machine, cut-off the tension by removing the plug .

7.1 WASHING

Wash internally the barrel with degreasing detergent, suitable for alimentary products; the quantity will depend on the type of the detergent used and on the dimensions of the barrel; we suggest anyway to follow the indications quoted on the detergent packing. The washing operation has to be carried out as follows:

• Be sure that whey discharge valve is closed.

• Introduce the detergent solution in the barrel.

• First, turn the gear lever on "BUTTER-MAKING” position; then turn it to “KNEADING".

• Press “Start” button, with the rollers in motion, for approx. 5 minutes.

• Stop the machine pressing “Stop” button

• Open the whey valve and let the washing residues flow down . 7.2 RINSE

The final phase is the rinse one. This must be done with abundant water to remove any trace of detergent.

• Be sure that the whey discharge valve is closed.

• Fill the barrel with a proper quantity of water .

• First, turn the gear lever on "BUTTER-MAKING ” position, then on “KNEADING " position

• Push the “Start ” button, with the roller in motion for some revolutions

• Stop the machine by pushing “Stop” button.

• Open the whey valve and let the washing residues flow down.

• Repeat the rinse phase 2/3 times . When the rinse is over, the machine is ready for a new process..

ATTENTION : THE OPERATOR AT THE END OF ANY WORKING CYCLE MUST CARRY OUT THE OPERATIONS OF MACHINE CLEANING

8. WASTE DISCHARGE

ATTENTION : The discharge of whey, of washing liquids at the end of the cycles, as well as of the lubrication oil, is at end-user’ care, in accordance to the rules in force in the Country where the machine is installed

9. BUTTER CHURN MAINTENANCE AND CHECKS

Only the FITTER in charge, who must know and follow all the procedures for

a safety working, must carry out the machine maintenance.

ATTENTION : All maintenance operations must be done when machine is stopped

Before starting any intervention be sure about what follows:

• Cut-off the tension .

• Turn on “O” position the main switch.

• Prepare the necessary tools for the operations to be done

When the intervention is over:

• Verify that no tools had been left inside or near the machine.

• When intervention is over, inform the operator who must provide for the machine restarting.

9.1 CHECK OF THE BELTS TENSION

After 15 days of working, the belts tension must be adjusted, as follows:

• Remove the pulleys-cover protection.

• Slacken the fixing bolts of the motor holding flange (Pos. 18 - Ill. 12);

• Stretch the belt appealing to the proper point (Pos. 16 – Ill. 12);

• Block the nuts of the motor holding flange and reassembly the pulley cover protection.

The check of the belt tension must be carried out every 6 months. In case of belt break down, it is necessary to replace the whole set of belts to obtain a better efficiency of the drive.

9.2 CHECK OF THE OIL LEVEL

Check periodically the oil level through the indicator (Ill. 13), and fill-up if necessary. The first oil change must be done after 5O working hours approx., the following ones after an interval of approx. 500/1000 working hours. To change the oil proceed as follows:

• Remove the pulley-cover protection.

• Unscrew the cap placed on the upper protection (Pos. 8 - Ill. 2).

• Unscrew the discharge cap placed inside the pulley opening (Pos. 15 - Ill. 9).

• Discharge though a funnel the used oil into a hopper.

• Close the discharge cap.

• Fill with new oil and check the level through the sight-glass (Pos. 5 - Ill. 2);

• Check the discharge cap seal and assembly the pulley cover protection.

• Before the oil refilling, it is advisable to open the upper protection (Pos. 9 - Ill. 2) and to remove possible impurities from the base of the gear box; then, close the upper protection and reassembly the plastic gasket (made from PIC or similar)

9.3 CHECK OF THE ROLLER

Another important check is the one of the rollers. Actually it is required, especially during the first months, to keep the roller on its seat, paying attention that it does not work loose. To avoid this inconvenience, it is sufficient to screw tight the plug placed outside the barrel (Pos. 1 – Ill. 14), and to block it with the proper levers (Pos. 2 - Ill. 14). During machine washing – if you believe convenient – there is the possibility to remove the rollers, for a more accurate washing, as follows:

• Unscrew the levers and the proper threaded plugs (Pos. 1 e 2 - Ill. 14), and remove the rollers.

• Wash the rollers (Pos. 3 – Ill . 14) with suitable degreasing detergent. For the reassembly:

• Assembly the roller by screwing tight the threaded plug and close it with a light pressure;

• Screw on the plug the relevant levers and block them;

9.4 DEGREASING

Every 30 working hours, remove the protection (Ill. 15), and grease the gears of kneading rollers.

11. MACHINE DISMANTLEMENT

For the demolition it is compulsory to destroy the identification plates and any other document. Empty the oil contained in the lever gear. After having disconnected the machine from the electric installation, proceed with the disassembly of the different components, dividing them following their typology: stainless steel, aluminium, plastic material and so on… The destruction of material must be done by respecting the rules in force in the Country. Proceed with the demolition by respecting the rules in force in the Country.
