Ingredients 2 C long grain rice 4 Tbsp butter 500g chicken breast, chopped 1 onion, diced 2 cloves garlic, crushed 1 Tbsp garam masala 1 Tbsp fresh ginger, grated 1 tsp chilli powder 1 tsp ground cumin 1 can diced tomatoes 300 ml heavy cream salt and pepper 2 garlic naans Directions 1. Cook rice according to the instructions on the packet. 2. In a saucepan, heat 2 Tbsp butter over high heat and brown the chicken pieces. Set aside. 3. Heat another 2 Tbsp butter in the saucepan, sauté onion and garlic until soft. Add in the garam masala, ginger, chilli powder and cumin. Stir for 1 minute. Add diced tomatoes and gently simmer for 5 minutes. 4. Add cream and chicken to pan and simmer for 10-15 minutes or until chicken is cooked. Season well. 5. Warm naan bread under the grill and serve alongside curry and rice. YIELD: 4 servings TOTAL TIME: 40 mins LEVEL: easy
