placesThis hill village is made up of 14 hamlets,

including Minas del Castillo de las Guardas, El Cañuelo, Valdeflores, La Alcornocosa, Archidona and Arroyo de la Plata. Various archaeological remains bear witness to its long history as a settlement, including prehistoric dolmens: la Sepultura del Moro and Lapa del Moro in Las Cañaillas, as well as other neolithic burial grounds in El Cerro de San Antonio Abad and la Dehesa de Abajo. The area was known for its copper and lead

deposits.History buffs are in for a real treat here, as you’ll also find the remains of the castle, situated above the village in a typically protective location. The impressive mudejar San Juan Bautista church was built over the remains of a mosque and Arab cemetery in the 13th and 14th centuries; while the Fuente Abrevadero is a popular meeting point of residents of El Castillo de las Guardas.

Walkers can enjoy many trails through the oak forests and surrounding scenery, including Ruta de la Ribera del Guadiamar (the banks of the Guadiamar route), Los Callejones and paths such as Las Cañadillas and the Reservoir de la Minilla.

local FOODDishes will comprise of some of the best produce grown locally. Olives, almonds, lemons and oranges are used in cooking or in refreshing salads. The pig is omnipresent in Andalucia. Locals love pork and the chorizo and morcilla sausages are signature meat dishes in El Castillo.Perfectly delicious and cooling on a baking summer’s day, gazpacho, drinkable tomato soup, is quick and easy to make - the main ingredients

are bread, extra virgin olive oil, cucumbers and tomatoes, all staples in the Andalucian diet.Number one in the Andalucian culinary pantheon for many, the wafer-thin slivers of soft, sweet-salty, melt-in-the-mouth air-cured ham from our mountains are exalted like no other food.Arab influence has left its mark on the cooking in the region. Piñote, a deep fried pastry cover with honey, is one of the best kept traditions in our village.

The two greatest Flamenco artists are Paco de Lucía y Camarón de la Isla. Paco de Lucía has become one of the biggest and most influential guitarists in Spanish history. He was the accompanist to the biggest phenomenon that flamenco has ever,

and is likely to ever produce, Camerón de la Isla. He became the most imitated singer in flamenco history. This young gypsy was to turn the flamenco scene on its head, and in 1992 when he died at the age of just forty-two, the legend was born.
