You and your business partner Duncan Stirling are the brains behind Barts in Chelsea, Maggie’s in Fulham and Bunga Bunga in Battersea. Why south-west London?I’ve always lived here, and we saw an opportunity to open more creative places in the area, which was suffering from a serious lack of imagination.

Why does the unapologetic kitschness work?So many places take themselves too seriously. People need escapism from the doom and gloom – where they used to want drinks and dinner before the theatre, now they want theatre whilst eating and drinking.

At Maggie’s the loos are filled with the sound of Margaret Thatcher’s oratory, and at Bunga Bunga you’ve recreated the Sistine Chapel. Tell us more... It’s been important for us to remain hands-on and not just sign up interior designers. We drove a van across Italy to buy memorabilia for Bunga Bunga, explored car boot sales for Barts and spent days buying 1980s memorabilia for Maggie’s. We had great fun selecting vintage Vespa helmets in Rome and using them to create a chandelier at Bunga Bunga.

You audition staff at Bunga Bunga. What’s been the craziest act?We hold Britain’s Got Talent-style auditions and have seen all manner of weird and wonderful acts, including an exceptionally strange guy who hammered nails all over his body – needless to say he got the red buzzer!

Most memorable meal in London? London is such an exciting culinary capital, it’s hard to choose. Bacardi took our head office team for an incredible eight-hour lunch in the private dining room of the Savoy Grill where we got to cook our own mains, but equally I’ve had fantastic dinners at the bar in Barrafina and at Ceviche, drinking pisco sours and ordering an array of Peruvian food to share.

Cultural hotspots? The Royal Academy. I’ll always remember Sensation when I was 13 – I was determined to see the groundbreaking works by Hirst

and Emin. I also love the Royal Albert Hall, and see Cirque du Soleil every year.

As a bright young thing, who’s hot to watch right now?

My brother has an online art auction site called Paddle8

through which I found American photographer Alex Prager. Her

work is influenced by Lynch and Hitchcock. She’s the next big thing.

So let’s get this straight.

The US Navy Test Pilot School, home to some of the world’s crack aviators, gets its watches from Henley-on-Thames?

The home of cream teas, rowing and cute waterfowl?

Actually, it’s not as daft as it might sound.

Because Henley is also the home of a company called Bremont.

And, over the last ten years, we have developed watches for more than forty different squadrons, both here and in America.

The US Navy asked us to design a timepiece for the elite pilots who train at their school in Patuxent River, Maryland.

People who cross time zones about as frequently as the rest of us cross the street.

The result is a chronometer with an adjustable 24-hour hand, that can display local time anywhere in the world, together with Universal Coordinated Time (the standardized time zone used by the military).

Built by hand in our workshop, the mechanical movement undergoes an arduous testing process (something it has in common with its wearers) and is 99.998% accurate.

The case is made from a stainless steel that’s seven times harder than anything you’ll find in conventional watches. (We bombard our steel with electrons to toughen it up.)

Then we add not one, but nine layers of anti-reflective coating to the sapphire crystal for maximum clarity and hardness.

Some might call all this excessive. But it’s just the way we do things here in Henley-on-Thames.

The question is, how do you get your hands on one of these fine watches?

Well, if you’re between the ages of 17 and 34, and an American citizen, you can of course apply to join the US Navy.
