Exit Essay:

In my junior year of Culinary Arts I have learned so many new skills that have helped me

advance in the way that I cook. Some of the major things that I have learned was how to fully

season and cook a turkey. In order to do that you get spices of your choice as well as herbs. You

also need to cover your turkey with a mirepoix which consists of onions, celery, carrot and you

can stuff fresh apples as well. A very important part that you don't want to miss is to coat the

whole entire turkey with butter so that you get the crispy outer layer. The last thing you do is

place it in the oven at 325F for about 3-4 hours. Another thing that I learned this year was how to

particularly butterfly a chicken and fill it with stuffing. It is very easy to take your chicken and

cut a slit in it and you fill it with stuffing and tightly close it back up and then you cook it

normally on a hot pan. One of the more tricker things that I learned this year is how to debone a

whole entire chicken into 8 parts. At first I thought I wasn't going to be able to because snapping

the bones of the chicken seemed like something I wasn’t going to be able to get over but I did

and now I can debone the chicken in no time. Chicken pot pie was made with the leftover

chicken that we had which consisted of vegetables of your choice mixed all together with

bechamel sauce which is just milk, flour, butter, and some salt all heated together. Then you just

mix all of it together and place it inside of a flaky pie crust and cover it with egg wash. I started

baking cakes and got the basic understanding on what to do so that next year I have a little bit of

background information. A major thing is to make sure that you line your baking pans so that

nothing sticks and if you put an outer cloth so that it doesn't bake with a mound on the top. Some

machines that I learned how to use was a deli cutter which I had never used before. Something

that took me a few tries to get down to use was the station mixer. I couldn't get the bowl to attach

firmly on to the machine but eventually I got it. As well as the mixer that you can bring to your

station, attaching it was something that took me some time to get the hang of but eventually I got

it and now it is easy to use!! Another appliance that I have never used before was a deep fryer.

Deep fryers look more intimidating than they actually are. The first time that I had to deep fry I

thought that there was no way that I was going to be able to do it. Submerging the food in

extremely hot oil I thought that I was going to get burned. But, if you put the food in the fryer

slowly then there is no way that you can get burned and you just have to pay attention to what

you are doing. I learned how to properly hold a knife and how to cut onions and celery and much

more. There's a certain indent that shows you were to cut so that is it nice and easy to follow and

it makes sure everything is uniformed. Not every day is going to be a cooking day but some

weeks it’s dishwasher week and you know how to properly work the dishwasher and you get to

understand the kitchen in more detail because when cleaning and putting everything away you

see where things go. Then, when it is time to get what you need you get it much faster and you

know where everything is because you repeatedly see the same things over and over again.

Somethings that I hope to learn next year is how to make a full cake from starting on the

ingredients all the way to baking it to finally decorating it. I also want to learn how to make the

fondant that you use to decorate the cake. Also, I want to know what to do incase that my cake

gets stuck, is there something that I can do to save the cake? Or can I still use that cake in a

different way. Also, how to bake an assortment of pastries not only cakes but also breads and

filled pastries. I do want to get more experience in baking. But, I do want to still learn more

cooking. Cook things that I have never cooked before or get a deeper understanding of basic

cooking methods and use methods that I never used before.

After highschool I do not want to continue and major in Culinary Arts I want to go to

college and major in psychology. From there I am not certain in what I want to exactly major in

psychology but I have an idea of considering social work or something along those lines. I want

to help people that need help and make sure that they are safe when doing so. This is something

that I am very passionate about and that where I plan on heading. If not that then I would go

college and get my teaching licenses and work with children with disabilities. I enjoy helping

them with everyday activities and seeing how accomplished they look after they complete it.

They are so grateful and thankful for all that you do for them and seeing how excited they get

makes me want to help them even more. Those are my plans for after highschool and what I

want to do. Overall so far my culinary experience has taught me so much and I can’t wait for

what is still in store for me. Learning new cooking experiences will only benefit me and come in

handy from here on out.
