I Think I'll have to have this on hand at all times for fall: 8oz cream cheese, ½ cup canned pumpkin, 1 1/2 tsp pumpkin pie spice, 1 tsp vanilla, 2 Tbs brown sugar, dash of salt Apple Bread: 3/4 c. oats, 1 1/4 c. whole wheat and/or oat flour, 6 oz. local honey, 1/2 t. cinnamon, 1/2 teaspoon ginger, 1 cup Georgia pecans, 2 t. baking powder, 1/2 t. baking soda, 1/2 cup sunflower oil, 1 1/2 cups cooked, Georgia grown apples (chopped, peeling left on, simmered until soft), 1 T. vanilla, 1/2 cup pure water, oats topping. 1. Preheat oven to 350°F.2. Grease two loaf pans with vegetable oil or non-stick spray.3. Mix both kinds of flour, baking powder, baking soda, spices and salt in

the large bowl of an electric mixer.

4. Stir together pumpkin, eggs, sugar, applesauce, honey, oil or melted butter in a large bowl.

5. Combine pumpkin mixture with dry ingredients, stirring only until combined. Stir in apple.

6. Pour half of the batter into each loaf pan and bake at 350°F for 50-55 minutes, or until a toothpick inserted in center comes out clean. Cool on wire rack for 10 minutes before removing from pan.

Apple Oat Bread:INGREDIENTS:1 1/2 cup uncooked rolled oats1 1/2 cup white whole wheat flour1 1/2 teaspoon baking soda1 1/2 teaspoon cinnamon3/4 teaspoon ground allspice1/2 cup honey1/2 cup milk1/4 cup corn oil(1/4 cup applesauce)3 egg whites -- at room temp3 cooking apples -- shredded

PREPARATION:1. In a large bowl, mix oats, flour, baking soda, cinnamon, and allspice. 2. In a small bowl, beat honey, milk, oil, and egg whites. Stir into flour

mixture just until moistened. Fold in apples. 3. Spread in loaf pan coated with nonstick vegetable cooking spray. 4. Bake at 350F degrees for about 65 minutes. 5. Cool in pan on wire rack for 10 minutes and remove bread from pan.

Corn Tortilla Recipe

1 cup whole wheat flour shopping list1 cup cornmeal, as finely ground as possible1/2 teasp. salt4 eggs, beaten

2 TBSP. oil1 1/2 cups water

in bowl: combine the flour, cornmeal, and salt

in another bowl: combine beaten eggs, oil and water

pour the egg/water mixture slowly into the flour/cornmeal mixture stir.

this helps prevent lumps

you may need a little more water.. the batter will be very thin. like a crepe batter

this recipe call for the use of an iron skillet but a heavy bottomed frying pan

should work just fine.

use a 8 - 10 inch frying pan.. wipe with a very little amount of oil

Plain Applesauce Muffins

2 cups white whole wheat flour2 teaspoons baking powder

1 egg¾ cup applesauce1 cup lowfat milk

pinch, ground cloves, nutmeg, ground ginger (or ½ tsp allspice)3 teaspoons cinnamon

1) Combine flours, sugar, baking powder, and allspice. Add milk, egg, and applesauce; stir only until ingredients are blended.

2) Fill 12 greased muffin cups almost full. 3) Bake at 400 degrees F. about 30 minutes or until wooden pick inserted

near center comes out clean.4) Serve with honey or jam!

Applesauce Cocoa Cookies "Chocolate and moist, these are delicious. "

Ingredients:1/2 cup vegetable shortening

1 egg or egg substitute 1/3 cup unsweetened cocoa powder

1/2 teaspoon salt 1/4 cup water

1 teaspoon baking powder 1/3 cup sugar

2 cups cake flour 1/2 teaspoon ground cinnamon

1/2 teaspoon baking soda 1 cup unsweetened applesauce

Directions:

1 Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.

2 Cream together shortening and sugar replacement. Add egg and blend well.

3 Sift all dry ingredients together and add alternately with applesauce and water to creamed mixture. Be sure to add flour first

and last.

4 Drop by teaspoonfuls onto greased cookie sheets. Bake at 375 degrees F for 12-15 minutes.
