HISTORY
THE 80s
Our history began in 1929, when the company Ing. Polin &
C. was founded with the purpose of producing artisan baking
ovens for bread and pastry. Over the years, our company has
grown by creating new specialized departments and integrat-
ing companies that share similar business activities, quality, ide-
als and principles. Today we are a group that operates in five
factories equipped with the most modern production technolo-
gies on a total area of 70,000 sq. metres.

VBS AIR
VBS Air is the result of all the expertise
of Polin, the leading company in design-
ing and manufacturing machines for the
baking and confectionery industry. It is a
modular line that allows to produce many
types of bread with customized automat-
ic solutions for small and medium baking
facilities. Every artisan can configure it to
their needs, keeping their art unchanged,
reducing manual work and increasing pro-
ductivity. Robust and durable, VBS Air has
been designed to provide maximum pre-
cision and productivity, while at the same
time creating a quality artisan product.
AS GENTLE AS THE EXPERT HANDS OF
AN ARTISAN
Designed to recreate the artisan "touch",
the VBS Air dough divider allows to work
perfectly with both fresh and rested dough,
at high moisture content. The dough is not
stressed, allowing it to flow gently as if
being worked by the hands of an experi-
enced operator. All this by the simple press
of a button. Made of steel and aluminum,
it offers a high level of stability and durabil-
ity that guarantees a long-lasting service.

THE RECIPE
Even the less experienced operator will be
able to control all the parameters of the
machine thanks to an immediate and intu-
itive control panel with an 8.4 inch “Touch
screen”. It offers the opportunity to store
1000 automatic adjustments, which allow
you to manage any kind of dough under
optimal conditions, in order to create a
wide range of products. The built-in mo-
dem allows remote problem solving and
constant software updates.
CONTROL
MAXIMUM PRECISION. GREAT SOLIDITYEach VBS Air module has a stainless steel struc-
ture that guarantees great stability and solidity,
ensuring maximum precision while process-
ing the dough. The guards are also made of
brushed stainless steel to give added strength
and, in addition, an outstanding appearance.
Another unique characteristic of VBS is that it
has robust aluminum side frames with a thick-
ness of 15 mm.

HOPPER
YOU CAN CHOOSE THE MOST SUITABLE FOR YOUR NEEDS It is extremely easy to load and it is available
in different widths: 165/220/240/300. Thanks
to the use of inverters, the movement of the
inverted honeycomb plastic belt automatically
adjusts to the kind of dough you are working
with. The side frames facilitate the movement
of the dough and are made of food safe pol-
yurethane.
FLOUR DISTRIBUTOR
PRECISE ADJUSTING OF FLOUR RATE
It guarantees a perfect distribution of flour
even on the stickiest dough. It is mount-
ed as standard and positioned before the
touching device, in order to prevent dough
adhesions. The flour duster allows a pre-
cise regulation of the amount of flour to
fall on the dough. The flour duster is re-
movable and washable, which ensures
complete sanitation.

SHEETING GROUP
GENTLE SHEETING OF THE DOUGH
The new Air sheeting System achieves a gen-
tle reduction in the thickness of the dough,
obtaining a stress-free dough that is ready for
optimum development. It consists of a pol-
yurethane cylinder system that is adjustable
in more than 40 positions by means of a le-
ver. Each cylinder has a scraper for a constant
cleaning. Upstream of the sheeting cylinders,
the height-adjustable touching device, en-
sures the correct dose of dough at the input.
The thickness reduction of the dough can be
from 30 to 5 millimeters.
CUTTING DISCS
EASILY INTERCHANGEABLE
Cutting discs made of non-stick material
allow to cut up to 18 rows. The shape of
the disc, with its rounded profile, has been
designed to detach the dough more easily
and to "sew" the side of the cut dough.
MULTIPLIER SYSTEM SPREADING
UNIT WITH BELTS OR WITH GUIDED
SPRINGS
TO IDEALLY SPREAD THEPRODUCT ROWS
The Multiplier System spreading unit with
belts, from 1 to 7 rows, is available with
manual adjustment or fully automat-
ic adjustment, controlled by the “Touch
screen”. The Multiplier System is an in-
ternationally patented solution by Polin.
For the production of breadsticks, a guid-
ed-spring spreading device can be used in
the manual or automatic version.
SPECIAL GUILLOTINE ENTRY CONVEYOR
CORRECT PLACEMENT OF ROWS OF DOUGH
The preparatory conveyor belt, positioned
upstream of the guillotine, puts the rows
of dough in perfect order before cutting.
A photocell system guarantees perfect uni-
formity of the cutting length.

COMPRESSED AIR OPERATED GUILLOTINE
CUTTING PRECISION ANDHIGH PRODUCTIVITY
The guillotine is equipped with photocells
for detecting the product, which automat-
ically activate and deactivate it. It ensures
high cutting precision and accurate weight
of the product, with a speed of up to 40
cuts per minute.
MULTI-POSITION OUTLET BELT
THE PERFECT TRANSIT TO THE FOLLOWING MODULES
A connection belt with variable speed,
thanks to the use of inverters, makes the
dough passage perfect to the following
modules or to directly deposit it onto the
trays, at a synchronized speed with feed
rate and with adjustable deposit height.
All belts are antimicrobial and anti-fraying.

MOULDER
AN EXCELLENTLY SHAPED PRODUCTBuilt on sturdy aluminum side frames,
the 4-cylinder moulder with adjustable
anti-waste, mounted on a spring frame,
gives an elongated shape to the loaf with-
out tearing the dough. The opportunity to
apply an inverter system guarantees opti-
mal winding of different types of dough.
It works in conjunction with the dough di-
vider, with or without a rounding machine.
DOUBLE MOULDER
FOR A PERFECT DOUBLE WINDINGTo make all types of bread that require
double winding, allowing a wide variety
of production without the complications
of having to rotate cumbersome machine
parts. The outlet phasing device at the first
moulder guarantees a perfect alignment,
allowing an optimum bread moulding.
The 3/4/5/6 way piece-turning device with
"little hands" allows the second wind-
ing, while the interchangeable motorized
tracking devices give a great uniformity.
MOULDING TABLE AND FLATTENER
EXTENDING OR FLATTENING WITHOUT STRESSING THE DOUGHThe double adjustment for both input and
output ensures a soft processing of the
dough, which is gradually stretched and
is not subject to any type of stress. The
moulding table is available in a table ver-
sion or with an opposing belt. The latter
offers the option of installing an inverter
that allows you to adjust the speed when
you want and reverse the travel direction
to flatten the pieces of dough.
INTERMEDIATE PROOFER
PRODUCT REST SYNCHRONIZED TO THE LINEAllows a 10 to 20 minute rest for those
products that need it, synchronized to
line operation. Developed on a large steel
structure, it is made up of a series of perfo-
rated aluminum swinging trays and a non-
stick sleeve, on which the pieces of dough
rest. It also allows long loaves and balls to
be loaded. An environmental control sys-
tem always keeps the rest chamber at opti-
mal temperature and humidity conditions.
SEED SPRINKLER
HOMOGENOUS AND ADHERENT DISTRIBUTION OF THE SEEDSIn order for the seeds to adhere perfectly
to the product, the product must be wet
directly: the product is transported by a
double stainless steel mesh in a water
bath where the surface that is necessary
to be wet is immersed. The product is then
rolled over and slid under the seed-spread-
ing hopper. The hoppers are interchange-
able according to the type of seeds to be
spread. Made of stainless steel, they con-
sist of grooved rollers with a cross section
of 1 mm to 10 mm.
STAMPING MACHINE
TO DIE CUT THE SHAPEYOU WANTThanks to the interchangeable bars, you
can stamp products in any design and
shape. Being able to adjust the pressure
also makes it possible to imprint even the
most tenacious dough. The stamping ma-
chine module can be either combined with
the intermediate proofer or not.

LOADING SYSTEM
DOUGH DIVIDERThe dough divider with built-in, automatic
tray placing, allows you to load up to 15-
18 trays without the need for an operator
to continuously intervene. The feed rate of
the baking tray is variable, because it is ad-
justed by inverters: it determines the num-
ber to be unloaded and the length of the
product. The unloading belt is fine-tuned,
with overturning or continuous discharge,
without the dough getting stressed.
STACKING MODULEThe unloading cabinet ensures the contin-
uous work of the line, stacking the trays
loaded with the product. In a small space it
can hold up to 18. With the application of
a Cartesian axis it also allows the loading
of a trolley.
WORKING WITH AUTOMATIC TRAY PANNING
GO-FRO CONVEYOR MODULEBeing connected to the dough divider, it
allows you to determine the number of
product rows you want to unload. While
the unloading phase occurs, the dough di-
vider continues to work and load the fol-
lowing products, without any limitations
to the productivity of the machine.
CARTESIAN ROBOTAT 3 AXESIn order to complete the automation pro-
cess, the rip-loader can be combined with
the Cartesian robot that loads the tray
trolleys with folded edges. With a minimal
amount of space, you avoid employing a
fixed operator at the bottom of the line,
maximizing productivity. In less than 20
seconds, thanks to the 3 axes powered by
brushless motors, it pulls the baking tray
out of the trolley, places it under the rip
device to load the product and puts it back
on the trolley.
DOUGH DIVIDERThe VBS Air dough divider allows you to
work perfectly even with trays that have
folded edges or frames, thanks to the
rip-loader.
