Unique academic know how in winemaking

• The grapes are crushed and its temperature is lowered immediately to 7 ˚C. The skins are soaked in the cold juice for 3 days to extract aroma and color and only then the temperature is raised and fermentation starts. The unique fermentation process is conducted at a temperature profile, which carries out the full potential of the grape in each of the stages in the process.

• The wine is aged during 12 months in small oak barrels, mostly French and some American, to balance flavor and taste.

• Clarification was performed only by decantation. The wine is unfiltered.

Mark Squires Review of BRAVDO Cabernet Sauvignon 2010

• The 2010 Cabernet Sauvignon (Bravdo) was aged for 12 months in a mixture of French and American oak. This shows the best focus of the red group and the most precision. Well-structured, with tension on the finish, this has a real but not overly severe backbone, an elegant mid-palate and a beautiful mouthfeel. It is quite graceful, charming, and very elegant, even with the tannic punch on the finish. Of the reds tasted here, this one is the one that might actually benefit the most from another year in the cellar, though it is certainly approachable now. There is also something of an herbal overlay on the finish that becomes a bit more apparent as it airs out. This nuance might get a bit more powerful with age. Its development with more air was modest. Drink now-2020.

Mark Squires Review of BRAVDO Merlot 2010

• The 2010 Merlot (Bravdo) was aged for 12 months in a mixture of French and American oak. A bit on the lean side, this nonetheless shows nicely focused, clean and reasonably persistent fruit, even if it is not terribly fleshy and concentrated. It has a nice, juicy finish and well-integrated tannins, but real structure. It is not terribly complex, but it is very tasty and well-assembled. I was actually pleased to see it improve notably with 45 minutes of air, showing better structure and more tension. This can certainly be sipped, but it should also make a great food wine. Drink now-2018.

BRAVDO Coupage 2011

• Wine makers: Prof' Ben Ami Bravdo, Prof. Oded Shoseyov • Composition 40% Cabernet Frank , 33% Shiraz, 27% Cabernet

Sauvignon.                         •  The unique composition of the Coupage expresses the synergy

between the three varieties of quality wine. The wine had aged in new oak barrels and has undergone a process of natural shade without filtering. The wine is deep in color and with a long finish. It envelopes the palate with rich fruity aroma, like only BRAVDO can

Mark Squires Review of Coupage 2010

• The 2010 Coupage (Bravdo) is a blend of 40% Cabernet Franc, 33% Shiraz and 27% Cabernet Sauvignon, aged for 12 months in a mixture of French and American oak. Tasting this right after the lovely Merlot created some serious palate adjustment issues. The focused, precise, somewhat lean Merlot contrasts notably with this more voluptuous and velvety wine. Certainly, this coupage is more “obvious” and impressive on first taste, although I ultimately had a minor personal preference for the Merlot. (Your mileage may differ.) With a trace of oak up front, this has a fruit-forward feel. There is nothing terribly complicated or concentrated here, but it is lush and reasonably well supported in structure and quite charming, with an olive note in the background. Drink now-2018.

Mark Squires Review of Chardonnay 2011 and Decanter

silver medal

• The 2011 Chardonnay (Bravdo) had a somewhat complicated vinification process: it was fermented in tank until it reached about 9% alcohol and then transferred into a mixture of French and American oak. The net result is a fruity, clean wine that smells more of tank than oak and tastes really good. It is not going to win points for power and it is rather straightforward, but consistent with the style shown by the others here, it is well constructed in its style, wonderfully easy to appreciate, and quite charming.
