Paying more for lessBy David Uffington

If your family has been going throughjar after jar of peanut butter, it might notbe that they're eating more. Peanut butterjars, as with so many other products, haveshrunk in size.

Tuna used to come in 6-ounce cans. Now it's 5 ounces. Juice used to be 64ounces. Now the cartons contain 59ounces. Ketchup, canned vegetables, icecream, cereal, boxed pasta, coffee - theyall have less in the package.

Some manufacturers are trying to put apositive spin on it. With crackers, forinstance, one manufacturer is trying totell us that the product will stay fresherlonger with less in the box. Or the pack-age is better for the environment. Or it'shealthier.

With some products they're not 'fess-ing up with excuses, they're changing theshape of the package just enough so thatit fools the eye into believing we're get-ting the same amount as before: slimmerpackages that are the same height asbefore, boxes that are just as wide but notas deep, caved-in bottoms on jars, orbright splashes on the front that say"improved flavor" or "easy pour" to dis-tract us.

No matter the excuse, the bottom lineis that we're getting less in the packagesof food while, of course, the prices aren'tdropping.

Price isn't the only implication. Ifyou're on a special diet (say if you havediabetes) and know that in the past youcould eat one-quarter of a box of pasta, and the box is now smaller, you won't begetting the nutrition you used to get. Thatcould have an impact on your insulindosage.

Recipes can take a hit, especially onesyou've made for years. If you're used tousing a one-pound package of rice, thatpackage may no longer contain what youexpect it to. Food that used to feed a fam-

ily doesn't go far enough now. It's more important than ever to read

the packaging and know what you're get-ting. Read the price label on the shelf anddo the per-unit math: the largest sizemight not be a bargain anymore, with twopackages being cheaper. Compare brands.Try something new. Make notes on thestaples you buy for future comparison.

Above all, don't be fooled. Know whatyou're getting and decide if you want togive the manufacturer your money.

Sparklers are not as safe as they seemParents go above and beyond to keep

their children safe, especially from burnsor fire hazards. They'll put locks andguards on ovens, check the temperature ofbath water, push hot drinks to the center ofthe table so they cannot be tipped over andblow on hot food to cool it down. However, even the most protecting of par-ents might be unwittingly putting kids atrisk during the summer holidays, whenchildren often play with sparklers.

Most people think that sparklers are thesafest fireworks around. After all, theyaren't propelled into the sky at highspeeds. Sparklers do, however, burn attemperatures between 1,100 F and 1,500 F.That's three to five times hotter than theoven temperature required to cook manymeals.

The U.S. Department of HomelandSecurity states that sparklers are third onlyto bottle rockets and firecrackers as thefirework most likely to cause injury tochildren ages 5 to 14. The AmericanAcademy of Pediatrics states that 45 per-cent of all firework-related injuries occursto children under age 15, while estimatessuggest that 57 percent of the firework-related injuries suffered by children underthe age of 5 are caused by sparklers.

Due to safety concerns, Arizona,Delaware, Georgia, New Jersey, NewYork, Massachusetts, and Rhode Islandbanned all fireworks as of 2005. That banincludes sparklers.

If sparklers are legal where you liveand you plan to include them in festivities, there are certain precautions to take.

•Always supervise children withsparklers.

•Don't give sparklers to very youngchildren. Substitute much safer glow sticksinstead.

•Have a water bucket handy or a pail ofsand where extinguished sparkler stickscan be placed.

•Make sure any sparkler users areaware that wood and metal sparkler sticks

can remain hot for some time, even afterthe burning has ceased.

A New ThreatAs if the dangers of individual sparklers

were not enough, some people are takingeven bigger risks. Spurred on by onlinevideos and step-by-step building instruc-tions, individuals are turning ordinarysparklers into sparkler bombs. Thesehomemade explosives are created by bind-ing 300 sparklers together with electricaltape and using one sparkler as a fuse.

Sparkler bombs are being used to blowup everything from garbage cans to mail-boxes.

Sparklers are made from a pyrotechnicmaterial and iron fillings pasted on a stick. When lit individually, the sparkler simplyburns for a few seconds and fizzles out. However, when bound together, multiplesparklers produce a lot of heat and energy

that has no free place to go. As a result theenergy produces an explosion.

Fireworks are relatively inexpensiveand, as a result, they're easily accessible toteenagers. Sparkler bombs can use morethan 50 milligrams of flash powder, whichis illegal under regulations established bythe U.S. Bureau of Alcohol, Tobacco andFirearms. The ATF also warns that sparkler

bombs can ignite simply through frictionor excessive heat.

As of May 2012, there were about2,630 video search results onYouTube.com for "sparkler bombs." Sometowns across the country have found theproblem to be an epidemic. In July 2009, a15-year-old South Carolina boy lost hisright hand and experienced extensiveinjuries to both his legs when trying toextinguish a sparkler bomb a friend hadmade. Police on the scene said the sparklerbomb also created a 3-foot by 3-foot by 1-foot crater in the ground.

Manipulating fireworks of any kind is afelony in most areas. Not only does a per-son risk serious injury, he or she also risksa fine or jail time.

Sparklers may seem to be relativelysafe, but as with any incendiary device, they can cause serious injuries.

Autism rates rising ... but why?In early 2012, the U.S. Centers for Disease Control

and Prevention issued findings from a study that found 1in 88 children is now diagnosed with autism spectrumdisorder by the age of eight. This is a 23 percent increasein ASD diagnoses in just two years. What troubles doc-tors is that the rate has risen far above the 2006 estimateof 1 in 110.

The National Institute of Neurological Disorders andStroke says that ASD includes a range of complex neu-rodevelopmental disorders, characterized by socialimpairment, communication difficulties, and restricted, repetitive, and stereotyped patterns of behavior. Childrenwith ASD can have difficulties learning what are typical-ly simple lessons for other children. Although ASDvaries in severity, the common thread is that it occurs inall ethnic groups and affects every age. Males are fourtimes more likely to have ASD than females.

Doctors do not understand why autism rates haverisen so profoundly. Some believe that a broader defini-tion of autism is fueling these growing numbers.Diagnostic criteria has changed, and ASD is now encom-passing conditions that weren't first included under theautism banner. Currently, ASD is classified into the fol-lowing subsets.

Pervasive developmental disorders (not otherwise

specified, or PDD-NOS): These are a large group of dis-orders characterized by delays in communication andsocialization skills. Children may vary in their abilities, intelligence and behaviors. A PDD is typically diagnosedby age three.

Asperger's syndrome (AS): AS is a developmentaldisorder that includes repetitive routines or rituals, pecu-liarities in speech and language, such as speaking in aformal manner or monotone, socially and emotionallyinappropriate behavior and the inability to interact withpeers, clumsy motor movements, and problems with non-verbal communication. Unlike children with autism, chil-dren with AS retain their early language skills, but theircondition may be realized due to motor developmentdelays, says the National Institutes of Health.

Autism disorder (AD): Also known as classicalautism, those with this diagnosis often have the mostsevere form of ASD. Characteristics of this disorderinclude repetitive movements, self-abusive behavior, inability to speak or communicate, failure to play withother children, and no smiling or social responsiveness. Many with AD have restricted patterns of interest that areabnormal in intensity or focus.

Because children are placed on the autism spectrum atdifferent severities, autism in general is quite a broadterm - and only seems to be getting broader. Therefore, net ASD includes more and more children who may nothave been diagnosed with ASD in the past. Increasingly, doctors and specialists have a better understanding ofbehaviors and symptoms indicative of ASD, whichmeans more children have the potential for an ASD diag-nosis than in the past. These are just some of the factorscontributing to why autism rates seem to be growing.

According to Autism Speaks, just a few years ago lit-tle was known about the causes of autism. Now it isknown that there is no one cause of autism, just as thereis no one type. Scientists recently identified a number ofrare genetic changes, or mutations, associated withautism. Many cases, however, seem to be a combinationof genetics and environmental influences during earlybrain development. The organization also notes that theclearest evidence of these autism risk factors involvesevents before and during birth. They include advancedparental age at the time of conception (both of mom anddad), maternal illness during pregnancy and certain diffi-culties during birth, particularly those involving periodsof oxygen deprivation to the baby's brain. These factorsdon't cause autism, but they can contribute to it.

Autism spectrum disorder affects more than one mil-lion children in the United States alone. MarkRoithmayer, president of Autism Speaks, says that autismshould officially be considered an epidemic in the UnitedStates. Ongoing research and customized treatmentoptions remain the best opportunities for anyone withASD.

MMR not linked to autism In February 2010, The Lancet retracted a controversial

1998 paper that linked the measles, mumps and rubella(MMR) vaccine to autism. The study was discredited byfurther research, and it was determined that the lead doc-tor on the study, Dr. Andrew Wakefield, had acted unethi-cally. Investigations revealed that Dr. Wakefield had cho-sen a biased selection of patients.

Parents who are still concerned about vaccines shouldalways discuss their anxiety with their children's pediatri-cian. He or she can offer the most up-to-date informationabout childhood vaccines and potential side effects.

The CDC urges parents to remember that vaccines aregenerally safe and should be an important part of chil-dren's well visits.

Difference betweenADHD and ADD

The terms ADHD and ADD are often used inter-changeably. Though similar, there are some subtledifferences which set these conditions apart fromeach other.

ADD is actually a subset of ADHD, or AttentionDeficit Hyperactivity Disorder. ADHD is the umbrel-la term most medical professionals use for the condi-tion. Just as the term "autism" is used to cover anumber of behaviors and symptoms because it is eas-ier than calling each by an individual name, such isthe case with ADHD.

Generally, the term ADD is used when individualsdo not display hyperactivity behaviors. There aresome other major differences in the types of ADHD.Recognizing symptoms can help doctors and parentsachieve a more refined diagnosis.

1. ADHD, Predominantly Inattentive Type: This isthe form of the disease most commonly referred to asADD. Symptoms include inability to sustain atten-tion, making careless mistakes due to distractions, and avoiding tasks that require concentration.

2. ADHD, Predominantly Hyperactive-ImpulsiveType: Symptoms of this particular condition includeexcessive talking, fidgeting, restlessness, interruptingothers, and being constantly in motion.

3. ADHD, Combined Type: In these cases, indi-viduals have a combination of symptoms.

Those with the type of ADHD classified as ADDmay be misunderstood and originally considered shy. They also may experience co-existing emotional con-ditions, such as depression or anxiety. They mayhave trouble making friends, but experience closeemotional bonds with friends they do make.

On the other hand, individuals with ADHD areoften diagnosed earlier because hyperactivity is easi-ly recognizable. They may attract a lot of attentionand friends, but have difficulty maintaining relation-ships.

Some symptoms are shared by all kinds ofADHD, including: Lack of organizational skills, eas-ily misplacing items, difficulty in school, low self-esteem, poor social skills, and relationship problems.

Depending on symptoms, doctors and therapistswill develop a plan to enable ADHD patients to bet-ter focus and be more successful in daily activities.

Swimming and playing near water are favorite summertime activities of children everywhere. So parents andguardians need to pay extra attention and make sure theyprotect little ones from the dangers that water presents.

Here are some points to consider aboutwater safety for children.

• Never leave a child alone near water.Accidents happen in seconds, so if you have toleave, take your child with you.

• Watch out for neighborhood pools. Whetherit is your own or your neighbors, toys that are left

around the pool can attract children to the water.• If you have a pool, make sure you surround it by

a fence that is tall enough that children cannot climb over, and with a gate that locks.

• Enroll children over age three in swimming lessons taught by quali-fied instructors. Lessons won't make yourchild "drown-proof," but they will increasetheir safety and prepare them for a lifetimeof fun in the water.

• Teach your children to alwaysswim with a buddy.

• And always have a first-aid kitand emergency phone contactshandy. Parents should be trained inCPR (cardiopulmonary resuscita-tion).

Swimming safety tipsBy keeping these few simple things in mind, you

can make your experience in the water much safer.•Learn to swim before you go into the water. Soundssilly, but many people think it will come naturally, and itreally doesn’t.•Swim near a lifeguard so help is available if you need it•Never swim alone•Supervise children closely, even when lifeguards arepresent•Don't rely on flotation devices, such as rafts, you maylose them in the water•Alcohol and swimming don't mix•Protect your head, neck, and spine by jumping feet firstinto unfamiliar waters•As soon as you believe that you may be in trouble, callor wave for help•Follow regulations and lifeguard directions•Swim parallel to shore if you wish to swim long dis-tances

Keeping children safe

Programs that mayteach water safety

With all of the dangers associatedwith fun in the water, we are all fortu-nate that there is a wealth of informa-tion available about water safety.Government agencies like the US CoastGuard and the Army Corps ofEngineers, Bobber's site and not-for-profits like the National Safety Counciland the American Red Cross have web-sites designed to teach young peopleand old how to be safe while enjoyingthe water. Local community pools, lakes, and beach areas may offer infor-mation about safety and swimming les-sons.

Don’t forget aboutthe boat’s towline

Whether you like to water-ski, wake-board or participate in some other sportwhere you are towed behind a boat, theright equipment can make all the differ-ence between a fun day on the water or abad one fraught with peril. One of themost often overlooked pieces of watersports equipment is the towline. The tow-line is important and deserves special care.

To keep your towline in good conditionand extend its life, follow these tips:

•Coil the line in a figure eight when inuse to prevent kinking. Any kinks over aprolonged period of time will wear downthe line's fibers.

•Make sure the line stays above theboat when in use. Should it fall below theboat, it could be cut by the propeller.

•Keep the line clean by rinsing it offwith fresh water after each use. If youdon't, any dirt on the line could grind intothe fibers and weaken them.

•Store your line in a cool, dry, shadyplace when not in use. Moisture and sun-light will speed up deterioration.

•Never knot the rope. Doing so willonly weaken the line's fibers.

Although you should never knot thetowline, it may become knotted on its ownfrom time to time when in use. Should youexperience a stubborn knot, try one ofthese methods to work it out:

•Push on the center of the knot to cre-ate slack and quickly twist the line backand forth just outside the knot.

•Tap on the knot lightly with a hammerto loosen it.

•Insert the tip of a ballpoint pen or aspike into the center of the knot and moveit around gently in a wide circle to loosenthe knot.

These are just some of the more com-mon methods you can use to work out astubborn knot. Should you try all of theseand continue to have problems, you mayhave to consult a professional or purchasea new line.

By Angela Shelf MedearisAfter years of creating recipes, shop-

ping and cooking, even a Kitchen Divaneeds to update her old favorites fromtime to time. It's amazing how changing afew ingredients and adding new spicesand herbs can revive an old recipe. I'vedecided to update my Chicken and RiceSalad by giving it a Mexican twist.

I'm adding flavorful herbs and spicesto change the flavor profile of the dish. The black beans and avocados give thesalad a creamy, buttery texture and addadditional protein and nutrients. Nutrientsfound in avocados include vitamin E,vitamin C, lutein and the B vitaminsfolate, B-6, pantothenic acid, riboflavinand niacin -- all of which have beenshown to be good for hair and skin.

Be selective about the avocados youuse in this salad. An avocado is ready toserve when the skin turns from darkgreen to nearly black and yields whenpressed gently with a thumb. Firm avoca-dos will ripen in a day or two at roomtemperature in a brown paper bag on yourkitchen counter. Ripe avocados can bekept in the refrigerator for several days.

Try this updated Avocado, Chickenand Rice Salad dish, and feel free to thinkoutside of the recipe box the next timeyou prepare an old family favorite.

Avocado, Chicken andRice Salad

2 cups cooked long-grain white rice2 ripe avocados1 teaspoon fresh lemon juice1 (15 ounce) can black beans3 cups cooked chicken, shredded or

cut into bite-sized pieces4 green onions, root ends removed

and discarded, white and green parts, chopped

1 teaspoon chili powder1/2 teaspoon salt1/2 teaspoon freshly ground black

pepper

1/4teaspoon cayenne pepper

1 cup Italian dressing1 cup cherry tomatoes1/4 cup chopped cilantro, optional1. Prepare rice according to package

directions. Dice avocados and toss withlemon juice; set aside. Rinse and drainblack beans. When the rice is ready, stirin chicken, beans, green onions, chilipowder, salt, black pepper and cayennepepper. Add Italian dressing and toss wellto combine.

2. Pour into a serving bowl, cover withplastic wrap and chill for 30 minutes to 1hour. Add the avocados and cherry toma-toes, tossing gently to combine. Sprinklewith cilantro, if desired. Makes 6 serv-ings.

For years doctors and safety experts have preached theimportance of being smart about sun exposure. Considering skincancer is the most common form of cancer in Canada and theU.S., according to statistics published by the leading cancerorganizations in both countries, many people have long heededthe warnings. Although many of the precautions remain thesame, this season individuals may want to pay attention to someof the newer information about sun safety.

UV Rays and the Ozone LayerThe sun is responsible for life on the planet as we know it.

Without sunlight, plants would fail to thrive and there would notbe adequate warmth to heat up the planet. Still, the sun is a dou-ble-edged sword. The warming rays responsible for life can alsobe detrimental. A primary component of sun rays - ultravioletrays - can cause skin and eye damage.

UV rays come in three types:1. UVA: These rays cause skin aging and wrinkling and con-

tribute to skin cancer, such as melanoma. They are the mostcommon UV rays to reach people.

2. UVB: These rays are also damaging, but the ozone layerblocks much of them from passing through. Some do make itthrough and can be harmful.

3. UVC: These rays might be lesser known to the generalpublic, but they are the most harmful. These rays are blocked bythe ozone layer in the atmosphere and don't reach the earth.

Although the ozone layer filters much of the harmful ultravi-olet radiation, the thinning of the ozone layer due to greenhousegases and other effects of human life poses a problem. Someportions of the ozone layer are depleting. Contrary to what somepeople may think, thinning of the ozone layer is more pro-nounced at the poles of the earth rather than in the equatorregion. There is a large area of thinning over Antarctica, whichsome scientists believe correlates to a weather phenomenoncalled a "polar vortex." This is when air is blown around theplanet and atmosphere and is isolated over Antarctica during thewinter. This air contains global pollutants, which break downthe ozone layer.

Changes to Sun Protection GuidelinesAlthough very thin patches in the ozone layer are sparsely

located at the poles, the overall concentration of ozone in thestratosphere fluctuates. Thinning resulting from chlorofluorocar-bons, or CFCs, and nitrogen oxides in the air has compromisedthe ozone to the point that greater precautions may be necessaryto protect the body from UV rays.

•It is widely known that the sun is responsible for producingvitamin D in the body. That vitamin D works in concert withcalcium to produce strong bones. Vitamin D is sometimesknown as the "sunshine vitamin." Three-quarters of U.S. teens

and adults are deficient invitamin D, according toinformation in the Archivesof Internal Medicine. Whilethe old way of thinking wasto get 20 minutes of unpro-tected sun exposure a day togenerate vitamin D, newthinking offers that supple-ments and fortified foods arethe safest way to get vitaminD, especially for those whoare deficient.

•Err on the side of cau-tion when applying sun-screen. It's not just aboutapplying some and reapply-ing a half-hour later. Becausethe level of dosage cannot beadequately measured, it'sbest to play it safe and applya thick coat of sunscreen.Apply as frequently as you'dlike, especially if you have

been swimming or sweating and feel that the protection could bewaning. Pay special attention to the back of the hands, back oflegs, neck and where swimsuits can bunch up skin to createhigher points that the sun will touch first. And use the highestSPFyou can find. This way if enough isn't applied, it still mayoffer better protection than a low SPF.

•Sunscreen alone may not be enough. People should thinkabout wearing clothing that also offers sun protection. A thincover-up or T-shirt will not offer protection. In fact, the sun canget through and it is like wearing nothing at all. Look for specialclothing that offers an SPF.

•Some dermatologists also advise wearing a sunblock and anantioxidant-enriched moisturizer. The sun can cause free radicalsthat break down elastin in the skin, causing wrinkles and drying.A moisturizer can help combat this.

•There has been a long-standing rule that tanning beds arenot a safe way to get a tan. That information has not changed.Tanning beds dish out harmful UVA and UVB rays. They're nota safe way to develop a "base tan" to make skin less susceptibleto burns.

Staying smart about sun exposure means keeping abreast ofthe changes to sun-safety guidelines. People should put cautionfirst when venturing out into the great outdoors this warm-weather season.

Prevent lawn damageMany homeowners aspire toward a pristine and lush lawn. For

some a nice lawn gives them feelings of pride. Others believe aperfect lawn enables them to have the best-looking house in theneighborhood. Many homeowners spend hours outdoors perfect-ing their lawns or spend a good deal of money hiring profession-als to make their lawn more appealing. But just because a lawnlooks good now doesn't mean it will look good later. That'sbecause delicate grass can be damaged by a number of differentfactors.

Grubs: Grubs are not very lawn-friendly. Grubs are actuallythe larval stage of different types of large beetles. These worm-like creatures feed on the roots of grass and are able to kill largesections of the lawn in a relatively short amount of time. It cansometimes be difficult to discern whether grubs, drought or anoth-er other pest has damaged a lawn. One way to check is to grab aportion of the damaged lawn and attempt to peel it back. If itcomes back easily like a piece of carpet, it's likely grubs. Spottinggrubs underneath is a sure sign these larvae are killing the lawn.

Using an insecticide for grub control in July can help kill offgrubs that start hatching in August through September. Grub eggsdo well in sunny patches of lawn that are well watered. Moreshade may deter them. There's also the option of letting the lawngo dormant and not watering it, but you will be left with a brown, unappealing lawn.

Pet Urine: Pets can also damage a lawn. Pet urine can createburnt patches and significant discoloration on the lawn, particular-ly if the dog or cat uses one area consistently as their potty zone.

The best way to prevent urine damage is to walk your dog sothat he or she will not have free reign of the yard. However, sometimes dogs get out or stray cats and dogs visit your yard andrelieve themselves without your knowledge. So this method is notfoolproof. Therefore, you should take added action to maintain alush lawn.

First, make sure that soil and lawn is in good health by fertiliz-ing and taking care of it properly. Second, water can dilute urineand neutralize its corrosive properties. Some have found thatdiluted urine can often act as a fertilizer to grass. You may havenoticed that the outside ring of a urine-burned spot is often green-er than the healthy lawn. Try to dilute the urine prior to 8 hourshaving elapsed for the best effect.

Burrowing animals: Moles and voles are among the morecommon lawn damage culprits. Voles are small rodents thatresemble mice but have stouter bodies, shorter tails and rounderheads. They feast on everything from bulbs, succulent roots, ground cover, and even dead animals in their paths. Their burrowsenable them to move around relatively undetected, typically untilthe damage has already been done.

Moles, although they have a similar-sounding name, are notrelated to voles and look very different. They have a cylindrical

body shape with velvety fur, very small or invisible ears and largepaws for digging. Moles often feed on earthworms and othersmall invertebrates found in the soil. The burrows they create areessentially traps for the worms, who fall into the burrows, wheremoles easily access them. Moles often stockpile worms for laterconsumption in underground larders.

Moles can be controlled with traps. Finding active mole tun-nels will help you place the traps effectively to either kill or sim-ply contain the mole. The live animal can be relocated to a sitewhere they won't cause trouble.

Lawn damage can occur through a number of different factors.Finding out the cause can help you find an effective treatment.

Keep rabbits at bayThere are certain options that can keep rabbits out of the back-

yard. Some are more humane than others. Before a homeownerdecides to take rabbit control into his or her own hands, the lawsof the neighborhood should be investigated. For example, killtraps certainly will take care of rabbits, but they may not be legalin a particular area. Many also view them as inhumane and only alast resort when trying to solve a rabbit problem.

Other options involve live traps and repellents. Live traps, while effective, will only trap the animal. The homeowner willthen have to relocate it to another area.

Repellents are another way to keep rabbits at bay. There areseveral methods that may work that homeowners can try.

Thiram: This fungicide can be used on ornamental plants(ones that won't be eaten due to their toxicity). Rabbits find thisproduct repulsive. It will have to be reapplied after heavy rainsand may not be practical if pets frequent the yard.

Blood meal: Sprinkle blood meal, a high-nitrogen form of nat-ural fertilizer, or hang bags of cheesecloth containing the sub-stance around plants that should not be eaten by rabbits.

Manure: Make a solution of cow manure and water and sprayit on plants.

Pepper: Rabbits frequently sniff out their surroundings. Redpepper, cayenne pepper or even black pepper can be an irritantthat works to send rabbits away.

Mexican Marigolds: This plant is said to repel rabbits.Human scents: Some rabbits are put off by the scent of

humans in the garden. Old shoes or a piece of clothing mayachieve this. However, chances are rabbits have grown accus-tomed to the smell of humans and are bold enough to enter thegarden.

Dogs and cats: Some rabbits will not visit lawns in which catsand dogs have staked their claim.

Corncobs: Soak used corncobs in vinegar and place aroundthe garden.

Hair clippings: Some people say that hair clippings from thebarber shop will deter rabbits.

Culinary treats for your Christmas in JulyCelebrating Christmas in July? Then

what celebration is complete without thevarious goodies synonymous with theholiday season? This July, take a breakfrom backyard barbecue fare and cook upculinary treats with a holiday theme.

Just about everyone looks forward toseasonal sweets, but you don't have towait until December to get creative withyour favorite holiday indulgences.

•Rethink your cookies. When it comesto culinary delights, there's nothing wrongwith sticking to the basics. But if youwant to put a twist on tradition, considersome alternatives to the holiday cookiesampler, such as cookies with personal-ized messages. Give these cookies out asgifts, but not before filling decorative jarswith all of the dry ingredients needed foryour favorite cookie recipe.

•Take a dip. Dipping store-bought con-fections, such as peppermint sticks, candycanes, candied orange peel, shortbreadcookies, or even fresh figs in good-quali-ty chocolate (a mix of dark, milk andwhite chocolate is even better!) will trans-form these everyday items into tasty, holi-

day-inspired treats.•Think drinks. Though it might be hot

outside, nothing says holidays like hotchocolate - especially when it's home-made. Make your own mix with groundchocolate and sugar or package a high-quality store brand in a festively decorat-ed jar, then add some peppermint sticks,chocolate-coated spoons or homemademarshmallows to the mix.

•Have a jam session. Handmade jams, preserves and fruit compotes are alwaysappreciated. Your creation can be accom-panied by some scones or some greattoasting bread.

•Bark that's as good as its bite.Chocolate bark is a delicious no-baketreat that's so easy to make you'll wonderwhy you've waited so long to try it.Recipes are everywhere, and you can cus-tomize the bark with your favorite nuts, dried fruits and other tasty tidbits.

Chocolate and cookies will please yourfamily and any guests celebratingChristmas in July, but another way toevoke the spirit of the holiday season is tocreate themed baskets of food that are

often gifted during the holidays. Sharethese gifts with friends and family, someof whom you might not have seen sincelast Christmas. These gift basket ideas aresure to get friends and family geared upfor the holiday season, even if it is onlyJuly.

•Breakfast basket: Fill a basket withhomemade pancakes and waffle mix anda bottle of real maple syrup, or go conti-nental with a batch of freshly bakedscones and a jar of lemon curd. For thecaffeine lover, use two mugs, one filledwith a favorite gourmet coffee or tea andthe other packed with some homemadepastries or a jar of jam.

•Pasta basket: The centerpiece of thisgift could be a jar of your famous tomatosauce, which is surrounded by a packageof fresh pasta, a bulb of garlic and awedge of Parmesan cheese.

•Pizza basket: Start with a package ofhomemade pizza dough, add a jar ofpizza sauce or pesto made from the basilin your garden, then decorate the basketwith a merry mix of cheeses and popularpizza add-ons, such as pepperoni, olives,

olive oil, garlic, mushrooms, sundriedtomatoes, and small packets of spices, such as oregano or red pepper flakes.

Everyone enjoys holiday cook-ies, even in the middle of sum-mer.

Hot dog eating contests are popular

Put safety firstAmerica is turning another year older, and the skies

will soon be filled with showers of lights. Dependingupon where you live, you may be able to put on yourown fireworks display. Just make sure you're carefuland follow these safety tips

Check local ordinancesMost areas have rules in place regarding fireworks.

Find out what is permitted in your area and abide by it.If fireworks are not allowed where you live, go some-place where they are or check out an area show.

Buy from a reliable retailerIf fireworks are permitted in your area, make sure

you purchase them from a good source. You don't wantto end up with a bunch of duds or illegal fireworks.Steer clear of any fireworks that appear suspicious andnever attempt to make your own.

Set up a good launch siteChoose a large, open area outdoors to launch your

fireworks. Have a hose, bucket of water or fire extin-guisher on hand just in case a fire should break out.Have a first aid kit on hand should an accident occur.

Use fireworks properlyRead the manufacturer's directions on the packaging

and follow it. Never alter or combine fireworks. Neverlight fireworks in glass containers or in your hands.Wear safety glasses and stand back when lighting fire-works.

Supervise the use of fireworksFireworks can cause serious injury-even sparklers

which can get hot enough to melt metal. Have a respon-sible adult on hand to supervise all firework activitiesinvolving kids and teens. Encourage kids to never pointfireworks at each other. Keep young children away fromthe launch site. Insist that teens follow the manufactur-er's recommendations when lighting fireworks.

Dispose of fireworks properlyNever attempt to relight fireworks. If they are duds,

douse them with water and dispose of them in the trash. After a firework has been lit, give it time to cool, douseit with water and dispose of it in the trash. Never leavethe disposal of fireworks to young kids. They could pickup something when it is hot and burn themselves.

Every year, hundreds of people wind up in the emer-gency room due to a fireworks injury. Don't let it hap-pen to you. Put safety first, follow the tips above and erron the side of caution at every turn!

Check out an Independence Day celebration, andchances are you'll catch a patriotic song or two. Thereare many tunes that suit the occasion from "BattleHymn of the Republic" to "My Country, 'Tis of Thee"to the national anthem "The Star-Spangled Banner."The origins of patriotic songs vary, and sometimes thepenning of one song can lead to the penning of another,as was the case with Irving Berlin's "God BlessAmerica" and Woody Guthrie's "This Land Is YourLand."

While he was revising "God Bless America," singerKate Smith contacted Berlin and asked him for a songshe could perform for her radio program in honor ofArmistice Day. Berlin gave her "God Bless America,"and it was an instant hit. Not everyone, however, fell inlove with the song. Folk singer Woody Guthrie thoughtit was too idealistic with its portrayal of America as "aland so fair." Guthrie had grown up in rural Oklahomaduring the Depression and knew that the distribution ofwealth in America was far from equal.

Guthrie decided to pen a patriotic tune that reflecteda more accurate picture of America. The result was

"This Land Is My Land." Guthrie based the song'smelody on the Carter family's recordings of the Baptisthymn "When the World's on Fire" and "Little Darling,Pal of Mine." He made his stance on class inequalityclear throughout the song, in particular in this verse:

There was a big high wall there that tried to stopme;

Sign was painted, it said private property; But on the back side it didn't say nothing; This land was made for you and me.As with most folk songs, the lyrics of "This Land Is

My Land" are often altered to suit a particular time andpurpose. Guthrie, himself, offered up many variations, depending upon the circumstances at the time. Thesong, which was published in 1944, has been per-formed numerous times over the years by numerousperformers, often with the lyrics changed.

While they may not reflect America in the sameway, "God Bless America" and "This Land Is MyLand" are popular patriotic tunes. There have beenmany fine performances of the songs over the years, and more are sure to come!

Fourth of July celebrations are usually filled with allkinds of fun from carnivals to concerts to contests.Check out any city celebration, and chances are you'llfind some sort of fun event, even if it's just a picnic andfireworks display. Over in Coney Island, in Brooklyn,New York, you can catch the world-famous Nathan'sFourth of July Hot Dog Eating Contest.

First held in 1916, the Nathan's contest brings togeth-er several contestants to devour as many hot dogs asthey can in 10 minutes. Thousands of people are on handto check out the action, and in 2011, millions of viewerswatched it live on TV. Contestants must be 18 and meetspecial criteria. Winners receive a trophy, some hot dogs,a belt and sometimes a cash prize.

In order to win Nathan's or any hot dog eating con-test, contestants must have a method of attack. It is notenough to shove a hot dog down your throat. The bestcontestants have their own unique method of eating. Some consume the hot dog whole, while others break itapart. Here is a brief list of techniques:

• Buns & Roses. In this method, contestants swayfrom side to side while eating to move the food down-ward and speed up digestion.

• Carlene Pop. In this method, contestants jump anddown while eating to move the food downward andspeed up digestion.

• Solomon Method. In this method, contestants sepa-rate the hot dog and bun, break the hot dog in half, popboth halves in their mouth to eat, dip the buns in waterand slide them down next.

• Tokyo Style. In this method, contestants separate thehot dog and bun, using one hand to eat the hot dog andthe other to dunk the bun in water and make it easier toconsume next.

• Julieting. In this method, contestants cheat by toss-ing the buns over their shoulder rather than eating them. This method usually results in disqualification.

In order to be a champ, contestants must prepare forthe event. Some fast, some go on liquid diets, and someeat very little on the day of the event. Practice is impor-tant, not only for finding the right technique but for fine-tuning it. Training is equally important for staying ingood health.

Hot dog eating contests can be great fun to watch andto participate in. If your local Fourth of July celebrationhas one, consider checking it out.
