LYSOZYME

Lysozyme is one of the most powerful natural antibacterial compound known to man, used in foods and pharmaceuticals for over three decades for its natural inhibition of several spoilage organisms, which increases the shelf life, ensures food safety and boosts the immune system.

The perfect natural alternative to synthetic preservatives for organic, crafted and minimally processed foods, lysozyme is an efficient solution to reduce the overuse of antibiotics, it can replace chemicals in many food and phar-maceutical applications. Ovotransferrin or Conalbumin belongs to the transferrin protein family and entails both iron-transfer and protective activities.

Ovotransferrin is an iron-binding glycoprotein, found in hen egg white, belonging to the family of transferrin iron-binding glycoproteins. All transferrins present two different soluble glycoproteins with different functions: (a.) serum transferrin that is present in plasma and committed to iron transport and (b.) iron delivery to cells and natural immunity .

Ovotransferrin, with a molecular weight of 76 KDa, comprises approximately 13% of the protein content of egg albumen making the iron in a bacterial culture medium nutritionally unavailable to potentially harmful micro-or-ganisms.

Ovotransferrin like lactoferrin, is used as a preservative, anti-viral and anti-microbial substance and in many appli-cations including iron delivery. Ovotransferrin is available as Active Pharmaceutical Ingredient (cGMP API) for veterinary use.

EGG PROTEINS

Eggs are a rich natural source of proteins with different properties and functionalities. Bioseutica is very expert in the extraction and purification of egg proteins with its Egg Proteins division.

Our proteins are extracted from natural, renewable sources of hen egg-white suitable for human consumption and prepared without the use of GMO or recombinant technologies. These products can be offered in different grades: food, pharmaceutical and technical grade. However our versatile production technology and extensive GMP capabilities allow us to meet a full range of customer-specific quality requirements. Eggs and flocks are closely monitored by veterinary authorities in each respective country, ensuring the safety and quality of our source materials. The sourcing of European egg white made from hen eggs in our EU plants is in full compliance with the EU directives1 concerning the production of foodstuffs.

For each egg-derived proteins batch we guarantee complete traceability which drives back to the laying farm of the eggs used and the laying date.

TRYPSIN is a naturally occurring pancreatic protein that plays an important role in the human diges-tive system. When active, TRYPSIN contributes to protein digestion by hydrolyzing bonds whose carboxyl groups are contributed by lysine (Lys) and arginine (Arg).

Trypsin and Chymotrypsin are classified as serine proteases, with specific cleaving characteristics. Trypsin prefe-rentially hydrolyses bonds whose carboxyl groups are contributed by lysine (Lys) or arginine (Arg). Chymotrypsin hydrolyses peptide bonds involving phenylalanine (Phe), tyrosine (Tyr) and tryptophan (Try). Pancreatic enzymes effectively hydrolize a variety of proteins and lipids, using the same natural process as the human digestive system.

TRYPSIN PREPARATIONSFOOD - VACCINES

These purified powder products are standardized using a variety of excipients to meet specific cus-tomers’ need for specific trypsin, chymotrypsin and protease activities.

These special enzyme preparations are used in vaccine manufacturing in the trypsinization step of cell detach-ment and propagation. Some of these specialized preparations are formulated to facilitate hydrolysis of a variety of food matrices such as whey and milk proteins. The enzymes present in these preparations convert the native proteins into products of reduced allergenicity acting as processing aids.

These preparations are widely utilized in food processing:

The mammalian pancreas secretes a magnificent range of enzymes that collectively can reduce virtually all digestible macromolecules into forms that are capable of, or nearly capable of being absorbed. Three major groups of enzymes are critical to efficient digestion.

Pancreatin is the scientific name of these preparates that contain pancreatic proteases, amylases and lipases.

The two main proteases are trypsin, chymotrypsin. Each of these enzymes hydrolyze specific bonds in the protein molecule. In addition to the proteases, amylases and lipases, the pancreas produces a host of other enzymes including ribonuclease, deoxyribonuclease, gelatinase, carboxypeptidase and elastase. NON-MAMMALIAN PROTEASECELL BIOLOGY

AQUATRYP® is conveniently prepared in modified Dulbecco media (IMDM) containing EDTA at ready-to-use concentrations that ensure efficacy in cell culture applications but at concentrations that do not impact cell viability or health.

Trypsin is a widely used serine-protease extracted from mammalian pancreas and utilised in many applications including biological research, food processing, cosmetics, and the pharmaceutical and nutraceutical industries. In cell biology, trypsin is used extensively in cell dissociation and cell harvesting as cells adhere to one another and to their containers. Traditionally, proteases were obtained from mammalian sources.

However, due to the increasing volatility of the mammalian pancreas market and the threat of viruses, Bioseutica has developed AQUATRYP®, a non-mammalian substitute containing proteolytic and collagenolytic activity for use in cell culture applications.

AQUATRYP® is a non-mammalian source of proteolytic and collagenolytic activity ideal for in-vitro cell dissocia-tion applications.

PLA2EMULSIFIERS - LOW FAT FOOD

PHOSPHOLIPASE A2 (PLA2) can be used in the production of heat-stable egg yolk. Enzyme modified egg yolk offers several benefits in various food systems, including mayonnaise, sauces, dressings, baking and ice cream.

PLA2 is a standardized product, which cleaves the fatty acid at the second position in phospholipids. PLA2 hydrolized yolk has demonstrated superior stability at retort temperatures above 150˚C when used in certain food systems (e.g. mayonnaise). This stability allows for the incorporation of pasteurization into processing, which is critical for microbial quality and which also contributes to increased shelf life. PLA2 comprises a superfamily of intracellular and secreted enzymes that catalyze the hydrolysis of the sn-2-ester bond of glycerophospholipids to yield fatty acids (such as arachidonic) acid and lysophospholipids.

PLA2 is used extensively as a processing aid in many food applications, including:

� Enzymatic degumming of vegetable oil;� Low fat cheese and dairy production;� Improving the heat stability and emulsifying properties of egg yolk and soy products;� Promoting antibacterial activity against both GRAM-positive and GRAM-negative bacteria;� Preventing oiling out during cheese production, thereby increasing yield;� Pharmaceuticals
