Pre-heat oven to 160c 325f Gas mark 3Use a 20cm loose bottom cake tin

• Crush the ginger and digestive biscuits into fine bread-crumbs and mix together.

• Melt the butter and grease the tin. With the remainingbutter add to the biscuits and mix well, press firmly intothe base of the cake tin and bake in the oven for 5minutes.

• Place the cream cheese, sugar, cornflour and lemon zestin a large bowl and beat until smooth.

• Pour the whipping cream in slowly beating all the time;continue to beat adding eggs and vanilla essence. Themixture is ready when it is very thick and creamy, youshould be able to spoon it into the cake tin.

• Bake in the oven on the middle shelf for 45-50mins andkeep checking towards the end of the cooking time - donot let the top go too brown, it just needs to be springy totouch.

• After cooking remove from the oven and do not take it outof the cake tin until it has cooled.

• When cool decorate with sliced strawberries.• Thin the strawberry jam down with a little boiling water

and pass through a sieve then with a pastry brush glazethe strawberries.

6oz 175g digestive biscuits

3 oz 100g ginger biscuits

3oz Butter

8oz 225g castor sugar

3 tablespoons cornflour

1lb 11oz 750g full fat creamcheese

2 medium eggs

1 unwaxed lemon

11floz 300ml whippingcream

1 teaspoon of vanilla extract

Strawberries for decoration

2 teaspoons strawberry jam

With the World cup upon us you can be forgiven for wanting to think about your holiday. I was luckyenough to visit South Africa and Swaziland recently and enjoy the vast contrasts that you can enjoyin this fascinating country. My flight took me non stop from London to Johannesburg and I was soonrelaxing in my hotel. The next morning we headed off to the Kruger National Park where we enjoyeda full day`s game viewing. This internationally renowned game reserve consists of nearly 2 millionhectares. Look out for lion, elephant, buffalo, rhino and leopard. We did our safari in an open sided4x4 vehicle which gave us a great opportunity to get very close to the game. The highlight of mysafari was when two elephants crossed in front of us on their way to their watering hole. You rarelyget so close to the animals in their natural habitat - what a great experience! The next day we headedoff to the tiny kingdom of Swaziland visiting the famous Ngwenya glass factory. We stopped atseveral roadside markets where I purchased some lovely hand made carvings. We were told tobarter but I felt so sorry for the chap that I felt it was wrong to pay any less than the £6 asked forthese beautiful traditional gifts. We continued our journey passing traditional round huts and endlessvistas towards our destination of St Lucia. This is a World heritage site and home to hippo, crocodileand no less than 367 bird species. Soon my time in Swaziland had come to an end as we headed offfor Durban airport for an overnight stay. An early transfer to the airport and we were soon on our wayto Port Elizabeth and our next stop of Knysna. This resort is right in the heart of the garden route andyou can cruise on the vast Knysna lagoon and visit the Featherbed Nature Reserve. Enjoy an amaz-ing view of the sandstone `Heads` which guard the sea entrance to Knysna`s huge tidal lagoon, andthe forests, marshes and the pristine beaches beyond. Our next stop was onto Capetown where westopped enroute at Mossel Bay to visit the post office tree, arriving in Capetown late afternoon.Capetown is home to Table Mountain where you can take the cable car up to the top or if you are notthat adventurous why not spend a relaxing day in the famous V&A waterfront?

Many of us at some point in our lives haveexperienced an injury caused by participat-ing in sport, whether this is at an amateur orprofessional level. Athletes who par-ticipate in contact sports are said to be at ahigher risk of incurring an injury, althoughthe more serious injuries are normally asso-ciated with individual activities.Sports injuries can affect bones or tissueand these often range from simple bruising,sprains and strains to severe breaks, dislo-cations and long-term complications. Themost common sports injury is a bruise(contusion). It is caused when blood collectsat the site of an injury and discolours theskin.Fractures account for one in twenty of allsports injuries, with the bones of the armsand legs being more susceptible to breaks.Sports activities rarely involve fractures ofthe spine or skull and bones of the legs andfeet are most susceptible to stress fractures.Stress fractures occur when muscle strainsor contractions make bones bend. Theseare especially common in dancers, long-distance runners and gymnasts.

If you become injured, many of you will seekthe advice from a professional, however ifyou want to minimise the risk of becominginjured in the first place then you shouldseek advice pre-season or during your cur-rent training. As

the Wimbledon Championships reach theirfinale, many people get inspired to startknocking a ball around a court or even justagainst a convenient wall.

Tennis has a long and prestigioushistory, tracing its roots back to France inthe 12th century. An ancient ball gameplayed by French monks evolved into ‘realtennis’, a game played by hitting a ball with abare hand and later with a glove. By the 16thcentury the glove was replaced by a racquetand the sport was played in an enclosedroom. Rules were created and real tennisbecame the pastime of European royalty.Throughout the 16th and 17th centuries realtennis was enjoyed by the nobility in mostEuropean countries. However, EnglishPuritanism stifled its journey and during theFrench Revolution the game was eventuallyabandoned due to its links with thearistocracy.

In England, other racquet sportsmaterialised and while real tennis enjoyed ashort revival in Victorian times, the morepopular and accessible outdoor game oflawn tennis became the favoured sport ofboth men and women. Themodern version originated in thelate 19th century and the firstWimbledon Championships tookplace in 1877.

Whether you play on grass orother surfaces, tennis is a sportthat can be enjoyed by anyonewho can hold a racquet. It isconsidered to be one of the bestsports to play for all-round fitness.Tennis improves yourcardiovascular health, helps yourhand-eye co-ordination, flexibilityand agility while increasing bonestrength and density.

As well as physical fitness, the game isexcellent for mental agility too. It requiresalertness, tactical thinking and above all, it’sfun. Becoming a member of a club andplaying regularly leads to new friendshipsand an expanding social life.

Children can start learning to play tennisat a very early age. Some as young as threeyears old have the co-ordination to hit a balland the attention span to continue playingalthough most children may need to waituntil a little older.

Tennis is indeed a sport you can playthroughout your life. It is said that when youstop, you get old. Denmark’s Harry Meistrupplayed three times a week at the age of 104.Harry believed playing tennis was“especially significant” in his longevity. Hesaid, “I think that people who play tennis getmore out of their lives than many otherpeople. They live a more healthy lifebecause the sport demands it. When theyget older it means a lot that they havefriends. I have many good friends, who keepme in form, as I became older. I had to beable to move around to play with them. Wehave had a wonderfully good fellowship andcomfortable time after we play tennis.”

Many of us reach for food in times ofstress, but if you find this is happeningmore frequently than ever, you might havebecome an emotional eater. This meansthat, rather than eating because you’rehungry, you’re eating to calm youremotions. This can happen so graduallythat you may not be aware that you’reeating when bored, lonely or anxious.

Emotional eating is often fear-based andconnected with low self-esteem. One wayof finding out if this is the case is to ask,“What am I blocking out with this bar ofchocolate/biscuit/cake/pizza?”

Why not try letting that emotion come tothe surface without being judgemental?Very often, simply accepting the way youfeel can cause the feelings to change.

Eating junk food depletes the body ofnutrients. This can mean that you are stillhungry after a meal, even if you’ve eatenuntil you can’t fit in another mouthful! Notonly could you be left feeling unsatisfied,you could end up malnourished. Eat from awide variety of non-processed food withlots of fresh fruit and vegetables.

If you can identify your bad eating habits,it’s easier to change them. Does youremotional eating follow a pattern? Whenare you most likely to binge? When do youreach for snack food?

Rather than reaching out immediately forcomfort food, why not put some delayingtactics in place? Before you open the fridgeor packet of crisps, stand still and breatheslowly. Slow breathing helps to releasetension.

Have the phone number of a trusted

friend close at hand, one who knows you’retrying to change your eating habits. Go fora walk. Walking releases endorphins,which is your body’s natural happy drug.

During a period when you aren’t feelingemotional, make a pleasure list. Writedown all the things you enjoy doing andcan easily make into regular activities.When you’re doing something active thechances are you won’t reach for comfortfood.

On a second list, write down all the thingsyou’ve wanted to do, but haven’t got roundto. These would be special treats – thingsto look forward to. You could go for a daytrip to the beach, visit a museum, see amusical or a play, treat yourself to amassage or spa day out, or buy yourself abeautiful houseplant. You could also takeup a new hobby, such as learning to playan instrument, take evening classes inlanguage studies, or even a creative writingcourse. Basically, breaking your old habitsof emotional eating will require making acommitment to yourself.

Planning your meals and shopping with alist will help you to avoid reaching forsnacks when you’re not really hungry, butdon’t beat yourself up if you slip duringdifficult periods in your life. If you find thatyou’ve fallen back into emotional eating,accept that it’s happened and forgiveyourself. Remember, you need to identifythe underlying reason for comfort eating.

One of the things we have been thinkingabout recently in church is how light shinesin the darkness. You know the sort of thing– the difference between a little light on theend of your pen, or the light from a torch, orthe really bright light of a car’s headlightsilluminating the road and leading you homesafely.

Of course, being church, we think aboutthese things in a spiritual way as well as ascientific kind of way. There are a lot ofdark places in the world. You only have towatch the news to see that. War, starva-tion, exploitation – the world seems full of it,and yet, the human race goes on, and man-ages to rise above these things, and evensmile in adversity. So, what is it in us thatenables us to overcome the difficult, darkthings in life?

Will power is one thing that comes to mind:that desire to get on with life no matter whathas happened to us in the past. I knowmany people who have succeeded in tri-umphing over the darkness in their lives,and have gone on to live full and activelives in spite of all kinds of things - trauma,road accidents that have left them maimedin some way, childhood neglect, and healthproblems that would leave some of us com-pletely floored.

If, as Christians, we believe that we aremade in the image of God, then we have tobelieve we have some of his strength withinus to overcome the bad things that happen.To have the image of God in us is to havesome of the character of a God who lovesus and longs to help us in our lives and partof that character is inner strength.

If you are an un-believer readingthis, you mightthink that this is asimplistic view,and of coursethere is more to itthan can be putinto a little articlelike this.

You might thinkthat it is easy tohave a ‘crutch’ inlife, a ‘prop’ tolean on, andthat’s all that faith is, but you know, if youwere to speak to any one of the people Ihave mentioned above, they would tell youthat their real and consistent inner strengthcomes not from their own natural abilities,God-given as they are, but from a sourcethat is way beyond anything they couldmuster up in their own strength.

They have bad days, just like everyoneelse, but even in those bad days, they drawon the strength of God that is available tothem and with it comes the courage to faceanother day and go on.

We all would say that we can manage toshine a little glimmer of light into the dark-ness of the world, but some would say thatthe true light, the light that outshines every-thing else, is the light of Christ. Whateveryou believe, if you have a faith or no faith atall, you would be more than welcome tocome and chat to us at Whiteley Church,especially if you are experiencing darknessat this time. Everyone knows what a generally easy,rewarding and versatile the geranium(strictly speaking, Pelargonium) is, withplants capable of flowering all year round, ifgrown at the right temperature, and tolerantof erratic watering, which is handy. Soattractive and full of variety are the well-known Zonal, Regal, Angel and Ivy-leavedgroups, however, that the aromatic-leavedcultivars, which tend to have smaller, less‘look at me’, flowers are easily passedover. They are not as striking, on firstinspection, but they give lasting pleasure,once you get to know them, especially ifyou like touching your plants. Much as Ilove my ‘Lord Bute’ and ‘AppleblossomRosebud’ pelargoniums, I would neverwant to be without ‘Attar of Roses’, ‘LadyPlymouth’, Pelargonium crispum or ‘Princeof Orange’, either. I especially appreciatethem in the winter, when I recall the scentsof summer simply by rubbing their leaves.They exhibit an impressive and attractivearray of leaf shape and colour and, what ismore, are fun to make into pot-pourri oruse as flavourings in cooking.

Scented pelargoniums are not highlybred, but instead are species or derivefrom species. Any pelargonium with hairyleaves is likely to be aromatic (the scent isheld as volatile oils in the glandular hairson the stems and leaves, which are easilyreleased), but not all have a pleasantodour, by any means. But there are plentythat have.

‘Big Apple’, for example, has smooth,round leaves, which are strongly apple-scented when bruised, and small whiteflowers. ‘Attar of Roses’ has heart-shaped,grey-green, rose-scented leaves and pinky-mauve flowers. ‘Prince of Orange’, withorange-scented, glossy foliage, has

particularly large and showy flowers,consisting of pale pink petals, veined withpurple. ‘Creamy Nutmeg’ has attractivecream and green variegated leaves andnutmeg scent. The well-known ‘LadyPlymouth’ has deeply-cut, variegatedfoliage, and small mauve flowers, while‘Islington Peppermint’ has most attractiveflowers with deep red upper petals, andwhite lower ones. ‘Ardwick Cinnamon’ hasmasses of small white flowers held abovesilver-grey leaves. All have an airy charmwhich is not always evident amongst thebeefier Zonal geraniums.

light and air circulation, and are notexposed to any degree of frost. Whichmeans they can’t be left outside in thegarden or in pots through the winter. If youwant them to flower all year, however, youneed to make sure that the winter nighttemperature is 7 C or above, which meanseither a heated greenhouse orconservatory or, more likely, a warm, lightwindowsill indoors. They can be plantedout in containers or herb gardens in thesummer months. It’s best to cut them rightback to a few short stems in late summeror early autumn, so that they carry less leafthrough the winter; this reduces both therisk of botrytis (a fungal disease, ‘greymould’, which thrives in damp, coldconditions) and the amount of wateringrequired. Scented leaved pelargoniumscan get rather ‘leggy’, unless cut back fromtime to time, anyway. The gardener shouldalso consider re-potting the plants eachyear in the spring, preferably into a pottingcompost with some loam in it, such asJohn Innes No 2 potting compost. (The‘soil-less’ ‘multipurpose’ composts, which

are readily available tend to dry out morequickly, although they are suitable if youcannot find a loam compost.)

If you want to make more plants, thebest thing to do is take cuttings, in springor late summer. Summer is best if youhave no ‘windowsill propagator’ with built inheating element. All you do is cut, with asharp knife, a non-flowering sideshoot justbelow a ‘node’, that is the point from wherethe leaves grow out. Cut off the leavesnearest the cut end, and cut back the onesat the top. Put cuttings round the edge of apot which has been filled with a free-draining cuttings compost, making surethat they don’t touch each other at all.Place a clear plastic bag over the pot anduse an elastic band to secure it. You cantell when the cutting has rooted because if,you give it a slight tug, it will resist.Cuttings root in a few weeks, usually, andcan then be potted on singly. All in all, it ishard to imagine a group of plants, whichgive as much pleasure for so little trouble.
