Joan and Paul Katzeff established

Thanksgiving Coffee Company in

1972, developing a unique style of

craftsmanship-coffee roasting. Since then, they have grown

to a team of more than 25, roasting coffee in Fort Bragg’s

Noyo Harbor on the beautiful Mendocino coast.

that they use. Their style of roasting is

singularly unique. They don’t drum roast.

$3.99+crv–Directions–Preheat oven to 400˚F. Grease muffin cups or line with muffin liners.

Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder in a bowl. In a 1-cup measuring cup, place vegetable oil, the egg and enough milk to fill the cup. Mix this with the flour mixture. Fold in the blueberries, being careful to not over-mix. Fill muffin cups right to the top, and sprinkle with the crumb topping mixture.

To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter and 1 1/2 teaspoons cinnamon. Mix with a fork and sprinkle over the muffins before baking.

Bake for 20 to 25 min. in a pre-heated oven, or until an inserted toothpick comes out clean.
