light beer and the newer  “dry’  beer varieties, beer hastaken on a new image of quality.

他们的种类: 

Ale - is and aromatic malt or malt and cereal brew,usually fuller bodied and more bitter than beer. It has adistinctive fruitiness; sharper and stronger than lager. Ale-是由麦牙与谷壳物酿造,口感比啤酒更丰厚及更多苦涩味,味道更强烈。 

Bock - the German term for a strong beer Bock-德国的一种口味较强的啤 

Dark beer - usually refers to a dark brew of the Munichtype; heavier, deeper flavor

Dark beer_德国慕利黑风格的啤酒,口感厚重,颜色较深。 

Lager - any beer made by bottom fermentation; in Britain,typically golden, in continental Europe, can be dark; inGermany and the Netherlands, indicates everyday beer. Larger-所有从底部发酵的啤酒,在英国,它的颜色是金黄

色,在欧州大陆颜色可以是黑色。

Porter - an ale with a rich, heavy foam; sweeter than ale. 

Porter-属于ale啤酒的风格,有很厚的泡沫,口感比Ale甜。 

Stout - extra-dark, top-fermenting brew, can sometimesbe sweetish and has a very strong taste

Stout-颜色很黑,制作工艺是从顶部发酵,口感很强烈,带

有较浓麦芽糖香味 。 

Pilsner - a golden-colored, dry, bottom-fermenting beer;flowery aroma, dry finish

Pilsner-颜色金黄,是从底部发酵的啤酒。有清新的花香味。 

Sake - although often considered a wine, sake is actuallya beer, since it is a re-fermented rice brew; has a highalcohol content.

Sake-让人联想起清酒-日本的米酒,但它也可以酿造啤酒,

用重新发酵的米酿造啤酒,酒精较高

Light beer - lager-type beers that have a lower alcohol

and calorie content. . Light beer- Lager的风格,酒精度及卡路里更底。 

Nonalcoholic brew, or Near beer - a new breed of beersthat have no alcohol in them.

Nonalcoholic-无酒精啤酒 

Cold-filtered - beer that is not pasteurized like otherbottled and canned beers, giving it the fresh taste of draftbeer .

The procedure of serving the beer

啤酒的服务程序 

1.Take the order .*Standing strait on the right side of the guest, writing pad with captain order in the left

hand, pen in the right hand.

*Make eye contact with the guest and saying:“Make I take your order now? ” 

*Always ask the ladies first 。 

2. Write down order 

Write down the captain order should clearly, quantity, drink’s name, which

table, which guest, waitress’s name, date 

3.Repeat order 

*Repeat the beverage order to the guest after written on the order pad by

saying” Excuse me, may I repeat your order? You have order the Budweiser 

beer, will that be all?” 

* If the guest confirm then the waiter/tress should say  “Thank you,

Sir/madam, wait a moment please”

 4.Prepare the drink

*Take a chill pilsner glass from the refrigerator, ensure the glass is clean & in

good condition.

*Open the refrigerator and take out a cold Budweiser beer.

*So the Budweiser beer is in order. 

5.Pick up the drink

*Check the beverage items when placing them on a tray to help avoid mixing

up your orders with other tables.

*If the beverage is not proper prepared, tell bartender and ask him/her to re-

prepare it.*Use the left hand to hold the tray, forearm parallel with the floor. Upper arm

vertical with floor. Left hand’s fingers should be spread and divided, in

the center of the tray and underneath the tray, Palm’s center makes a

room with tray’s underneath

*Place the pilsner glass, Budweiser beer, coaster, napkin on the tray

6)Serve the drink 

1.Waitress brings the drink, napkin and coaster on tray & approach to the

right side of guest. 

2.Disturb the guest, right hand hold the bottle of Budweiser beer, show to

the guest with label facing the guest and say: “Excuse me sir/madam, you

have order the Budweiser beer, may I serve you the drink?” 

3.If the guest say yes, then use the right hand to put coaster in front of 

guest on the table, hotel logo facing the guest

4.Place another coaster upright the first one, 2 o clock position.

5.Then use the right hand to hold glass at base and place the glass on thecoaster. 

6.Turn the body around to left; keep the tray away from the guest and

place it close to your body.

Serve the drink 

7.Unscrew the top of the bottle beside the guest. Avoid the Budweiser 

beer splash on the guest.

8.Turn the body again facing the guest and table, pour the Budweiser beer 

into the glass slowly, up to 3/4 full of glass, and make 2 cm form, ensure not

spill.

9.Put the remaining Budweiser beer on another coaster, label facing theguest. 

10.Point to the drink with palm and saying:” Here is your Budweiser beer,

sir/madam, please enjoy it” 

12.Served lady first, without having to ask “who ordered what drink” 

11.During the service, the tray should be on the right side of the guest &

behind waitress’s left fore arm should parallel line with floor .
