Mixoth The 9 floor is an unusual location

for a hotel’s main lobby; however the Sofitel So takes full advantage of the city views overlooking Lumpini Park. Those mesmerizing vistas are best enjoyed as you relax in Mixo. Your eye is immediately drawn to an impressive wall of glass that reveals stunning views that are reminiscent of central park in New York City. The space is modern and open with a neutral color palate and futuristic wood and fabric chandeliersthat hang from the ceiling. Mixo serves cocktails and a small selection of appetizers, salads, sandwiches, and Thai food throughout the day. One of the more unique features is their “Create Your Own Story” cocktail.

You are allowed to develop your own signature cocktail which is then photographed, named after you, and added to a cocktail recipe book that stays on file at the bar for your next visit; whether it is next week or next year. Guests can also unwind to the sound of a live DJ mixing the sultry sounds of liquid techno jazz from 18.00 to midnight every day. Another special touch is the nightly “Candle Lighting Ritual” which takes place daily from 18.30 to 18.45. It is a soothing and almost meditative performance that takes place amid background views of the sun gently setting on the city. Both male and female dancers engage in a contemporary Thai performance which culminates with the lighting of all the candles in the lobby and bar. It has a relaxed and dreamlike quality that sets a wonderful tone for a memorable evening ahead.

Park Society

th

Park Society is re-defining fine dining in Bangkok. It is neither pretentious nor overbearing, but instead reflects a modern and easy going approach that will appeal to people who are passionate about food and really love to eat. Open only for dinner and located on the 29 floor, Park Society takes full advantage of its captivating city views and boasts

plenty of glass walls, reflective metallic gold surfaces, high ceilings, mirrored partitions and soft lighting.

The ambiance is warm and inviting with an awe-inspiring “Chef’s Table “concept.

You are invited to “raid” the chef’s pantry; pick from the freshest globally sourced

ingredients, and have the chefs tailor a personalized menu based on your individual preferences. It is the ultimate “food lovers’ fantasy” as you are guided by the chef through the gourmet ingredients and advised where and how each item was sourced. It is all about fresh seasonal ingredients and they epitomize the farm to table philosophy of cooking.

Headed up by award winning Executive Chef Nicolas Vienne from

France and Head Chef Paul Smart from Australia, the cuisine is well

calculated and expertly prepared in a deceptively simple manner that respects

and elevates every ingredient on the plate.

The name may be a bit cheeky, but the views from Hi-So are uncontested. This is the place where you will find rooftop VIP treatment and where unobstructed city

views, private cabanas, a full bar, and personalized butler service all conspire to put a bit of romance

into even the most cynical of hearts. There is a service charge for the cabanas and they should be reserved ahead of time. Selected dishes from the Park Society menu can be served if you would like to dine, but it is best experienced as a romantic reprieve in which to share cocktails or perhaps a bottle of champagne and dessert on the roof. If privacy, romance and pure relaxation

is what you desire, then be sure to experience Hi-So on your next visit.

BANGKOK LANGSUAN

HOTEL

HOTEL MUSE BANGKOK LANGSUAN

55/555 Langsuan Road, Lumpini, Pathumwan 0 2 630 4000 Hotel Muse offers old world personality and charm Walking into Muse is a bit like love at first sight. It has a unique quality that makes it unlike any other hotel in the city. The concept of the hotel is the “Golden Age of Travel’ which is around the late 19 and early 20 century. Motivated by a desire to blend Europe and Thai design, Muse effortlessly creates an ambiance

thth

15

Page 18: Bangkok Best Dining June 2012 Issue

of chic cosmopolitan style and grandiose escapism. The first impression is that it has an overtly masculine feel to it; with its dark color palate and generous use of iron and wood, yet there are many feminine details that soften the décor and bring balance to the overall look. Muse is quite successful at seamlessly blending Thailand’s King Rama V architecture and design with European aesthetics and highly coveted modern conveniences. The hotel has a cohesive concept that is carried throughout all outlets in a clever and pleasing way. What really sets this hotel apart is that it truly has the ability to transport you to another place and time. From the moment you enter the premises the journey begins, one minute you are on the busy streets of Bangkok; the next you are in an oasis of upscale sophistication and timeless elegance. With a Thai restaurant, an Italian restaurant, a lounge, and two themed bars, Muse has much more to offer than what meets the eye.

Le Salon The discerning traveler theme is easy to recognize in Le Salon. Designed to resemble an opulent living room, this area is an eclectic mix of modern and vintage design elements. LCD TV’s sit in ornate picture frames on the walls, as antique trunks and luggage are comfortably mixed with plush black velvet furniture. The room beckons you to stay for while, and have a cocktail or a glass of wine. There is a well stocked bar in this area, so it is perfect for enjoying a “before or after dinner” drink. As you listen to the soft jazz music that fills the room, we recommend a glass of Banfi Fumaio Chardonnay/Sauvignon Blanc Blend, 2009, which is very light with soft fruity notes. Le Salon additionally offers guests High Tea, which is served everyday from 14.00 to 16.00. Priced at 650 baht for two, it includes a choice of specially selected international teas and an array of sweet and

savory snacks, sandwiches, cookies, scones and jam. Whether it is high tea or cocktails that draw you in, Le Salon is a natural place to congregate and relax with friends.

Medici Medici is a basement venue located at the bottom of a dramatic

and winding staircase. It is overtly grand and you genuinely feel as if you

have stepped into a bygone era. You are surrounded by wooden wine barrels, wrought

iron gates, warm wood and brick façades and comfortable oversized leather furnishings. The addition of a visually appealing wine

bar and an open kitchen where you can view the chefs making fresh pasta,

18

Page 21: Bangkok Best Dining June 2012 Issue

all conspire to create a seductive atmosphere that is informal yet elegant. The menu is created by Tuscan born Chef Francesco Lenzi and he painstakingly sources specialty ingredients from Tuscany. Another highlight is that all the wines served are from Italy and they have a nice selection available by the glass and the bottle. To start your meal off we recommend the Tagliere di Salumi Misti, which is an imported cold cuts and cheese platter. It features specialty cold cuts that the chef handpicked while in Italy such as Lardo, Brelondo and Porchetta as well as favorites like Prosciutto Di Parma and Pecorino Paglia. It is salty and satisfying and is somehow made magical when paired with a nice red wine like the Banfi Toscana Col Di Sasso Cabernet Sauvignon/Sangiovese Blend, 2009. For a main course the Filetto alla Rossini is a real show stopper. It is a 150-day grain fed beef tenderloin from Tasmania that is grilled and then topped with foie gras & black truffle. It is easy to abandon all reason as you dive into this hedonistic dish that tastes as brilliant as it looks. For something lighter try the Homemade Tagliatelle Pasta in White Wine Sauce with Rock Lobster, Cherry Tomatoes & Fresh Italian Basil. It is bright and summery and is in a light sauce that is permeated by the luscious aroma of the lobster. When paired with a glass of Banfi Le Rime Chardonnay/Pinot Gringo Blend, 2010 it defies all expectations. Medici is a captivating mix of cosmopolitan Italian cuisine and neo-industrial design that makes every meal feel like a special occasion.

The Speakeasy Inspired by the speakeasies found during America’s 1920-30’s prohibition era, this venue is all about privacy and discovering what hidden pleasures await. Indulge in clandestine rooms, discover secret doors and experience ultra-privacy. In addition to the terrace bar, you will find a hidden door through which leads to private rooftop domes. You should call ahead to reserve the domes or you can just chill out on the rooftop lounge. At the Speakeasy it is all about the forgotten cocktails and you can enjoy forbidden favorites like absinthe or a formidable old fashioned Whiskey Sour. The menu is an appetizing mix of international finger foods from Japan, Thailand and India. The specially blended Wagyu Beef Mini Burger is quite tasty and the Indian inspired Grilled Lamb Brochette is also very tender. We also recommend the Pan Fried Scallop or the Tuna Tartar with Avocado in Sesame Dressing. Recently super-sized cocktails have been added to the menu. The most popular is the 2 liter cocktail for 1000 baht and the 4 liter cocktail which made with an entire bottle of premium alcohol. You have a choice of what

20

Page 23: Bangkok Best Dining June 2012 Issue

type of cocktail you desire, and it is highly recommended that you share these oversized libations. Open late, the Speakeasy is an obvious choice for those looking to while away a few indulgent hours.

Su Tha Ros Su Tha Ros has the endearing ability to serve truly authentic Thai cuisine in an upscale environment that is unexpected. The venue is captivating and romantic with a contemporary mix of eastern and western elements. It is an evocative mix of soft lighting, leather furnishings, silk drapery and a metallic color scheme. They boast an impressive wine cellar and several private dining rooms with elegant city views that make it extra special and easy to feel like you are dining in a luxurious villa or private estate.

The menu is created by Executive Chef Purida Theeraphong and features exquisite dishes from many regions throughout Thailand. Begin your meal with Pan Fried Scallops with Lemongrass, Chili & Lime followed by Gaeng Daen which is a spicy red curry with coconut milk, de-shelled crab meat and green vegetables. It is smooth, rich, and delivers a spicy heat with a luxurious and creamy finish. The Massaman Curry is also surprisingly delightful. Made with lamb instead of beef, the meat is slow simmered for more than four hours and is served with potatoes and pearl onions in a sweet and savory sauce that is bursting with aromatics like cinnamon and star anise. Another sophisticated offering is the Rock Lobster. Priced at only 490 baht, you can choose the sauce you want it cooked in. We recommend the Rock Lobster with House Special Red Curry Sauce as it takes on a mild and earthy flavor profile when grilled with the lobster. You may also want to try the Barbequed Duck in Red Curry with Coconut Milk & Green Peppercorns. The duck is perfectly cooked and the serving is large enough to share between several people. For dessert we recommend the Lemongrass Ice Cream which is light and refreshing and tastes more like a sorbet than traditional ice cream. Su Tha Ros is the ultimate in upscale Thai dining where distinctive and vibrant Thai favors can be experienced in a truly memorable way.

Arguably, the Blind Pig is one of the most unique outlets the hotel has to offer. Hidden behind two massive wooden doors, it is a secret treasure where the best in Cuban and Dominican cigars and top shelf spirits are at your beck and call. If you have never tried cigars, start off with either a Cuban Hoyo de Monterrey Epicure No.2 for a gentle, light to medium bodied smoke or the Partagas Serie D No.4 for a more full-bodied Cuban experience. They offer an impressive array of cigars and aged spirits, as well as blended and single malt Scotch whisky. You will also find aged tequilas, dark rums, and even a list of cocktails such as Mojito, bourbon cocktails and sweet juleps that fit the mood and tones of a cigar lover’s palette. The Blind pig has successfully paid homage to the “era of decadence” in a playful way that feels very authentic.

Okura Prestige is one of the most intriguing new hotels in the city; it is a place where the future of eco-friendly design and urban style and charm go hand and hand.

Page 27: Bangkok Best Dining June 2012 Issue

th

The Okura Prestige is the first premium luxury property to be launched by the Okura family of hotels which has been around since 1962. This Japanese owned company is redefining modern Japanese luxury with a contemporary new property that will appeal to anyone who enjoys the finer things in life. Located in the newly constructed Park Ventures Ecoplex, Okura Prestige is one of the city’s cutting edge green construction projects. The Ecoplex is well known for its functional, energy efficient concepts, as well as its unique architectural design which takes its inspiration from the shape of the hands when engaged in the iconic Thai ‘wai’. The Okura Prestige is on trend with a growing number of new properties in that they have placed their main lobby on the 24 floor in order to take advantage of the city views. The main lobby is flanked by two of the restaurants; Yamazato and the Up & Above Restaurant which features an attached outside sky-bar that is dynamically pinned to the west side of the building. The main lobby itself is expansive with incredibly high ceilings and

a dramatic staircase near the elevators that lead up to their flagship international venue Elements restaurant. The overall

feel of the hotel is a bit formal, which may be due to the gray and black color scheme, the generous use of marble and metal

details plus fixtures used throughout. Despite its austere appearance, it manages to remain very comfortable

and inviting. With seamless access to different major outlets from the lobby and a chic, modern ambiance;

The Okura Prestige is delivering an innovative concept of what hotels

should offer in this city.

25

Page 28: Bangkok Best Dining June 2012 Issue

Over the past few years Japanese food is as common in Bangkok as American fast food. Nevertheless while diners may have more access to this once exotic cuisine, we seem to suffer from a lack of authentic Japanese experiences. Yamazato in the Okura Prestige is quickly defying expectations and raising the bar for exquisite Japanese fine dining. With an artistic and creative origami inspired decor, it is truly an oasis. The restaurant uniquely boasts no less than five highly skilled Japanese chefs recruited from Japan; which is practically unheard of in Bangkok. You will also discover an authentic menu that introduces guests form of Japanese haute cuisine that is traditionally served in banquets. Guests can choose to dine in one of the relaxing private dining rooms, or take in lovely views of the skyline in the main dining room. The teppanyaki bar and the sushi bar are in dedicated sections of the restaurant, but each showcases up-close and personal views of the city behind the stations where the chefs prepare your meal. Another thing that sets the venue apart is that they are the only hotel in Bangkok to offer guests an authentic Japanese breakfast. Guests can also enjoy daily lunch specials featuring set entrees and unique rice boxes, as well as a variety of noodle dishes. No matter what you choose, the focus is always on preparing traditional dishes that do not compromise on quality 26

Page 29: Bangkok Best Dining June 2012 Issue

ingredients or time honored taste and techniques. In order to get the full VIP experience, we recommend that you come for dinner. For a starter the Sesame Tofu with Sea Urchin is sublime. The tofu is made from sesame instead of soy which imparts a remarkable hint of nutty and smokey flavor that is amazingly sensuous and silky. The Sea Eel with Pickled Ginger is another brilliant offering. The eel is amazingly fresh and it is allowed to take center stage as it is enhanced by a minimal amount of the sweet tsume sauce and the mild pickled ginger. The Clear Clam Soup is another dish you do not want to miss. It has a deep and intense aroma of clams that permeate every molecule of the broth. Served piping hot in a clay pot, it is satisfyingly warm and comforting. Next we recommend the sashimi and hand rolled Nigirizushi, where the precision and skill of the chef; as well as the quality of the fresh fish flown in from Tsukiji, is undeniable. The Toro; also known as the fatty belly meat of the tuna, is exquisite as the delicate meat literally dissolves on your tongue. The sashimi also includes a sweet and succulent shrimp imported from Japan that is unlike anything you can find in Thailand. One bite is all it takes

to become convinced that every other experience you have had eating sashimi is secondary. For a main course we recommend indulging in a bottle of sweet Sparkling Sake which is reminiscent of champagne and ordering the Premium WAO Beef Tenderloin with Vegetables. This masterpiece is slightly seared and served on a ceramic hot plate where it delightfully sizzles away. This flavorful and fatty beef just melts in your mouth and it is as close to perfection as a dish can get. We recommend ending the meal with Silken Tofu Pudding which has a nice sweet red bean paste at the bottom. The Yuzu Sorbet is also wonderfully sharp and refreshing. Everything at Yamazato, from the menu to the service and ambiance, feels like the genuine article. This is the place where you can discover impeccable versions of traditional Japanese cuisine that are creatively prepared and presented in a manner that will be sure to delight all of your senses.

Road, Plaza Athenee, A Royal Meridien Hotel from

The restaurant’s creative Chef Kam’s quest for

constant renewal has inspired him to throw a special

spotlight on arguably the four principle traditions in

Chinese cuisine, equating geographically to Beijing,

Cantonese, Hong Kong and Szechuan.

Szechuan cuisine is famed for bold flavors, particularly

the pungency and spiciness resulting from liberal

use of garlic and chili peppers, as well as the unique

flavor of the Sichuan peppercorn. Peanuts, sesame

paste, and ginger are also prominent ingredients

in Szechuan cooking.

Recommended Menu: Fried Maine lobster

with Si-Chuan bean curd and Sautéed

Maine lobster with Yu-Jiang sauce.

Hong Kong cuisine is

influenced by Cantonese fare

and parts of non-Cantonese -

speaking China, the Western world,

Japan and Southeast Asia; reflecting its

past as a British colony and its long history

as an international city of commerce. Complex

combinations and international gourmet expertise

have given Hong Kong an enviable reputation as a

gourmet’s paradise.

Recommended Menu: Fried blue crab with Shang-Hai

sauce and Sautéed blue crab with marinated pork sauce.30

Page 33: Bangkok Best Dining June 2012 Issue

Cantonese has long been a trading port and many

imported foods and ingredients are used in Cantonese

cuisine. For traditional Cantonese cooks, the flavors

of a finished dish should be well balanced, and never

greasy. Spices are used in only modest amounts to avoid

overwhelming the flavors of the primary ingredients

which should be at the peak of their freshness and

quality.

Recommended Menu: Fried Maine lobster with Silk

Road sauce and Sautéed Maine lobster with XO sauce.

Beijing cuisine is also known as Mandarin cuisine.

Since Beijing has been the Chinese capital

city for centuries, its cuisine has been

influenced by culinary traditions from

all over China, but especially Shandong.

Another Chinese cuisine that

influenced Beijing cuisine was

the Chinese Imperial cuisine

that originated from “The

referring to cooking facilities

inside the Forbidden City .

Among these recognitions include awards for the JW Marriott Bangkok’s New York Steakhouse, Tsu and Nami Japanese restaurant and Man Ho Chinese restaurant. He has also been recognized by Marriott, having been awarded the top ACE award for the globe. One of Chef Michael’s earlier positions with Marriott was at the Hyderabad Marriott Convention Center, where he was responsible for putting the hotel’s stylish dining outlets on the map. He was also proud to be part of the opening team of Renaissance Ratchaprasong Bangkok as Executive Chef, where he successfully wowed Thai residents and clients with high quality and creative menus. His Executive Sous Chef experience also includes the Marriott Resort Surfers Paradise, where his restaurant won a coveted Best Family Restaurant Award from the Australian Hotel Association. He has many other accolades to his credit as well, and takes great pride in being awarded “Chef of the Year” twice back to back in 1998 and 1999 while he was with the Conrad Jupiter. Chef Michael’s favourite ingredient to cook with is fresh wild caught fish; growing up in a small costal community in Australia has given Michael a love for water and all that swim in it. He believes in freshness bringing out the best flavor, letting natural tastes shine. Chef Michael also has a tremendous respect for historical origins of dishes, and looks for inspiration from the masters of the past. When talking about cookbooks, the Chef says, “I love the perfection of Chef Kella. I also like o l d t i m e a n d s t y l e cookbooks. I will look in second hand book shops; you can come across real gems. Historic cookbooks make for interesting and thought provoking moments that generally lead to creation.”

Ingredients for the Sauce40 - 50 grams Peeled chopped shallots15 - 20 Cracked black pepper corns2dl (8oz) Veal stock1 dl (4 oz) Port wine or similar strong red wine 50 dl (2 oz) Madera 6 Whole Morel dried soaked 80ml of hot water Salt and white pepper from the mill30 - 40 grams Refrigerated butter cut in small cubes

Ingredients for Foie Gras4 x 35 grams Foie Gras Salt and pepper from the mill

Season the foie gras on all sides. In a hot pan sear the foie gras and allow it to color to a light brown without burning. Place on a tray ready for service. When assembling, place the dish in the oven at 175 F for 5 minutes or until cooked to your liking.

How to make the sauce 1. Melt the butter in a thick bottom sauce pot; add shallots and stir-fry until translucent and most of the moisture has evaporated. 2. Add the cracked black pepper corn and continue frying until the shallots are golden brown and the pepper is well toasted. 3. Deglaze with the red wine and let boil until most of the wine has evaporated and it is a syrupy consistency. At this stage add the Madera, ½ of the morel juice and let it boil until it has reduced by half of the original quantity. Add in the veal stock and let simmer gently until the sauce has a nice velvety consistency, about 15-20 minutes. Cut the morels into smaller pieces and add to the sauce and cook for another 4 minutes. 4. Remove from the heat, cover with a lid and keep warm. Allow time for the sauce to infuse until needed. 5. Close to the time for you to serve the dish, reheat the sauce and strain through a very fine mesh sieve into a second saucepot and keep warm.

How to fry the beef 1. Heat the oil in a thick bottom pan; make sure the oil is hot but not smoking hot. Season the 4 beef mignons with salt and pepper on all sides. 2. In the hot pan sear beef on all sides until nice and brown. Reduce the heat and add the butter and continue frying on both sides for about 4 minutes on each side till medium rare or until done the way you would like them. Remove the mignons from the pan and let them rest in a warm place for not less than 5 minutes.

How to assemble the dish Bring the sauce quickly to the boil, remove from the heat and add the butter cubes one at a time shaking the pot vigorously to incorporate the butter into the sauce. This will result in a nice shiny and silky sauce. Pour some of this sauce over the fillets and serve the remaining sauce separately. Serve at once accompanied by a good full bodied Shiraz-Cabernet.

Deep inside Pinewood Studios on the outskirts of London, Ridley Scott and his Prometheus production team have created a landscape quite unlike any other seen on film before. Beautiful, foreboding, hostile and majestic sets dominate the studio complex, vividly bringing to life Scott’s vision of a far away world and the spaceship that travels to it hoping to find the answers to one of the biggest questions facing mankind. The director himself is doing what he loves best – making movies – and clearly could not be happier. Scott is a filmmaker who has defined the science fiction genre with two ground breaking, universally acclaimed movies, Blade Runner and Alien that are now regarded as classics of

contemporary cinema. And now, after a 30-year gap {Blade Runner was released in 1982}, he has

ventured back into deep, darkest space. Wi th Prometheus , he c rea tes a

groundbreaking mythology, in which a team of explorers discover a clue to

the origins of mankind on Earth, leading them on a thrilling journey to the darkest corners of the universe. There, they must fight a terrifying battle to save the future of the human race. PROMETHEUS will be in theaters on June, 7 2012.
