Shortly before the show I read an interesting article about sugar in the New York Times which sharpened my eye for how the industry is approaching America’s

acknowledged that stevia is not the ultimate answer to no-cal sweetness … because of that terrible aftertaste. Manufacturers are trying a variety of
alternatives. Stevia and Monk Fruit is a combination I saw several times at the show.

It shows how important these things have become to consumers.
