New Mentors Named to “I Am I Can” OrganizationCAPITAL REGION - I Am I Can, a non-profit organization that provides mentoring to girls in local high schools has named five new Mentors. These women will give of their time and their life experiences to help the girls as they move through high school and on to college. The new mentors are: Kim Ther-rien of Hudson Falls; Kathleen Tolstrup of Queensbury; Maria Yocono of Clifton Park; Maureen Walsh of Ballston Spa; and Madeline Rehm of Queensbury, who is currently a student at Siena College. Grange MeetingBALLSTON SPA – Milton Grange #685 will hold their month-ly meeting on Saturday, December 8 at the Old Stone Church located at 159 Stone Church Road in Ballston Spa. He is a political historian and collector of political and campaign memorabilia. On December 8th, Mr. McPherson will talk about the presidential election of 1896, which was an extremely im-portant national election for the grange movement. In addition, Mr. McPherson will bring some rare and historically signifi-cant political memorabilia from his impressive political items collection. Community Emergency Corps & Toys for TotsBALLSTON SPA – During this upcoming holiday season, Community Emergency Corps of Ballston Spa will again be an official drop off point for donations for the Toys for Tots program sponsored by the United States Marine Corps. 3 Tips For The Perfect Holiday Buffet (MS) -- By Carla Jordan

The countdown to the holidays is on, bringing with it the chal-lenge of how to serve a large gathering fast and easy. Fear not! There’s a simple solution. Forego the traditional, full-service, sit-down meal and opt instead for a buffet-style serving. Fol-low these three steps and yours will be a gathering remembered with fondness by both your guests and you.

1. Divide and Conquer: No more waiting in lines as Uncle Fred peruses the spread so slowly other guests nearly faint from hun-ger! “Set up multiple food stations. This idea will save your sanity,” says Chef Jeff Gillis, www.CelebratingHome.com. “A few days before your gathering, clear most items off your kitchen countertops, table, island and dining room buffet and move contents to the laundry room or garage. Convert each area into a serving station where foods will be grouped by cat-egory. Label each area with a sticky note so that when the big day arrives, the stations can quickly assembled.”

At each serving station, stack plates so diners needn’t traipse off to the table for one. Pre-fill glasses with ice and beverages

for quick pick-up. Remember, it’s hard to carry more than a plate and glass so preset the table with napkins and flatware.

2. Control the Crowd: “Don’t think twice about placing tables in multiple rooms,” adds Chef Gillis. “That’s better than crowd-ing everyone together or asking guests to balance plates on laps while sitting on your sofa.” To seat peo-ple quickly (and without a fuss), use place cards.

3. Keep It Simple: Flow-ers in a vase are so last year. Instead, style up the

buffet with an eye-catching “Gratitude Tree,” a sculp-tural bronze metal tabletop tree festooned with ribboned tree tags. Guests write what they’re thankful for on tags and after dinner’s done, take turns reading. This is a unique way to remind guests about the true meaning of the day and, because the tree arrives ready for display, it’s a real timesaver.

Remember -- every minute saved adds up to extra time you can spending enjoying the day with your guests.

Buffet-style meals are the key to serving a crowd, especially in a small space.

As Christianity spread, St. Nicholas’ image began to change. Russia’s Dedt Mo-roz, or Father Ice and the Norse god Odin and even the old Roman deity Saturn had white beards and the power to fly through the air or magically appear. As the centuries ground along, these attributes were melded with the myths surrounding the good St. Nicholas. Communication back then wasn’t what it is today so there were many different versions of St. Nicholas. In many of these a punisher known variously as Knecht Rupert, Ru Claus, Pelznickel, Aschenklaus and Black Pete accompanied the good saint. This sinister sidekick was on the lookout for children that misbehaved. Legend has it that Black Pete would abduct bad children or (more often) leave a birch switch behind as a hint of their fate if the bad behavior continued. Most often, St. Nicholas intervened, saving even naughty children from Black Pete, teaching them that they could earn another chance if they would mend their ways. Eventually the evil accomplice was dropped leaving it up to St. Nicholas to be the sole judge of whether a child was “naughty or nice” and the birch switch was replaced with a lump of coal.

So, just prior to his journey across the Atlantic to the New World, St. Nicholas had become a red robed, white bearded figure who flew on a white horse to deliver gifts to good children overnight during the Christmas Holy Days. In the early days of New York, the Dutch name “Sante Klaus” was adopted by more recent English colonists as “Santa Claus”. The name stuck and immigrants of many backgrounds adopted him and carried his name west as America was explored.

Washington Irving is credited with widening Santa Claus’ popularity and putting him in a cart that flew through the air. The writings of Irving were certainly known by Henry Livingston who penned the famous poem “An Account of a Visit from Saint Nicholas” that he recited to his children one Christmas. Later, in 1822, the poem was published for the first time in the Troy Sentinel. A professor of divinity, Dr Clement Moore, claimed authorship and a controversy rages to this day over who actually wrote the poem. Regardless, the poem became quite popular and did wonders for the reputation of Santa Claus. It gave us a sleigh pulled by reindeer that all had names and reinforced the idea that Santa entered through the chimney. The bishop’s robes were gone; replaced by a furry suit. Santa was now jolly and corpulent but small.

This thoroughly American rendition of St Nicholas was hugely popular and the poem was (and is still) repeated every Christmas Eve in nearly every American home.

During the dark days of the Civil War, Harper’s Weekly published numerous sto-ries about Santa Claus illustrated by a German immigrant, Thomas Nast. The characteristics Santa Claus were no longer left up to the imagination. Nast’s illustrations unified and solidi-fied popular ideas of what Santa looked like and how he acted. He was a “Jolly Old Elf”.

Today we think of Santa Claus as a much larger personage. This came about through an advertising campaign conducted during the early days of popular color publica-tions. The Coca-Cola Company sponsored an ad campaign during Prohibition that featured Santa as a larger version of the elf. Billboards and magazine images of this new Santa blazed their way into the popular consciousness and have remained ever since. Santa’s favorite reindeer Rudolph was introduced through another popular ad campaign staged by Montgomery Ward in 1939.

Through all the changes St. Nick has undergone, he remains in our hearts as our companion at Christmas. Whether Saint or Santa, we can count on him to remind us that Christmas is a time for giving and for children. Every effort must be made to make a magi-cal visit possible for every child.... especially the less fortunate. Above all else, this is the legacy of Saint Nicholas. Please, give him a hand.

15th Annual First Night Saratoga 5K RunSARATOGA SPRINGS – The 15th annual First Night Saratoga 5K Run, presented by the Sara-toga Arts, will be held on Monday, December 31, at 5:30pm. The run is limited to the first 1,500 registrants. There is no day of race registration. The race has sold out for the past eleven years. A Chip computerized scoring system will be used. The USA Track and Field certified course starts and finishes on the Skidmore College Campus. Albany, NY (October 15, 2012) –Do you have a love for animals and want to support a great local cause? Join with the Goldstein Auto Group and bring your empty bottles and cans to a Goldstein dealership and support the Mohawk Hudson Humane Society. The Mohawk Hudson Humane Society’s “Empties For Animals” campaign helps support the mission of the organization, including sheltering, adoption, education, advocacy and the prevention of cruelty to animals. This year’s goal is to raise $125,000, in honor of the Society’s 125th Anniversary. To reach the goal, the Goldstein Auto Group will need to collect more than 1,500,000 cans and bottles. The 2012 "Empties For Animals” campaign has raised over $73,000 thru Sept. 2012, an increase of $17,638 or 33% over the same period last year. The 2011 campaign raised a total of more than $74,000 and col-lected 925,000 cans and bottles. Volunteers sorted all those bottles and cans, based on the originating distributor, which in turn gener-ated $.08 per can or bottle instead of the regular $.05 redemption

fee paid at stores. Monies from the program were used to benefit the more than 6,500 animals cared for by the Society in 2011. “We are very pleased to continue our partnership with the Mohawk Hudson Humane Society and support the 2012 “Empties For Animals” campaign. I’m not afraid to shop in Walmart or Lowe’s, after all they are major employers in our communities and contribute to the Chamber and other organizations. Everything has its place, and that’s the beauty of living in this part of Tech Valley – we have more choices, more opportunities and a greater abundance of products available here than in most parts of New York State. These resources are helping to fuel our economic expansion at a time when other regions are struggling mightily. So regardless of where you shop, please Think and Buy Local!
