BALLSTON SPA - Saratoga County Fair is looking for entries, exhibitors, and all kinds of participants. The 2014 Saratoga County Fair Exhibitor Hand-books are printed and available online at www.saratogacountyfair.org and in print at feed and grain stores, garden centers, Curtis Lumber, Aller-dice Building Supply, AC Moore, Agway, Hewitt’s, libraries and town halls in Saratoga County and at The Saratoga County Fair office at 162 Prospect Street, Ballston Spa and at the Cooperative Extension office, 50 West High Street, Ballston Spa. Deadline for entries is July 12, 2014. Departments and shows include cattle, draft and saddle horses, goats, bees & honey, farm produce, flowers, culinary, home arts, fine arts, antiques, talent show, sheep,fair pageants, education, Grange, 4-wheel-drive pull and conserva-tion. The 173rd Annual Saratoga County Fair opens on July 22, 2014 and runs through July 27, 2014 from 9am to midnight daily. SUMMER LUNCH PROGRAM OFFERS FREE LUNCH
BALLSTON SPA - The members of The First Baptist Church of Ballston Spa and Ballston Spa United Methodist Church are actively preparing for their 2014 Summer Lunch Program. This program is designed to provide free lunches to children of families in need. This program has served the local Village of Ballston Spa for the past three years. With the help of a gener-ous grant from Stewarts and donations from local businesses and organi-zations we are able to continue this program into its fourth year. 75-100 lunches are served Monday thru Friday, July and August. Nutritious and fresh bagged meals are prepared by church members and local volunteers and given to each child in attendance that might otherwise go hungry. Any assistance is welcome and the program is seeking volunteers. Volun-teers can sign up through The First Baptist Church, 885-8361 or on the church website, bspabaptist.org. Permission forms are required for chil-dren to participate in the program. They are also available at the church or on the church website. WHAT IS PERFORMANCE DRAMA CAMP?MALTA - Actors and actresses collaborate as a team to write a script, devel-op characters, design a set, choose costumes, rehearse and perform their original work, all within a 2 week period. This program for 9-15 year olds is led by Malta Artistic Director, Elyse Young, encouraging and challenging the young artist in their creative efforts. Performance Drama Camp runs Monday through Friday from 1:30-4:30pm from July 21-August 1, culmi-nating in an onstage performance at the Malta Community Center. THE 6TH ANNUAL TASTE OF MALTAMALTA - The Malta Business & Professional Association will host the 6th Annual Taste of Malta on Tuesday, July 15, 2014, 5:30 p.m. – 7:30 p.m. at Hudson Valley Community College’s TEC-SMART, 345 Hermes Rd., Malta. Each year, cuisine from Malta area restaurants is offered for tasting and sampling. The event has featured menu items and specialties from Panza’s Restaurant, Lake Ridge Restaurant, Villago Pizzeria & Ristorante, Pellegrino Imports of Malta, Sunset Café, Kona-Ice, Lily and the Rose Catering and many more. Proceeds from the event benefit the Ballston Spa Partnership for Innovation in Education Fund, a component fund of the Community Foundation for the Greater Capital Region. SERVICE PROJECT CAPITAL DISTRICT - Club members are collect-ing non-perishable food items that will be do-nated to the Franklin Community Center and the Mechanicville Community Center to help feed kids that are out of school and will not be receiving free or reduced breakfast and lunch during the summer. STILLWATER - Independence Day on Friday, July 4, 2014 will be celebrated at Saratoga National Historical Park (the Bat-tlefi eld) on Routes 4 and 32 in Stillwater, with a Citizenship Ceremony, traditional readings of the Declaration of Inde-pendence, and free lemonade toasts. Saratoga Monument in Victory and General Philip Schuyler House in Schuylerville, both located 8 miles north of Saratoga Battlefi eld, will also be open from 9:00am to 4:45pm. The Battlefi eld Visitor Center is open daily from 9am to 5pm. The scenic tour road is open daily from 9am to 6pm. SARATOGA CO. - The 173rd Saratoga County Fair invites Sara-toga County Schools each year to display their art, science and social exhibits at the fair from July 22-27, 2014. Students also enter projects on their own. Three School Districts with the best displays win awards of a first prize TV & DVD com-bination, second and third prizes one TV and one DVD; four outstanding student entries receive a cash prize. There are ten honorable mentions for art and ten honorable mentions for Social/Science which will also receive awards. Everyone will receive a ribbon. Categories are: Art, Social Studies/Sci-ence, Photography, Graphic Arts & Group Projects. For judg-ing purposes, there will be two age groups; grades K-6 and grades 7-12. This year, Education will have “craft time” every day at 5 p.m. so come and join the fun. Set up date for the education exhibits is Thursday, July 17, 2014 from 10 a.m. to 2 p.m. at the Saratoga Fair Grounds under the Grandstand. CONTEST SARATOGA CO. - The 173rd Saratoga County Fair invites ev-eryone to enter the Lego Contest at the fair on Wednesday, July 23, 2014. The fair runs from July 22-27, 2014. There is no entry fee with your paid admission to the fair. All entries must be labeled with your name, age and title of the piece. The age categories are four to six years old, seven to nine years old, ten to twelve years old, thirteen to fifteen years old and finally, a “family” category. The theme is “Fun at the Fair.” Use Legos to build animals, buildings, farming equipment, rides, create whatever your imagination dreams up that has to do with fun at the county fair. Lego creations should be brought to the Saratoga County Fair Family Center between 10 am – 12 noon on Wednesday, July 23. Lego displays will be judged and on display until 4 p.m. by the Saratoga County Fair Edu-cation Committee. BURNT HILLS - The Burnt Hills United Methodist Church at 816 Route 50 will have its an-nual Fair on Friday and Sat-urday, September 5th and 6th. A variety of booths will be provided including a large White Elephant Booth, Cloth-ing, Books, Toys, Baby items, Sporting Goods, Baked Goods, a Country Store and a variety of Silent Auction items. For those who are interested, donations for the various booths will be accepted beginning July 1st with “drop off ” thru September 1st – Monday thru Friday, 9 am to 2 pm at the church. Please follow the signs for the designated areas and we are not ac-cepting TVs. There will be four Pre-Sales this summer. The dates are Friday, July 25; Saturday, August 2; Friday, August 8; and Saturday, August 16. All Pre-Sales are from 9 am – Noon. CAPITAL DISTRICT - Created in 1992 by the US Department of State, the Future Leaders Exchange Program (FLEX) is a scholarship exchange program for high school students (ages 15-17) from Eurasia. The program’s goal is to provide an opportunity for the students to spend an academic year in the United States, living with a host family and attend-ing an American high school, while engaging in activities to learn about American society and values to experience life in a democratic society. BALLSTON SPA – The cel-ebration that is midway to St. Patrick’s Day -- the Irish 2000 Music and Arts Festival -- takes over the Saratoga County Fairgrounds on Sept. 12 and 13 with new groups and old favorites. The fes-tival features more than 25 performers and two days of all things Irish. It opens at 5 p.m. and ends at 11 p.m. on Friday, Sept. 12, with performances by Kilrush, Scythian, Clan na Gael and the Red Hot Chilli Pipers. On Saturday, Sept. 13, Irish 2000 opens at 10 a.m. and con-tinues until midnight, with three stages of non-stop mu-sic and a fourth stage where Irish dance takes the cen-ter. Discounted tickets will be available through Price Chopper’s Tickets to Go pro-gram starting on August 3 or through the festival website through Sept. 11. Those us-ing their Price Chopper Ad-vantEdge Card receive an additional $1 the advance sale prices. Advance sale Friday only tickets are $16, Saturday only tickets are $18. Exhibit-ing youth are encouraged to submit original videos, shar-ing why their mom should be the 2014 Washington County Fair Mom of the Year. Videos can be serious or humorous. They should be thoughtful, creative and original. Videos will be judged on creativity and quality. Calling all couch potatoes!!! This chunky monkey is ready to plop down beside you. Bailey loves to be scratched and prefers to be right near you all the time, normally on the sofa, where he likes to sleep half-on/half-off your lap (at 17 pounds he’s almost too big to fit all the way). When really happy he will roll around on the floor and “rough-house”— occasionally giving little love-nips if you get him too excited. When scared Bailey will vocalize with a soft growl, he has never been aggressive, that’s just him letting everyone know that it’s “personal space” time. His favorite food
is dry kibble although he does like to lick up the gravy in canned food. Overall Bailey is a gentle and loving cat. He would probably
do best in a quiet house without children however he is good with other cats.
Calvin is 5-year old St.Bernard/Bloodhound mix who’s a very happy and playful dog. He’s good with both dogs and cats and is housebroken. Because of his large size (120+ lbs), it is best
that he not go to a home with small children.

Griffen is an older adult neutered Chow male who was brought to the Saratoga County Shelter as a stray. He enjoys
riding in the car. Griffen has met several dogs downtown and has had many playdates with dogs and he seems to like all of the dogs he has met. One volunteer told us that with a little consistency and discipline she felt that it wouldn’t
take him long to do whatever you ask of him. He seem to be a great dog who just needs someone to love him and care
take of him.

Kalhi is a 3-year old, grey and white, one-of-a-kind type of cat. She loves people and any attention she can get from her humans as well as other cats or dogs. She has many toes that make her
look as though she has a hand: fingers and a thumb!

The program will take place during the dates of October 8-10, and 14-17, 9:30-11:25am and 11:25am to 1:20pm daily. Students will explore local Na-tive American history in a variety of interactive ways. At the Three Sisters garden, children grind corn in stone mortars and learn about the importance of squash, beans and corn in Haudenosaunee culture and diet. While spending time with a Mohawk storyteller, students learn important lessons about what it was like to live in a community and how Native American traditions in� uence our modern government. At our Investigation Station, students have time to experience, analyze and process new concepts and information. They will also view original, centuries old arrowheads and pottery shards and discuss what they can learn from these artifacts. Students will be exposed to a variety of new vocabulary and have the opportunity to experience these new terms in context. This program supports the Common Core State Standards Initiatives and additional resources are available for extended classroom learning experiences. 584-4340 With the local corn season almost upon us, I feel that it is about time, once again, to spread the word about how to properly prepare fresh sweet corn. If you’ve already read this, then take it as a reminder. If not, then you’re about to learn something that will sweeten your summer.
It looks as though our local farmers got the corn planted at the right time, and the weather this year has been perfect…it looks as though it is actually ahead of schedule. This is all good news to me since last year was such a disappointing year for sweet corn. I really look forward to fresh, locally grown sweet corn. I recently had some “grocery corn” and it wasn’t too bad, but only because I have nothing local to compare it to yet. Fresh, locally grown sweet corn is a delicacy that, until you leave the area, you don’t appreciate. I remember when I was going to visit my sister in California, I asked her if she wanted me to bring anything. She suggested some New York sweet corn that she remembered so fondly. So, I stopped at my favorite farm stand on the way to the airport and fi lled a large duffel bag with 4 dozen ears of fresh picked sweet corn. I knew it was fresh picked because I had to mind the farm stand while the farmer went out into the fi eld to fi ll my duffel bag with corn right off the stalks. It doesn’t get much fresher than that! My sister and all her friends that she invited to lunch the next day were thrilled with this rare treat from Upstate New York. Many of them had never had “real” sweet corn and soon understood our passion. Get ready to enjoy it folks because it will soon arrive at your local farm stand.
I usually wait until later to pass on my advice about how this delicacy should be prepared. I think I’ll do it now, at the beginning of the “corn season” so you ALL can try these methods and enjoy PROPERLY cooked sweet corn for the entire season. Regular readers have seen this before and know that I’m a bit fussy about how corn is cooked (almost as much of a fanatic as I am about not spraying your gardens with water) but I’m determined to spread the word. So, if you’ve seen this before, just bear with me.
First, get the freshest corn you can fi nd. If you don’t grow your own, get it from the busiest farm stand in your area. The most popular, busiest stand is going to be picking more fre-quently, insuring that the corn you buy was probably picked within the last few hours. Don’t be shy; ask when the corn was picked. Freshness is important because the simple sugars in the corn start to break down into starch VERY quickly once picked. If you are planning on having corn with dinner tomorrow, don’t buy it today. Buy it tomorrow in the afternoon. Get it into the ‘fridge as soon as you get it home to keep it fresh and sweet.
Corn is the sweetest it will be BEFORE you cook it. Knowing this, we want to cook our corn as little as possible. When you’re ready to dine, shuck the corn and place it into COLD water and cook over high heat so the water boils as quickly as possible. The INSTANT the water boils, the corn is done. Drain all the water off and cover the pot to keep the corn warm between helpings. It’s a sad sight to see corn bobbing around in hot water getting soggy and starchy as it continues to overcook.
There’s another way to cook corn that I love. Soak the unshucked corn in cold water for a few minutes. Place the corn on your grill or into the coals of a campfi re. Rotate the ears frequently so that it cooks evenly. Cook until the husk on one side of the corn is just starting to burn through to the kernels. If some of the kernels get caramelized by the fi re, so much the better as long as they don’t get burnt. Shucking these fi re-cooked ears of corn can be challenging but well worth it.
All that’s left is to add a little butter (the real thing of course) and I like a dash of pepper on mine. Skip the salt so you can enjoy the fl avor of the corn. Besides, real butter has enough salt in it anyway.
I know there are some folks out there who believe that corn MUST be boiled for several minutes. WRONG! If you don’t believe me, try cooking some my way along with some boiled to death and you’ll see. I had a reader who learned this method from me a couple of years ago and was so impressed that she actually called to thank me. Try it. The only prob-lem is you’ll never be satisfi ed with soggy, overcooked corn again. Thanks for the read.

The Supportive Services for Veteran Families (SSVF) program can provide monetary relief as well as extensive case management for veteran families that are homeless or at imminent risk of becoming homeless. Temporary fi nancial assistance is available for rental assistance, utilities fees, security deposit, moving costs, emergency supplies, child care and transpor-tation. Case management and referral services include health care, daily living activities, fi -nancial planning, transportation, income support and legal assistance. The goal of the SSVF program is to promote housing stability among very low income Veteran families who reside in or are transitioning to permanent housing in the following New York State counties; Wash-ington, Warren, Saratoga, Schenectady, Montgomery, Fulton and Schoharie. (NAPS)—The average Ameri-can spends more than 101 minutes a day in a car. Unfor-tunately, what many drivers and passengers fail to realize is that when they are in a car, not all the danger they face is on the road.
Both drivers and passengers are often exposed to harm-ful ultraviolet A (UVA) rays, particularly from the side windows of the cars in which they ride.
“Damage from certain kinds of ultraviolet rays is cumu-lative,” says Dr. Dee Anna Glaser, vice chair of the dermatol-ogy department at St. Louis University. “These rays penetrate deep into the skin and can silently accelerate the aging pro-cess, cause wrinkles and even skin cancer.”
Fortunately, adding a UVA-blocking fi lm or tint to car win-dows can be an eff ective way to help block damaging rays and protect yourself while you drive.

Working Things Out As A Community
Every community in Southern Saratoga County has its own unique personality, yet all share a certain in-timacy - even the big towns feel like small ones in our part of the world. The communities mourned together as prominent citizens like John Michaels of Bolton Landing and Walt Polak of Halfmoon passed away, coming out in droves to attend funerals and filling social media with tributes and kind words. Also recently, communities pulled together to battle vio-lent weather that threatened our region with ominous clouds, extremely heavy rain and flash flooding. Pho-tos of nearly submerged cars under the “Welcome To Mechanicville” sign and reports of the damage to nearby stores provided a sobering realization of the damage Mother Nature can cause in a very short time. But our communities are strong and resilient. Just as nearby Waterford has come together since 2011 to “build back better”, so the citizens of Me-chanicville set to work cleaning up the mess the minute the water receded. It really is a special blessing to live among such wonderful, civic-minded people. In Ballston Spa, the role of community takes on a different sense as the ongoing debate about Walmart and other big box stores has been the topic of con-versation on Facebook and other social media. Emotions do run high at times
like this, and some forceful opinions have been heard on both sides of the issue. My role as Chamber executive often puts me in positions where people I care about are on opposite sides of the equation, and it is difficult to see such hurt feelings among neighbors. But the knowledge of our community spirit provides great confidence and optimism – I strongly believe that whatever the outcome is at the intersections of Routes 67 and 50, the citizens of Ballston Spa will ultimately be stronger, closer and better prepared for an even brighter future.
